We've been in a hotel for a few weeks and tried the 'normal' local restaurants but we were saving this one and a few others. Took a chance to show up with no reservation, but they were gracious and easily found a table to sit us in 1 minute flat. LOVED the GENEROUS bucket of REAL butter packets. My husband and I have a joke about the crime of a nice restaurant serving fake oil based butter. Not here. Good sign #1. Waitress arrived and nice, we got glasses of wine (extensive menu) and I ordered my Escargot right away. No question I was shocked to think I would find my European delicacy here! Yup! Arrived quite quickly with the wine, some nice slices of the Ciabatta bread they also brought for the table. YUMM-O. Just like I remember from Germany. Mains: Lobster (MP) for me and the Foxy cut of the Prime Rib for hubby. Baked Potato and the Cheesy potatoes. All was delicious! And the HUGE salad bar was lovely and included. Now, we opted on dessert to go. Crème Brûlée and Key Lime Cheesecake. Current note, Brûlée tasteless but Key Lime delightful. End. Our bill was $240. My 16-20 oz. Australian Lobster Tail cost $135. Yup, MP [smh]. Sad part, I got two apparently to make the ounces, and it was meaty, but pretty dry and not much flavor, not sweet. However, I do not recall ever having Australian lobster....so buyer beware all around on that one. BUT, we had a lovely night and look forward to trying other items, and that salad bar alone!!! Check this establishment out if you haven't already!!! P.S. Can't believe we forgot to take pics. Sorry.

When we arrived, we found out that you'd need a reservation to dine in the main dining hall, so we ended up going to the Saloon side where we had to find our own seats. We sat near the pool table, and the chairs were super unstable. The staff were fine but clearly seemed busy and understaffed. It took a long time for them to bring us water and take our order. I tried flagging the waitress 2-3 times when she was passing by and felt very ignored especially as I've made eye contact with her a few times. We ended up ordering the fried seafood combo and the seafood chowder, and it ended up taking at least 20min to come out (even the soup). The dishes were all very salty and definitely needed a lot of water to go with the food. Overall, definitely not a place to go before a flight since you might not be able to get in and out very quickly, and the food was really just alright for the price. Perhaps the main dining room experience would be better but I still wouldn't recommend it given the food quality and service.

This may be why our service was impacted. Our bartender, while super friendly and trying to do his best, was overwhelmed and had just started. Lots to learn. The dishes were all really well presented - that takes skill, in and of itself. While these weren't dishes I would come back for, it was a nice, quiet dinner to end a full day. And, don't overlook location - this is in Alaska, so you will pay more. That aside, nothing was spectacular but nothing was terrible enough to leave on the table as well. More on point seasoning would have breathed life into my jambalaya. My dinner mates had similar comments about the chicken pasta and taquitos. The French Dip went over well with my dad. What would I change to up the service and experience? Direct guests to the main dining room if service cannot be duplicated in the larger bar area. Maybe add another bartender to help out in the evenings, when it tended to be busier. Offer a limited drink menu and nothing more. This might increase the speed and also play to the strengths of the staff. For us, it took a long while to get our total drink order and mine never came, so I ended up ordering a local cider. Bring a chilled glass with the cider, friend. Our check took a while as well. The food came timely. So, again, the patterns looked to be with the staff manning the bar area. Really, an easy fix, if you think about it.

Although it was a bit of a tourist destination, the food was good and was plentiful. I really liked the Prime Rib! Salmon was good too. Only a few draw backs, the food is located outdoors and only the salad bar had a roof over the top. It did rain for a while and we had to make a choice to either stay undercover (hungry) or get wet (along with the food on your plate) while waiting in line to get your main courses. The main courses included Salmon, Prime Rib and a Cheesy Cod Bake. You also got unlimited non-alcoholic beverages and one dessert. Other drinks were available for a fee. Many of the people arrive on buses, so they do get really busy when each load is dropped off. Lines can be a bit long. The entrance was kind of cool, it was through an underground mine shaft. Now you wanna play the game if you respond to me and I respond you you go right ahead and we'll do this for the rest of time. But you don't ever wanna walk into this place and spend your money on this crap. The Alaska Salmon Bake in Fairbanks comes with a reputation that the food unfortunately cannot support. Both the salmon and the cod were cooked far past any reasonable standard -- reduced to a dry, flaking consistency closer to fudge than fresh fish, with none of the moisture, fat, or flavor that world-class Alaskan seafood deserves. When I requested that my salmon be prepared medium rare -- the correct preparation for fish of this quality -- I was flatly refused. This is a liability shield masquerading as a culinary policy. Alaska runs some of the finest wild salmon on earth through these waters, and to reduce it to the same overcooked fate you'd find at a casino buffet is nothing short of malpractice. Properly prepared salmon should be translucent and silky at the center, the fat still doing its work, with a clean sear on the outside. What was served bore no resemblance to that standard. Holland America books this excursion as a signature Alaskan experience. Travelers deserve to know that the fish -- the entire point of the meal -- is cooked without skill or care, and no accommodation is made for guests who know how it should be eaten. Skip this and find a Fairbanks restaurant willing to treat their product with respect. You don't get to go on top of my review without an alternate response to me. You people knew full well what you were doing and how you were doing it. I asked every person there to cook beef fish, medium rare everyone and then said absolutely not so you can go to hell. And if you want to keep on going, I got the rest of my life to make you my cause so go ahead make my day.
