I do not eat the Pho here, because it's only so-so. If you read through my reviews, you may discern a pattern where I pick out one or two things a restaurant does well, and then promote it based on that. I like to be positive, I can't help it. The Bun Thit Noung here is the best in the valley in my opinion. The noodles and veggies are fresh, crisp, and spring off the tongue. The meats are well grilled and flavorful, and the accompanying fish sauce is just flavorful enough to not overpower everything else. The same sentiments can be said for their spring rolls. In general the service I've received here has been decent, and the ambiance is appropriate for a bistro-like Asian restaurant. 4 stars for the excellent Bun Thit Noung and Spring Rolls. read more

I like Pho Nouveau for it's curry. I usually get the chicken curry, which comes with a baguette, not rice. I order the rice on the side and have a little of both starches. There is always plenty to take home too. I think the Pho here is good as well. It's not the best ever, but it's good for our options in town. I don't really know how much I like the staff here, though. I would say they are a little snobby? Maybe one in particular. FYI: If you are gluten free, they use a lot of brown rice flour not wheat flour. A plus in my world. read more

When I moved from Denver I moped around because I had left my favorite Pho. The food here rivals my favorite in Colorado! Thank goodness I found you! The hotter the better! I enjoy eating pho because I have an auto-immune disease that requires me to be 100% gluten free. I've found that most pho restaurants are quite accommodating to people with GF needs. I saw that Pho Nouveau listed the GF options on their menu, and read several recommendations by GF sources, so I felt confident the management welcomed GF patrons. While the food I ate was delicious (brisket pho and veggie spring rolls), I was surprised to find that the hoisin sauce (a key ingredient in the pho experience, in my opinion :) was not gluten free. A GF hoisin is not difficult to find, and it was quite disappointing to miss out on that condiment because the management opted for a non-GF brand. The spring rolls also do not have a GF meat option (only the veggie rolls were GF), and that also was disappointing. It's not hard to substitute tamari for soy sauce or similar substitutions, so GF people can eat the proteins. So thank you for a delicious meal, Pho Nouveau (and our server was wonderful, too!), but please consider adding a GF hoisin for people like me who want the entire pho experience. read more

DID NOT EAT HERE!!! HORRIBLE CUSTOMER SERVICE!!! Went on Thursday 07/31/14 around lunchtime. There were 2 customers in the whole restaurant. The hostess threw an attitude about setting up for a party of 9. We sat down and the two waitresses stood behind the counter talking and didn't acknowledge us at all. After 15 minutes of just sitting there while they chit chat we walked out. As we were walking out they finally spoke to us ans asked if we were leaving. For a restaurant that bills itself as being a Pho place, this place doesn't have too many Pho items on the menu, and is much closer to being a generic Asian fusion restaurant. However, that's good news if your date doesn't know what Pho is and decides she doesn't want any once she finds out. The food is good. The service is good. Anyone who gripes this food lacking "authenticity" need to lay off the crack pipe. I'm willing to bet that I've consumed more Vietnamese food in Vietnam and Westminster than all the other reviewers of this restaurant combined. And I thought Pho Nouveau was great. The menu may be lacking a huge expanse of traditional Vietnamese menu items, but for good reason. I don't think frog legs, fermented meat, intestines or pickled vegetables would be much of a hit in a town like Boise. And since being successful and staying in business are the biggest goals of any restaurant, this seems like a pretty sensible strategy. What the menu does have is a perfect blend of traditional Vietnamese dishes that will appeal to an inland, culinarily conservative population that has zero Vietnamese influence. The chicken curry is the best we've had at any kind of restaurant in Boise. The same can be said for the pho. The beef in PN's pho was more tender moist than most of pho stores 1-200 in Westminster. It was lacking the "traditional" tripe (like some other reviewers complained), but again I think about 90% less locals would be willing to try the pho, if tripe was an ingredient. Portions are generous for the price. None of us were able to finish our entrees. Service us very friendly every time we dine here. If you're around for lunch, Pho Nouveau makes a great banh mi (Vietnamese sandwich). The summer rolls at Pho Nouveau are the best of any Vietnamese restaurant in town (we've literally tried them all). Ignore the complainers and try PN for yourself. read more

