The Bismarck
Aerin A.

Best pizza I've had in New York hands-down and I've tried all of the major spots. The Bismarck was also the most expensive pizza I've ever had in New York to be fair but definitely worth every single penny... thanks to Naomi Osaka I am $47 poorer but also very content. Pizza studio Tamaki is her favorite pizza spot in Tokyo which now has this location in New York and the Bismarck is her favorite pie. It really reminds me a lot of Cacio Pepe... but with sausage and egg it's very hard to describe. The salt punch, which is the pizza studio Tamaki signature action of adding salt directly to the oven right before placing the pie on top to cook really does add another level of deliciousness and complexity. The mushroom soup mini tasting was also the best soup that I probably have ever had as well. Highly recommend this place.

Easily the fluffiest crust around in NYC. Did not get the chance to try this in Tokyo but so glad that it's now available here. Highly recommend having a reservation especially on the weekend nights. The pies are perfectly sized for one person but you definitely want to try multiple. We got the Bismarck and tamaki; both uniquely delicious in their own way. The Bismarck was incredibly savory whereas the tamaki was light and refreshing. Will definitely be back!

If you love pizza for the bread, this is your pizza. But I found this arrabiata pizza to be really quite wet. It was more simply sauce on bread? Tbh it's not my preference. But their dough IS very fluffy and nice.

I'd heard about this pizza spot off St. Marks and was intrigued by the concept of Japanese-style pizza, which I'd never tried before. Reservations can be tough to get, so I stopped by on a Friday around 5:30 PM and luckily got the last available seat in the back where you can watch the chefs make the pizza. Before the meal, they served a small cup of mushroom soup, which was a nice surprise and absolutely delicious. I started with the PST salad and a glass of wine. The salad was light and fresh, with a flavorful dressing, plenty of Parmesan, and crispy prosciutto that added a great crunch. For my main course, I ordered the Tamaki pizza. I wasn't sure what to expect, but it ended up being excellent. The roasted tomatoes on top were really flavorful and the dough was pillowy, airy, and perfectly seasoned with the salt baked into the crust. The cheese had a smoky flavor that set it apart from traditional mozzarella, and I really enjoyed that unique twist. To finish, I ordered the ice cream with olive oil and sea salt...a combination I love. It was the perfect ending to the meal. Overall, this was a great experience, and I'm already looking forward to coming back with friends to try more of the pizzas and other dishes on the menu.

Came into this meal with pretty high hopes due to all the hype surrounding the place. The interior is nice, love the ambiance. Servers are friendly and attentive. The meatballs were just okay... grew up eating homemade Italian meatballs my whole life (pause) so I have a pretty high standard for them (double pause) and these didn't meet that standard. The pizza was decent -- extremely wet and sloppy, as soon as you pick a piece up everything falls off of it. I'm not a fan of Neapolitan style pizzas to begin with, and this just reaffirmed that stance I have. Flavors and ingredients were pretty good, but wish the cook and overall eating experience of the pizza were better. Prices are on the higher end for what you get. One and done for me for sure.

You can really taste the fresh ingredients. The crust was perfection. Really enjoyed the pizza here!! Thumbs up!!

Excellent prosciutto/burrata and Tamaki pizza. Incredible Okinawa salt ice cream -- truly some of the best around. Would probably skip the arancini next time and sub out the Bismarck.

I have lived in NYC my entire life and my pizza consumption must be recorded in tons, so I have a lot to compare this to. Let me tell you, this is the real deal. We shared four different pizzas and they were all excellent. PST is the real deal. The service and the vibe are great too. Love this place. We will be back.

We arrived at 4pm on a Thursday night in early June to see if we could get on the waitlist. There are a limited amount of reservations, but we weren't sure when we'd arrive, so left it to chance. There're signs identifying a line for people with reservations and another line for waitlisting (along the low wall and continuing towards Starbucks/park). There were only a few others waiting in line. At 4:30, she took our names down after explaining we would enter after the reservations for 5pm entered. We could walk around but needed to be present at 5. They were able to fit in a few more people but also said they wouldn't continue taking names. The next waitlist would start at 7pm. We were seated by 5:12, so it was much quicker than expected. There was low back bar seating, low upholstered seats, and wood bar stools. We got to sit at the pizza making station, which was cool. There were 2-3 guys working that station (cutting dough, pulling dough, adding ingredients, putting pizzas into pizza oven, lifting and rotating to cook evenly, then placing them on plates). Mostly, it was a lot of Tamaki, Bismarck, and 5 Formaggi. The pizza comes out within a few minutes. At 5:25, the pizza arrived at the table, but it was a little lukewarm as the plate doesn't seem to help heat retention. The dough was light, has a crisp exterior, and chewy texture. The DOP (plum) San Marzano tomatoes weren't that sweet until the last one. I did enjoy crushing each into the semi-salty and chewy mozzarella. The Bismarck tasted like a breakfast pizza with the scattered mushrooms, sausage crumbles, and sunny-side egg. The pecorino romano is scattered on top before baking. A healthy drizzle of olive oil is poured from an olive oil cruet. There's a $1.49 platform fee if you pay through the QR code instead of your server. We did mention a few times that we wanted to split the bill, but the server had to contact management to void the original transaction and split the bill. Dinner was done within an hour. One of the guys nearby asked what the curry sauce was since the waiter probably didn't mention the special pizza, and he offered a spoonful of it to all 4 of us. It was pretty tasty but $40 for butter chicken pizza was a little too steep for me, especially since I did want to try the original flavors first. I only knew about the butter chicken because I saw a review about it and asked if there were any specials. Overall, I think the dining experience was worth it because of our viewpoint and how it quick it went. The food was tasty but not being hot or having standout flavors is a bit of a disappointment in a city full of pizzerias.

