I came with my toddler for a mommy and me dinner date. We normally go to different pho spot around the corner but I decided to give this place a try. We came around 5:30 and there were a couple people inside. They said to sit wherever and my toddler chose the back. I finally got to check out Pho This Way recently and it was a really great experience. The staff was very warm and inviting and was eager to serve my friend and I. We ordered the net egg rolls, crispy chicken with stir fried noodles and also the crispy fried noodles with beef. Everything was so good especially the egg rolls. Not a lot of places make egg rolls like this. I highly recommend it! The server noticed that my friend and I were sharing food and he came up to us and offered extra plates and also extra utensils. That was very observant and nice of him. What's funny is that the restaurant was playing AI generated songs about the restaurant which was really cute. I used to love Pho This Way -- it was easily one of my go-to spots in San Jose for solid, flavorful pho. We went there regularly and always left happy. Unfortunately, something has changed, and the last three visits (including this most recent one) have been really disappointing. It seems like the original owner might no longer be there or in charge, because the whole vibe and execution feel different. The service has gotten incredibly slow, and the servers often don't seem to know the menu well. This last visit was particularly frustrating. We were seated and our server didn't even come by to take a drink order. When I finally waved him down to order two Vietnamese coffees, he didn't understand me at first and then started explaining that he had to take the other tables' orders first. I get that he was busy, but I didn't need the lecture -- just take the order and put it in. It felt like we were being talked down to while already waiting. The food quality has also declined. One of the big reasons we kept coming back was the generous portions of meat and consistent taste. Over the past year, the meat has gotten less and less. This time my wife's pho came with only two small pieces of meat. I understand costs are rising everywhere, but shrinking the portions like this just feels like we're being shortchanged as customers. If prices need to go up to maintain quality, then raise them -- don't quietly reduce what we're getting. I really wanted to keep supporting this place, but at this point it's hard to recommend it. Extremely disappointed. Any other pho restaurant I've been to gives short ribs and this place says "beef rib" on the menu. They give you back ribs, which are cheaper ribs with less meat that is tougher. The only reason to use them is to increase margins. Probably the same reason they leave the peritoneum (membrane) on the rib. They are too cheap and lazy to separate it and have decided to make the customer do the work. For the same price any other pho place will give you short ribs with more than double the meat that is more tender and you aren't forced to do the work their employees should. Finally got around to trying Pho This Way after driving past it so many times. The reviews looked promising. We came around 6pm on a Saturday and the restaurant was half full. We got a table right away. Service was nice and fast. I got the phone 2 toppings - rare steak on the side and meatballs. The broth was very flavorful and the fresh noodles was nice. I also like how much veggies they give including tbe green onions in the pho. The portion was huge. My friend got the bun bo hue. The flavor was a bit mild but they did not skimp out in the meat. Usually I'm a bit picky when it comes to food but I was able to finish the entirety of this soup, and the meat on the bone comes right off. My friend mentioned that the lemons provided also seemed juicier compared to others, which is an added bonus for those who enjoy a lemon flavor.
