It's like an unagi sauce with garlic in it. It has some saltiness, sweetness, and that umami flavor. Garlic taste and scent is present, but not too overpowering, which I really enjoyed. That flavor is great, but some places really overdo it for me. Just a personal preference though. For the chicken itself, it's very tender and juicy on the inside and still has some of that nice crunch on the outside. Perhaps this is because the cut of meat is the chicken thigh. It's not super crispy because I don't believe this is being fried to order for us. Seems to be food held in a warmer until its ordered. Kimchi was the side that they had provided with this dish and I am here for that. Some people aren't the biggest fan of this and I saw that from the looks my coworkers gave it. Personally, very much enjoyed it though. That sourness and spice from the kimchi just balances out this bowl really well. The veggies are nice and crispy. Gives it that freshness. The flavor of this item was very good though. There's a nice kick from it and the flavor tastes like a mix of kewpie mayo, soy sauce, sriracha, and sugar. Very simple, but you can't go wrong with those flavors. For the side, they added seaweed salad. Again, not your average side dish. Personally, I enjoyed it, but it might not be a common or familiar side dish for other individuals. It has a nice sweetness and nuttiness to it. For texture, there's a nice bite to it, which is ncie since the tuna is very soft and doesn't contribute much to the texture component. Menu: Small Their menu seems quite limited, but again, that is normal for a food truck, I believe. The items they provide do it just fine for me. I appreciate that they also have an option for the vegetarians.
