So glad something like this opened up in Eastlake! Something a little different from our lineup down here but I thoroughly enjoyed it! Located right next to Navy Fed and by the Walmart, Phology took the place of the former Mochinut. Parking is not an issue in this lot, there is plenty. However the spot is small, not that much seating. They only have a few tables inside, not more than 6 and a small counter to sit at. They put two tables outside but it's very cramped. Service was fine, I had no issues to be honest. Please be patient with them, you can tell they're still getting their footing but it's not a problem. I thought they did good running and checking on everyone and serving everyone. I saw a customer getting irritated with a staff because of the language barrier but please be patient, I saw the hostess doing her best to help them. The food was really yummy! We had the Wagyu sliders and bone marrow for appetizers. Wagyu sliders were yummy and flavorful! The bone marrow was yummy and melted in your mouth. My favorite was the fried rice. The beef was yummy and tender! And lots of flavor. The oxtail pho was good but the oxtail was slightly overcooked, but it was still yummy overall! I have high hopes for this place! I'm a Pho guy, I love it when it is done right. Went to Phology today for lunch and got two meals. The beef rib and beef waygu pho and the beef waygu fried rice. I didnt like how popping hot the pho came out....I mean rolling boil in front me. The beef rib was tender and fall off the bone but it had ZERO taste. Just a bland piece of beef. The pho broth was tasteless as well. The fried rice was bland, the steak was super small portioned, and the steak had ZERO flavor. For this to be a new Pho restaurant it just didn't live up to the signature robust Pho flavoring. $50.00 for two bland meals! I do not recommend. read more

They have you sit where you want and possible take out it as well. It's quiet and light music. It is limited seating but there's bar seating as well. We ordered Wagyu Pho and Beef Fried Rice with Egg Rolls. The broth was delicious and not overpowering but tasty. We had the small size but there was a good amount of protein and noodles. Saw we have a new pho place in our neighborhood and had to check it out! There is a sign-in sheet inside, which is common in pho places. No host/hostess. There were 2 parties ahead of us. Took about 10 minutes to get seated. The place inside is small, fits probably about 6 tables, plus there are a couple high-top seats. Being a new place, you can tell the staff is still working out some kinks, like having enough staffing, which can cause delays with service. However, we were expecting this and were happy to wait. We ordered the small beef pho (well done) and the shrimp chow mein. Both were tasty and flavorful. I was impressed that the "small" serving of pho was still pretty generous. The broth was aromatic and delicious. My mom said the shrimp chow mein was her favorite chow mein dish she's had in a long time! Overall, I think the food was tasty and it is worth checking out. Came here on a Friday afternoon. I believe it's been a week since they opened. Pretty small spot with very limited seating, but very good quality food. The pho was very clean and flavorful and the meats were fresh. The sizzling beef plate had great flavor and was incredibly tender. Only issues we had were very small and probably just because of them still getting used to being busy. I had ordered a large and instead received a small bowl of pho. Also the sizzling beef and rice came out 10 minutes before the soup. Nothing too bad. Overall, service was good (other than the timing and wrong sized bowl) but they were both very kind and helpful. Me and my boyfriend wanted to try a new pho place, and decided to try this and split something. first off the prices are insane, and as soon as you walk in the customer service just is not there. they barely acknowledged us, and it seemed like we were a bother to them. we split a bowl for $25, where we got three slices of paper thin wagyu, and beef on the bone that was mostly just fat. no seasoning. the broth was ok, nothing crazy though. the soup came out in a rolling boil which was really weird, and never cooled down. super weird experience, very pricey for what you get, and they act like you are a bother to them. go to convoy noodle house or pho 7 cow! read more

I happened to be in the area and noticed they opened a new pho joint. Pho is very scarce in east Chula Vista so I wanted to see what they had to offer. I got the 4 egg rolls to start off and they were delicious. I ordered the pho with Wagyu and short rib. The pho was a bit underwhelming. The broth was just okay. The short rib was tough and did not have a lot of flavor. I was hoping the Wagyu would be better but it cooked super fast because the broth was piping hot. I'd say the presentation of the pho was impressive as the bowl itself was scorching hot. You definitely want to wait a beat before diving into the pho because it definitely will burn your mouth. I'm a big pho fan. I've been to almost every pho spot across SoCal: San Diego, OC, Long Beach, East LA. I judge pho by several factors, including; Broth depth, protein quality, broth temperature, noodle texture, and overall cleanliness all matter. Let me start with the positive. customer service was great. We were greeted right away, staff was friendly, and they were attentive the whole time. No complaints there at all. Now the food... The broth tasted like water. Straight up. It was missing that signature pho aroma and depth, especially the star anise note that gives pho its identity. There was no richness, no body, no balance. It didn't taste like it had been simmered properly, more like something rushed or overly diluted. I ordered the oxtail thinking it would carry the dish... it didn't. It was mostly fat and tough silver skin. Not trimmed well, not cooked down enough to be enjoyable. I found myself picking around it more than actually eating it. The broth also came out way too hot. Like aggressively hot. It ended up overcooking the noodles in the bowl, so they got super soft and mushy almost immediately. Instead of that perfect chewy texture, it just turned into a soggy mess halfway through eating. On top of that, the cleanliness needs serious attention. The windows, tables, posters, and even some of the accessories had dried sauce splatter and grime on them. It kind of kills your appetite when you're sitting there noticing all of that while trying to eat. If Pho7Cow in National City is an 8.5 for me and PhoLab in Lake Forest is a 9.8... then Phology is a 2.5. And honestly, customer service is carrying most of that score. I wanted to like this place, I really did. But as someone who knows what good pho should taste like, this just wasn't it. As the Rock would say....Finally, legit Pho has come to Otay Ranch.....the wait is over as Phology has come to the south side of Otay Ranch, bringing legit Vietnamese dishes including waygu pho, rib pho, broken/shaken rice dishes, and banh mi pho broth dip. If that wasn't enough, they got the spring rolls to boot including the hard to find Nem Nuong!!! It's like having Brodard's in our backyard, if you know you know. There were plenty of vegetables all fresh, cooked but still a nice crunch to them. I chose the vegetable broth which was light but full of flavor. The meat was skimpy. $18 for a bowl of cinnamon water, and 4 slices of meat is crazy work. They totally overcompensated with the noodles too- way too many noodles for so little meat.
