They used to have the best almond croissants, but recently stopped making them - when I asked why I was told that almond croissants are "seasonal" - wtf ? I've had them for years here and there's never been a "season" for them... On my most recent visit though customer service took a step down, I thought. A lady in front of me asked for a butter croissant (they are pretty amazing here), and she asked for a pat of butter on the side ... no big deal, right? Well the person behind the counter gave her all this grief like "are you sure?" "They are made with a lot of butter already" "I wouldn't have butter if it was me" ... really? Give the lady a break, if she wants to have a pat of butter let her have it !!! She got her pat of butter and left, seemingly (and understandably) a bit miffed ... On another recent visit, I showed up at 11a on a Sunday and they were out of ALL pastries... at 11a, on a Sunday ??? Come on Proof! read more

With Maison Giraud having closed in Pacific Palisades, Proof Bakery's croissants can be said as being one of the best currently in Los Angeles. For one I know Proof uses real butter to make their croissants as opposed to margarine. How one can tell is that their plain croissants are straight as opposed to being curved; if a croissant is curved, then chances are it's made with margarine or some other kind of fat. When you bite into their croissant it is light, flaky and tend to leave a slight trace of oil on your fingers. Other places like Porto's croissants they're somewhat harder and they try to get by with their much larger size. For croissants bigger doesn't mean better. All the butter croissants I have eaten such as the ones in Maison Giraud, Los Angeles' Republique and Proof's the croissants are always of moderate smaller size, they're always straight and the price hovers around the $3 range per. Proof Bakery's Ham and Cheese croissant is something you will think about after eating it. Like the plain croissants it is al-dente to the tooth, light and flaky but with the added dimension of savoriness from the ham and cheese. In this case, the proof is not in the pudding...PROOF is in the delectable mouth watering treats available at this Atwater Village bakery!!! Driving by I would always see a line of people waiting patiently for their turn to enter this magical emporium of pastries, tarts, cookies, cakes, sandwiches and coffees!!! I was fortunate enough to try their flourless chocolate cake!!...so decadent, so melt in your mouth delicious!!! I also had a seasonal cherry pistachio croissant. It was so flaky I was picking off pieces from my shirt for a snack later! Recently i had a special occasion to celebrate and I pre-ordered a few items. So convenient and the staff at Proof Bakery replied to my pre-order email quickly and very efficiently. They have incredible sandwiches, (every single sandwich is SO delicious with coarse sea salt crusted on the bread and my favorite is probably the beet or salami) beautiful desserts and drinks. Order the chocolate chip cookies- they are amazing and you won't regret it! (You'll regret not ordering one.) There is parking in the back behind the restaurant or residential street parking, metered and non metered. The place is tiny so the best time to go is right before or after the lunch rush if you'd like a seat. Super small coffee/bakery shop in Atwater Village. There's not much seats inside, so if you want to grab a table, I suggest going on a not-so-busy hour (around 10am or 2pm). Easy parking either metered street, neighborhood, or at the back lot. Please order the sandwiches when you go there. So good! I ordered a salami sandwich, which I enjoyed the taste (I mean how can you go wrong with salami and cheese?) but I hated the bread they use. It was so hard to bite into as a sandwich that I didn't wanna keep eating. Sandwich should be easy to eat and not having to work that hard to bite. Their cakes were baked well, but borderline dry that eating the whole serving would leave your mouth pretty parched. Definitely not a fan of edible flower garnish either, it adds nothing to the dish. Biggest pet peeve though, the girl taking orders kept fixing her glasses with the same hand she would grab the baked goods with and not change gloves plus she was boarder-line rude. read more

Heard so much about this bakery & I finally had a chance to trek my way to this little shop. The line was out the door. Now when you see a line out the door, it's gotta to be worth it. We'll see....Parking can be a pain in the butt because it's street parking. Good luck finding a spot. Now that parking is out of the way, time to join the line. Decor is simple, 2 little tables outside the door, a few tables inside. The goodies are displayed nicely. The minute you walk in, the aroma hits your nose to where you can already taste it. Menu is simple. They have sandwiches of the day & that changes daily. The baked goods looks so good, I can't decide what to get. The croissants are so flakey, soft inside & buttery. The chocolate cookies are slightly crisp on the edges, soft & chewy in the center, buttery, gooey chocolate & sea salt. The balance of the sweet & salty was orgasmic! The pistachio lemon cake was moist & soft bit a little bit on the sweet side (honey drizzled on top). Beautiful pistachios on top. The sandwiches are Demi Baguettes. Perfect sized. Nice crust, chewy & glutens are well formed on the inside. We got Fennel & Salami w/ a