I'm not sure how they time their pho noodle when serving it but it actually doesn't get soft, and in fact, you might even want to let it sit for a little bit to soften a little. When it came out to me, it wasn't hard hard but it was med soft enough for you to bite into it. But I think I like my noodle to be a little bit more softer. But not to the point where it starts breaking noodles, then that is just all bad, lol. The service was good. For both the fried rice and the noodle dish, a piece of lettuce was placed underneath the food. I'm not sure whether they it was for decorations or for eating because the hot food made the lettuce super soggy and greasy. As for the rice dish, the menu listed it was "yellow" rice. While it's far smaller in size, I love how it never felt cramped even as more folks started to trickle in. What's more, the pace of everything didn't feel as frenetic - workers weren't always rushing past us and it never felt like we were being nudged out (not that we loitered). As for the filling, it was tasty enough, but I'd be hard pressed to say it was super unique either. -- PHO DAC BIET - Special Combination Beef Pho with Rare Steak, Welldone Brisket, Flank, Tendon, Meatballs, and Short Rib...$17.95 This looked great, but it was just okay otherwise. The soup was very flavorful and the meats were fine (albeit scant in portion), but the rib was super fatty and I didn't see any pieces of tendon. The thin noodles were awful, though, as they were stuck together like a ball and could only be torn into shreds. Considering how we didn't get any of the more unique items nor any of the dishes that seem to be the most popular, it's entirely possible that we just didn't get the best that Pho This Way has to offer. At the very least, I can't help but wonder if getting their flat noodles would've been the better choice, as ripping the thin noodles apart made that delicious broth turn all starchy and cloudy. All in all, if what we had was even remotely close to three and a half stars, I would've considered rounding up on account of how friendly and attentive the service was.