The pho at Pho Noveau is a hit. The broth has bursting flavors of star anise, garlic, cilantro, beef, and all the other spices that dabble in that bowl of goodness! Vermicelli noodles are chewy and add a nice texture that compliments the fresh veggies and meat. The service can be slow, but it never seems to be an issue with the quality of the food. Probably one of the freshest, best tasting pho shops in town. They've improved so much since I first came here. The broth is fresh and not greasy, fresh vegetables, and the amount you get for $8.50 is quite enough to keep your belly full for a while! We also got the fresh roll with pork and shrimp as an appetizer. They were delicious. The peanut dipping sauce is amazing with it. My friend also ordered the Pork Bahn Mi. It's a little stiff on the price for $8.50 since most bahn mi's run you $4-6, but they do serve it with sweet potato fries, so I guess that makes up for the cost. When I came almost 6 months ago with my sister and ordered a meat dish, we hardly were served any rice. When we asked for more, the waitress said she would have to charge us for it. When my sister made a comment about not getting much in the first place, our waitress returned with more rice for free. I will say the service is friendly and prompt. The first time I went here the service was AWFUL, I walked in, ordered to go and was treated like such an inconvenience, even though there were only 3 tables of guests there at the time. The staff were much more concerned with their hair and makeup then serving any patrons. The food however was amazing, so I attempted to order lunch today. WHAT A NIGHTMARE!!! I was ordering for 4 people for a pick up order. I asked to pay over the phone since someone else was picking up for me and the wait staff on the phone audibly huffed at me, as if my 50$ lunch order of soup ( seriously broth and noodles) was such an inconvenience. I am honestly pissed off, if you work in service, your job is to offer at least good customer service. many of us don't have the luxury of coming to work and being completely terrible. I discovered Pho Nouveau on a scorching summer evening, and proceeded to douse my chicken pho in sriracha sauce, making the whole experience VERY HOT. I have since been back several times and determined that the best thing on the menu is the chicken curry with jasmine rice. The serving is enough for two meals, and has big slices of chicken, carrots and sweet potatoes, giving it a unique flavor. The summer rolls with tofu make a great appetizer on warm nights. They've got a great selection of beers on tap, and outdoor seating in the summer perfect for people watching downtown. Buyers beware though! The cooks are very generous with their use of MSG, in typical Vietnamese fashion. They will refrain from using it if you ask. read more

We also got an order of fresh rolls which was ok, kind of the typically same fresh rolls you can get all over town. The sauce was salty and I used the fish sauce from the spring rolls instead to eat it wish. The customer service was good and friendly. This is a good place for a date. It's got a good location, well within walking distance to a bunch of fun in BoDo. I have only gotten Pho here and it has been good every time, if a touch on the sweet side. The service is prompt and courteous. I think what I like most about this place is it's nostalgia value. It was the first place I had pho in Boise. It was a date spot for me and my girlfriend when we were a new couple. It was really close to my apartment. If you're looking for the best pho in town, look elsewhere. If you're looking for a good meal in a good location, look no further. read more

I am super picky about Vietnamese food and have extremely high standards so I was so pleased when I tried Pho Nouveau. The food was amazing, so fresh and light and such great flavor. We had the lemongrass chicken wraps and pork vermicelli bowl and they were both amazing. I also had the Vietnamese drip coffee with sweetened condensed milk and it was a very delicious treat. I've been here several times...it's been a favorite go to of mine anytime I have a Boise layover. This last visit, however, was somewhat of a disappointment. The "Bun" noodle bowl I ordered was well below average and the fresh spring rolls were not as good as I remember them to be. The pork and shrimp summer rolls were fantastic! The peanut sauce is divine and they bring you extra hot chili sauce - my heart was in heaven. I've had the pho here on my last stop, but this time I decided to try one of the lunch options - the hot and spicy chicken. It honestly wasn't that spicy, but was still good. This was our third visit to Pho Nouveau and it was as delightful as the previous two. I had the pho (why mess with a very good thing) and it was superb, though I do not claim to be a pho expert. There were five of us, two of us had the pho (because we are very smart), my wife had the grilled beef and our other friend had the grilled pork chop. All of them gave their meals five stars! The reason I only rate this place with four stars is twofold. First, the person who seated us was rather rude - she might of just been having a bad day or did not like the idea that we requested seating other than the one she was showing us. Second, the menu is not very "kid friendly" - I don't know what Vietnamese children eat, but they would have to order full sized meals in order to satisfy their hunger. No matter, we both love this place and have made ourselves a promise to visit every time we are in Boise. read more

After having a horrible experience next door at Mai Thai, we decided to walk next door to give Pho Nouveau a try. The server greeted us promptly, took our drink order, and was back in a reasonable amount of time with our drinks. She answered a couple of questions about the menu, and was delightful. We placed our order and settled in, set on putting the awful experience at Mai Thai behind us. Our server came back to tell us the kitchen was out of something one of us ordered (which is understandable from time to time) and suggested two other vegetarian dishes we might like instead. She was right! Our dishes were delish, the service was SPOT ON and we were happy to find a new restaurant to give our business to. In fact, we told some friends about it, and just today they said they went there and had an equally great experience! I figured others might want to know as well, so that prompts my review. Steer clear of $11 soup noodle with half of what can normally be purchased to delight your pallet for $7 in the East Coast or West Coast, In Boston or Southwrn California. Do you like MSG? I had the pork and egg roll with noodles which was average quality and tried the Pho which was very lackluster in quality. I would say it's low end and have had better. The service was horrible, my drink was never refilled even after business slowed and my waitress after accepting my payment said thanks and walked away never to return. The Grilled Chicken and Spring Roll noodles bowl is my personal favorite. Add a spoonful of chili paste and it is lovely. Service could be improved at times, but I enjoy the food so much that it doesn't always bother me.