garlic aioli. The Fennel was thinly sliced, slightly sautéed. Still had a bite & paired well with the salami. Roasted Brussel Sprouts in a Feta/Ricotta, Salsa Verde spread. It was lemony, & slightly smoky. They also had a Vegan sandwich. Once they sell out the sandwiches, that's it. They offer coffee, expressos, & other drinks. Condiments are on the side, water, napkins etc. It's a tight space but the vibe was cool, friendly, & awesome. The proof is in the price tag. While I love the neighborhood spirit of Proof Bakery, shelling out wads of cash for an iced coffee ($3.50ish) or $7ish for an orange juice and a chocolate croissant, is a silly habit to get in to when I'm not too particular with brewing techniques or beans or the like. For those that are, I'm sure Proof's barista offerings are well worth the money. Their bakery selection is fantastic and offers both savory and sweet, so if you've got the extra dough, spring for 'em, as they don't disappoint. They've also got whole cakes/pies for sale as well. It's an absolute zoo on the weekends and peak times in the am, as one would expect, and I think it would serve better as just a to-go spot. They have a few tables to sit at but they're kind of a tease to those of us that do have the time to hang out leisurely because once the line of standing patrons starts to queue up, you're left feeling like you're just in the way of someone's precious caffeine moment. read more

CHOCOLATE CHIP COOKIE: probably one of my favorites in LA. it has the right amount of crisp and chew, bittersweet chocolate, plus a salty bite. great combo and crafting, just spot on! CHOCOLATE COOKIE with GANACHE: i love this when i see it on the counter. grab it. it's a steal, for $2!! can't beat the bitter cookie sides, bittersweet ganache inside... plus sometimes there's candied orange peel on top, or some cocoa nib. plus a few grains of salt. just DIVINE. I don't get too riled up about bakeries in general, but this place Proof is the shit. We've only been a few times in our tenure in Los Feliz, but whenever we go, I think how stupid it is that we don't come more often. The space is cute, bright and well decorated on a bustling stretch of Atwater Village. It gets pretty busy, especially on weekends, and I have yet to dine in as a result. Taking out is much more manageable. The lines aren't insane and service is friendly. The pastries are some of the best in the city. The croissants are excellent, buttery with delicate, shattering layers--I can't think of a better one around. I've had a lovely currant scone that was pleasantly crumbly, almost like coffee cake. I've also enjoyed the sticky, dense, caramelized caneles. For a straight-up dessert pastry, I'd highly recommend the pomegranate pear tart if it happens to be in the case. I had this once and it was an incredible tart, with a nice packed crust and a beautiful fruit and custard filling. (I would imagine all the fruit tarts are good. This is just the one I've tried.) The savory stuff is also delicious. In fact, of all the wonderful offerings at Proof, I think the farmer's market quiche is probably the most wonderful. I've only had this once, and apparently the ingredients vary day by day. Mine had ham and spinach, but I'm guessing the important parts don't really change. The quiche was sublime, the best I've ever had, with custardy egg and a sturdy, flaky, buttery crust. Each bite was deeply savory and perfectly textured--this is the only quiche I've ever thought about after it was gone, and I think about it kind of often. If you're in more of a lunch mood, there are some ready-made sandwiches available after noon. I've had one with prosciutto, camembert, and fig spread, and one with radishes, greens, and anchovy butter. Both great sandwiches, with fresh, tasty ingredients on crusty baguettes. We live just far enough away from Proof that we can't roll out and come home with a take-out breakfast without effort or forethought. This is the only reason we've been to our corner bakery about 200x more than Proof--we are lazy, horrible people who probably don't deserve to eat amazing food on a regular basis. The quiche, though, is a recent discovery, and it just might get me into a car on a Saturday morning. I finally made it to this bakery yesterday, a Friday, around noon. I had all along planned to get an almond croissant. I am testing almond croissants in a variety of bakeries in the greater LA area. So I operate with a frame of reference for all the almond croissants out there. I had anticipated that this bakery would blow me away, going by the reviews I have read. I discovered that a croissant can be too flaky, resulting in crumbs everywhere. I was very careful when eating, yet it was very messy, with crumbs all over. For some reason, the bakery had cut a horizontal cut into the croissant, I cannot fathom why. It stuck me as odd. Almost as if they had considered making a sandwich out of it. Odd. Every other almond croissant I have purchased has had some kind of filling in the middle, something that resembles almond paste. That is in addition to the slivered almonds on top. This one had no filling. Not the end of the world, but the croissant would have been tastier with filling. I regret that my review ended up being less than favorable. The little shop is charming. The people that provide customer service seem sincere and engaged. I know that the enterprise is a co-op, I really, really wanted for