Still thinking about the super soft pillowing crust. This place was delicious and the service was great! They allow bar seating for walk ins.

The hype is real! What a spectacularly delicious pizza!! I was lucky enough to snag a 9:30 reservation and we got seated with a view right into the kitchen! We saw every pizza they made while we were there, which was a thrill. I had the margherita and my hubs had the diavolo. We also had the octopus. The pizzas came out lightning fast and the crust was so unique and chewy and salty (in the best way). Amazing flavors. The service was also very attentive, and the hostesses, who are surely overwhelmed by the crowds, were very kind. We ordered the salt ice cream dessert on a whim and it was mind blowingly good. Just get it. Wonderful experience and I can't wait to return!

Wow what fun spot! Once you enter, there's a huge bar with seatings surrounding it and a few tables to the right. Then go around the bar to the back where the magic happens. You can see the large pizza oven where they are busy firing up the Neapolitans. After your order is placed, they serve you a complimentary mushroom soup in a cute espresso cup. It was creamy but light. The soup was smooth and tasty. Then comes the star of the show, their pizza. I ordered the Bismarck and it did not disappoint! The crust was perfectly chewy but still light and airy. The sausage was soft and tender with a milder taste than typical Italian sausages, which I actually preferred. The soft cooked egg in the middle made it rich and creamy which tied everything together beautifully. The energetic atmosphere with the friendly staff made it such a positive experience. I highly recommend you make a reservation since the seatings are limited!

Personally prefer the margarita as it seems to be a more well-rounded pizza and the tomato just can't be missed. It was pretty packed inside when we got there and took the bar seating, so would probably recommend a reservation for larger parties (2+) on evenings. Definitely one of my top neopolitan pizza spots in NYC!

We started with two fabulous drinks: An Espresso Martini and their signature Limoncello Margarita. We shared the Shaved Brussel Sprout Salad and it was fabulous. The bits of bacon, combined with the spiciness of the pepper spices, made this a perfect starter. The entree was also shared and it was the Spicoli 2.0 Pizza. I cannot recommend this pie, enough. You will taste flavors that you've probably never experienced before with a pizza. Also, the different textures of the arugula, creaminess of the cheese, and the perfect crust will make it a memorable selection. For dessert, we shared the Buttermilk Panna Cotta. Do people not realize that putting a bar near a door on a freezing cold night benefits no one? Good thing I did not order alcohol or I would have froze to death. Seriously, none of the pies stood out in grand memory. All I can think of is, well, nothing. Nothing positive anyway. The names of the pies are funny, and the staff is friendly, but besides that, the quality of the food for lack of a better word, dare I say it, sucks. Hoping to salvage the meal, I ordered their Chicken Parmesan. It was the Hail Mary pass that unfortunately did not connect. The cutlets are overcooked and dry, and the red sauce cooked with it has minimal tomato flavor. At least the spaghetti is cooked to a nice al dente and mellow garlic butter flavor, but like the sauce cooked in, it is also minimal. Part of the problem I feel is they are trying to go for a vibe that has a New York and modern feel. It does not work. Stay true to one or the other. Or at least look at other business models. I will use another pizzeria in Bushwick that exemplifies it perfectly. It is a hipster pizzeria in a hipster neighborhood. Through balance, it creates an ambiance both welcoming and warm without losing any of its Bushwick character. It does this by not beating you over the head with hipster vibes, just enough to let you know that you are in Bushwick. The band Franz Ferdinand was playing as I was wrapping up. Rather than take the pizza out, I suggest you throw it out. Overall pizza rating: 1.7/5

The first thing you notice is the main bar wall, with its exposed centuries-old brick that has survived every bit of chaos this city could throw at it. It's subtly backlit from with a warm, amber glow that highlights every single historic groove and imperfection, making the whole room look like it's breathing. I have to say the centerpiece of the entire narrow room is the bar itself, and let me tell you, it is an absolute stunner of a contrast. Instead of the usual dark, sticky tavern wood, they've dropped in a long, continuous slab of pristine, elegantly smooth white stone. It glows under the soft lighting like a block of polished marble. There are no strobe lights and no obnoxious, skull-rattling bass in this joint. Instead, the room is wrapped in a blanket of incredibly chill music that matches the pulse of the room perfectly. It's just loud enough to drown out the noise in your own head, but quiet enough that you don't have to scream over the smooth white counter to be heard. People aren't here to be seen on TikTok; they're here to disappear for an hour or three. You slide into a chair, order a proper Old Fashioned from a bartender who doesn't rush the pour, and watch the ice melt against the amber-lit brick. It's the ultimate underground exhale--a perfect, narrow slice of peace in a city that never shuts up. Cheers!
