Dunno: bc it's so darn difficult to get anyone even on the phone to make a reservation. Even tho they say go to the website to do so, but when one does, one can't bc you should do so only when they are open. I can only surmise that they are overwhelmed since news got out the chef and owner received a James Beard nomination but daaaang, doubt I'll be able to experience it myself. Luckily we found another establishment in the area that serves up their dishes right proper and for a fraction of the cost and easily accessible. The intimate restaurant has farm to table prefix meals which are beautifully orchestrated, wildly satisfying, & expertly paired with lovely wines at a very reasonable price. service is warm & friendly. What a hidden gem! A friend and I were staying at Ojo Caliente and wanted to try someplace different and came across Nosa. It's a bit tucked away, but the property the restaurant is on is gorgeous with an amazing sunset view. The interior of the restaurant is nicely appointed with some interesting artwork for sale. The menu is prefix and each dish was amazingly delicious! I actually subbed my soup as I didn't like lamb. A quick email to Chef Dodd and he was very accommodating . Our prefix - minus my soup swap, everything was amazing! Lunch at NOSA was amazing from start to finish. Our server, William, was the nicest, friendliest waiters we have ever experienced. Our fixed-price, five-course lunch was exquisite, fresh and beautifully prepared. Lunch started with farm-to-table purple sweet potato fries with two sauces, continued with perfectly seasoned Texas chile with corn bread, followed by a spicy spinach salad with pears, grapes and radishes. The main dish was a tender and moist Wagyu brisket with bbq'd white beans and vinegary coleslaw. The amazing lunch was capped with a creative acorn squash cobbler with red chili-piñon ice cream. We had an amazing anniversary getaway at NOSA for two nights. It was so peaceful and the surroundings are breathtaking. Nosa is a unique.experience. We were there in mid-March and are already planning our next outing in May. The restaurant only offers a prix-fixe menu. And you need to reserve ahead of time. It is a five course feast. This is not a restaurant to go if you are in a rush or can't relinquish control. Here, you place yourself in the hands of the talented chef. It is a about trust and letting it go. Relaxing and enjoying the chefs talent. And the outstanding dishes. I enjoyed every morsel. But to me the highlights were the incredible soup. It relied on turnips and quince to produce delicate and complex layers of flavors. It had breakfast turnips whole as well as creamed. The others ingredients flavored and added texture, creating an impressive dish. The salad had lightly wilted red chard with nuts, cheese and tomatoes with an incredible dressing. I am not the best at writing descriptions, but trust me: It was out of this world. The fish was beautifully flaky, sweet and tender. And then came the dessert. A rubbarb crisp paired witb a basil ice cream. It was a surprisingly effective combination. They also offer a wine pairing. For the light drinkers like me, they have a half pairing with half portion of the five wines. They were great choices that really complemented the dishes. This is a jewel in northern New Mexico. We went to NOSA for lunch service. First, the restaurant had some staffing issues so they were short handed, which I understand. That being said, I expect more in the way of service when I am paying so much for a nice meal out. The setting was beautiful. The food was good. The lady serving us was the only server that day because of the aforementioned staffing issues. She was personable and I could tell that she was working hard. However, I had to ask after an hour of service for my water glass to be refilled. And then it was filled one more time after another hour. We were instructed to arrive at 11:30 am and not to be late because it is a tasting menu and they needed to start on time. Well...the first course did not come out until 12 pm so we had plenty of time to wait. If you are not drinking wine or beer then the beverage menu is almost non-existent. They had an N/A beer, an N/A spritzer (which they did not have in stock because they "ran out the night before"), and coffee/tea. We ordered tea. For a nice restaurant, the beverage service leaves a lot to be desired. Our $5 per person tea service was a selection of a mish-mash of different brands and types of tea (no herbal choices) that came out in a coffee cup for us to pick out of. While the food was good and the staff and chef were friendly, the experience was ruined for me because of the late start, the poor waitstaff service, and the lackluster beverage service. read more

We have followed Chef Dodds, and his creative culinary talents for years--throughout Dallas, where he was a first in the farm to table movement, and now to New Mexico where his creations continue to amaze. We enjoyed the prix-fixe menu on a cold Saturday night in December. Standouts: lamb riblets in a sherry-brown sugar glaze. We tried to politely use our knife and fork but couldn't help ourselves--these were so good we had to pick them up to make sure we got all of the "finger licking" greatness! Still dreaming about the miso and matsutake mushrooms paired with the pan roasted branzino, and the pumpkin risotto.