the croissant to be amazing and wonderful. So I read all these great reviews for this place and was excited to try it out. However, our first impression was wow, what grumpy borderline rude service.. Having never been there and read about the infamous croissants we asked about them and got rolled eyes with an annoyed response telling us they only had a few of the almond ones left. Forgive me for not being a local and not knowing they sell out early in the day. I'm giving them two stars because the items we tried were very good - we tried the almond croissant and the salted chocolate chip cookie. The cookie was delicious and the croissant was tasty as well but nothing I'd put up with the service again for -sorry Proof. I had heard about this bakery through TV shows, social media, as well as word of mouth so I had to make the trip out for find this famed French style bakery. Proof is located in cozy and quiet neighborhood of Atwater Village. Parking was a little tricky to find on during the weekends but a quick turn down the street into the neighborhood solved the issue quickly. The bakery has a subtle window decal of its namesake so if it's your first time going, just be on the lookout for the black exterior that separates it from the other storefronts when you drive by. The chocolate croissant was worth the buy and was reflective on the previous reviews, notably due to how was flaky and airy the texture was-- key characteristics that really define this pastry. The use of butter gave the croissant its subtle flavor and is the reason the pastry is able to develop its flaky layers during the baking process. The chocolate is well distributed within the croissant and adds sweet contrast. Proof ensures each bite is a mixture both components. It's a messy eat and you'll get crumbs everywhere, but its only a small hindrance in comparison to the immense satisfaction you'll feel. Just position you mouth over the bag to catch everything and then toss it back to eat the rest when you're done. You're welcome. Pair your croissant with a cup of coffee or latte, which is prepared using Cognoscenti coffee, their in-house brand. The baristas pull some great espresso shots to make even better drinks. Proof has a great variety of savory options on top of their sweet pastries, and with its quick rotations into the display case and out in the customers' hand, you can be assured that whatever you'll order will be extremely fresh. Ok, so I was writing a review and lost it. But here it goes again. I loved this place. Except for the hours, because really I could have been here all evening. And since I wanted to read, I was a little disappointed. But let me review what I tasted here. The review should count for both Proof Bakery and Cognescenti coffee, because it seems they are if not the same, then inseparable. So I walked in to this petite patisserie and determined, I was confused, but saw the tart of green grapes and thought, I've seen this before, but never seemed interested in getting one. However, as the place was closing soon they ha a limited selection of their usual treats. The alternatives were a beautiful looking flour-less chocolate cake and a chocolate caramel tarte, which looked equally wonderful but equally dense. So I opted for inquiring about the grape tart when the guy behind the counter's eyes lit up. And one thing led to another and there I was sitting with my grape tart and equally beautiful cappuccino. What to do next? Dissect flavors and textures, of course. With little time and less fervor, because I had hoped for more time, I cut into the tart and was happily surprised to have it hold up to the cutting but appear so thin. Biting into it led to an equally curious surprise. The grapes while balanced in sour and sweet, also had a savory balance with something in the custardized creme. What was it? Star anise? Cinnamon? Vanilla? Not sweet, no, but balanced and the whole dish was quite good. But for some reason, maybe the grapes hid the flavor. Now I must go back, but for now, the review of the coffee must occur. They were closing, but the barista as I hate to call him, executed a beautiful cappuccino. Just as balanced as the tarte, with well flavored espresso that was not afraid to show itself through the milk (taste wise), but was not bitter. I will be back. Especially since I have never hung out around here. But I'm writing this review with cup in hand from across the street at Bon Vivant, which I find to be a bloated over excuse for a cafe. The cheese in their pseudo French delicacy section is so boring, mass produced Saint Nectaire (get fermier if you want to show off St Nectaire. And Bleu D'Auvergne, get fourme d'ambert or something unique. It just leaves me longing and looking across the street. read more

