My husband and I are long time customers and recently been very disappointed with how things have been run and the lack of communication regarding the availability of popular menu items, specifically the SALAMI sandwich! After waiting in line for about 25 mins, I ordered a salami sandwich to then be told that "now they dont make them all the time and sometimes they are available on the weekends." WTF?! How about some window signage or disclaimer on their website about what they "sometimes" have available. The line for this place was quite long but the wait was worth it to me! There are so many different bakery items here and I wanted to try everything! Everything looked very fresh and so delectable! I ended up getting an herb biscuit and a chocolate croissant, and oh my, they were each so delicious! My biscuit was packed with flavor but didn't overpower the biscuit. My only wish was that I waited to eat it back at home where I could warm it up because if it was that good cold, I can only imagine how good it would be warm. The chocolate croissant was so delightful and out of this world! It was the perfect mix of buttery and flaky and the right amount of chocolate. I wish I would have been able to take a bunch home with me back to Arizona! I ordered an Americano and it was hot and fresh. Service was friendly and fast-paced. You may feel rushed if there is a line so definitely look at the menu ahead of time to get an idea of what you want to try. I ordered coffee and picked up a couple pastries, but my coffee did not come out even after groups of people, who came after me, got their coffee. I asked them about my order, and they cleared skipped my order and made it when I asked again. No staff said sorry or made gestures for their mistake. ​Good smells, small space, and super polite staff. Pretty crowded (but line moves very fast) on a saturday morning! The Chocolate Croissant was delicate layers upon layers. The layers were so fine and flaky that it was pretty fragile and therefore, pretty messy to eat. Good croissant! However, I didn't really like the Canele as much. It had a moist custard-like interior but the carmelized crust was too hard and was a tough chew. Didn't really like it and thought it wasn't worth the price. It's honestly my first time trying a Canele, so it just may not be my thing. But overall, from the croissant (in which I at least have a standard), this bakery knows what they're doing haha. Latte was huge and came with beautiful art (but ah, took a picture 1 second too late before someone poured sugar in haha). For brewed coffee, the cup was pretty small with no refills. I used to always come here to pick up a croissant on my way to school. I never got anything but the almond or chocolate croissants, which are fantastic by the way. The other day I broke my habit and got a chocolate chip cookie. OH MY G O D IT WAS UNREAL. Ugh, I love Proof..so much. Everything from it's charming Atwater quaintness to the best chocolate chip cookie EVER. I am a self-proclaimed cookie monster so, when I say this cookie is game-changing, I'm not lying! The chocolate chip is almost toffee-esque and it's salted so there's a delicious balance. However, it's the texture that I LOVE. It's crispy on the edges but ooey gooey towards the middle. I want one, right now. I've tried their lattes, and they are high-quality, with a bit of bitter and sour, but the cups are small and not quite worth it to a semi-coffee drinker like me. I've also tried the Canale - didn't love it, very eggy tasting, but the texture was cool, like a crisp/ brûlée top outer, with a squishy and soft inner. The chocolate chip cookie was pretty good and chewy, but overall, this place is not super special and it quite expensive. The proof is in the taste! Proof Bakery is one of the best examples I have tasted here in LA for all things said, the art of pastry making. I find myself comparing their croissants to ones I had at the C.I.A. It is a near perfect creation of buttery goodness. Their baked goods are certainly a passion for great work. The sandwich I had this past weekend was more than amazing. Proof Bakery makes most everything in small batches and the care they put into their work is amazing. The weekends are crowded and they will run out of items quickly. The available seating is scarce, so you should feel lucky to find something. I have not visited the location yet but I wanted to review the croissants I received as a gift from a friend. She raved about how great this bakery was and that they are known for their croissant. I tried the pain du chocolat and it was flaky, crispy on the exterior, soft in the center, and the chocolate was very prevalent. It was well balanced and not too buttery, taste-wise. (I've had cases with chocolate croissants where it's more croissant than chocolate or the chocolate tastes off.) Presentation of the pastries is clean and well done. I was craving their canalés, but they unfortunately said they're weren't currently in the rotation which was a bit disappointing. I highly recommend giving them a try if they're available. I really like Proof's croissants (like everyone else). I went later in the day than I usually do (right when they open vs 11 am). They didn't have any specialty flavors. I'm not sure if that was because I got there late, or if it's a covid thing. You can't go wrong with the regular selection they have. I always get some croissants and a slice of cake. I'm not crazy about their coffee. It's ok I suppose but it doesn't enhance the carb consumption experience and it's not good enough to stand alone for me personally. They only allow 3 customers inside the shop at a time and have marked spots outside for people to line up. The line goes by pretty quickly even when it's a bit long. Small bakery with a cozy vibe, small marble tables, limited seating, and omg, some of the best baked goods in LA. We got there just after noon on a Saturday, and sadly they were already sold out of their chocolate and almond croissants. So we had to settle for a ham and cheese croissant, a Paris-brest, and a malted chocolate chip with sea salt cookie (plus various forms of coffee). Some days, life is tough.... The croissant was everything that you could desire - sweet, salty, savory, buttery, flaky, delicious. The Paris-brest was also wonderful and a bit of an uncommon bakery treat for this area. Technically, the description is a choux pastry cut in half and filled with softly whipped praline flavored cream - apparently it's named after a bicycle race in France because the pastry is shaped like a wheel. Experiencing this pastry is like looking at something that vaguely resembles a bagel with cream cheese but tastes like a cream puff. Amazing, that's all I can say. Oh, and the cookie? In my book, this may wrest the title of best chocolate chip cookie in LA from Clementine. On the way out the door, couldn't resist picking up some biscotti and strawberry meringues. Haven't tasted the biscotti yet but the meringues are definitely something to write home about - light, airy, infused with strawberry flavor, and filled with a slightly sticky substance that tastes divine. After a decade of being a customer and fan I have to let you go, It's been fun Proof Bakery but it's over. I always tolerated the unfathomably slow service and overlooked the level of attitude for the quality of the pastry. The pandemic was hard on everyone and I'm happy you survived. Good for the employees who make up the employee owned status, now. After we waited in line for 10 minutes on hot late Sunday morning my 22 lb dog and I stepped inside, waiting until Someone exited. The barista immediately came around the counter to ask if he was a Service animal? No he's not, he's just someone I didn't want to tie up in the heat, I replied. She said he couldn't be inside. So I took him outside & tied him up. Of course the pastry choices at 11AM are skimpy, and it's at that moment that it's clear to me we've reached the end of the road together. You've turned the interior into a pop up store from the worst days of the Pandemic, selling expensive 2lb bags of flour and gutting the cafe of any table space or reason to hang out. For a minute you were the neighborhood bakery, now you're someone I don't recognize. So long Proof, I'm done. read more

Such a lovely little cafe, with some seriously tasty pastries and cakes on offer (ohh I seen you big delicious looking cake in the cabinet). I had been wanting to go to Proof for 2 years to try their chocolate espresso cake. After being brought back to the menu, I decided to drop by. Luckily, there was little wait time on a weekday. I spotted the cake right away, with some other high priced pastries- are they as good as their pricing claims? Not sure, but the slice of espresso cake I bought was highly underwhelming. Perhaps it was the long anticipation of actually trying it, but it was a very much average cake for me, especially at around 7.50 per slice (I thought it would be much thicker/bigger). The icing was lackluster, and I couldn't taste much of the espresso. The chocolate coffee bits on the side were the only redeemable part. Better luck next time. read more