Came here on the suggestion from my son. He said the chocolate croissant was the Bomb ! There was a short line outside coming into the bakery due to Covid guidelines. Once inside, there was goodies of pastries, cakes and cookies to choose from. I picked up three chocolate croissants, a blueberry scone and an almond croissant for me. I must say it was so flakey and yummy and one of the best almond croissant I ever had. Hubby enjoyed his blueberry scone as well. We downed it with java which was a good brew. Much better than the double baked @ La Painer (Seattle). Double baked means they bake it twice (usually from leftovers).. so it will be a little more greasy than a regular croissant.. but that is what makes it so good. They used excellent dark cocoa -- you could even taste the gritty texture that comes with quality high percentage cocoa. Grapefruit cream w/ pomegranate fruit tart had a wonderfully light infused cream complemented with a hearty crust. Pomegranate seeds were a beautiful touch. They brew Four Barrel Coffee -- from SF ( had a single source from Nicaragua) -- very smooth & bold. I dropped my son off in the neighborhood so I thought I'd walk around the corner to see if I can grab their infamous croissants. I LOVED LOVED LOVED the croissants of Paris and practically survived on croissants when I roamed Paris, so this is the standard I always rate them by. This place is as close to the croissants I got in Paris, they are legit. I'm glad the wait was no longer than 5 minutes when I got here, with little seating. Clearly, this place is for you to grab and go and if you do linger, be prepared to battle all the moms with their gigantic strollers (hey, I'm a mother of two kids under 3, you don't need a Humvee stroller to move them, thanks!) so good luck trying to grab a spot here to enjoy. Basic croissant: perfectly buttery and crispy. For some, it may feel like eating air. Damn good air, I say! Pain de chocolat: I may have botched the spelling, but Proof doesn't botch the taste of this one. I enjoyed this croissant the most, but was it because of the taste of butter AND chocolate combined? Cheesive and chives: With sweet croissants come savory croissants and this one meets the savory in each and every bit. I do say though, this one comes off a bit dense. Proof is a cute little bakery with a bit of seating inside and outside. Husband and I decided to order a blueberry scone, a savory turnover and a vegetable tart. We were in luck because they were putting out fresh baked items of each so the woman behind the counter gave us warm ones from the oven. We paid and decided to eat outside. It's a pretty busy place so seating can be difficult to find. We swooped in to a high standing table as a group was leaving. Started out on our savory treats. The savory tart (I can't remember the name) had tomatoes zucchini corn onion, I might be missing something, but it was good. The pastry was crisp, flaky, and light. The flavor was subtle, but nice. The turnover was a great surprise. The flavor packed a punch, so much depth. It was vegetarian and tasted like ratatouille. Saved the scone for last and it was honestly the best scone I've had so far. The texture was wonderfully melt in your mouth and the blueberries were bursting with flavor. The best thing was that the scone wasn't overly sweet and the natural sweetness of the blueberries shone through. My daughter found Proof Bakery after searching thru 90+ bakeries in 4 southern california counties, looking for my ultimate favorite dessert ~ Chocolate Raspberry Torte! I hadn't had this dessert in 20+ years because it has a particular taste and has to be done to perfection. Proof Bakery did it! i didn't know where i was going, and once i got there i still didn't know where i was. i told them i was there for a pick-up in my name, and after a few minutes they came back with a small cake. i asked what the flavor was. when they told me, tears began to stream down my face, and in turn the two ladies that were helping me were elated too. i began to tell them my story (didn't get their names), that the last time i had a chocolate-raspberry torte was at a bakery in berkeley, ca quite a while ago. one lady knew exactly where i was talking about ~ she had lived in berkeley too. i got home, ate dinner, and couldn't wait to dig into the torte. i poured a glass of champagne, strategically sliced the torte and commenced to eating it. it was heaven in each bite. Croissants were on point. Perfect croissants. Also split a piece of the espresseo chocolate cake. It was really good. I've been wanting to give it a try since seeing it and the process of making and serving it on youtube's "worth it." At 6.50 a slice, it isn't cheap and now that I've tried it, I probably won't go out of my way to get it again, but that might be b/c I'm not a huge cake person. I like cake, but I don't go out of my way for cake like I might do for pizza, or bbq, or tacos, or things of that nature. Service was nice and friendly. I went here because of the pistachio and almond pastries pics, sadly they claim "out of season". I can get pistachio and almonds at Costco right now. I absolutely hate standing in line just to purchase 1 particular item to eat but my bratty ass is willing to do so for Proof's almond/butter croissant. I also hate how small their space is and how far I have to drive to get here on a Saturday morning when I'm most likely hungover. But I walk out of here with my arteries clogged and I'm perfectly happy. The feeling of satisfaction after eating those delicious, buttery, and flaky layers is indescribable. They have an amazing assortment of freshly baked pastries, both savory and sweet. The savory ones are just as good as the sweet ones. I'm also a fan of their chocolate chip cookies and heirloom tomato tart. Come here as early as possible to avoid long lines and to see those wonderful trays of baked goods being brought out from the kitchen. *drools* read more

I had their mini prosciutto sandwich which was yummy. Anything with prosciutto I'm usually a fan. they have small little bites which i'll come back next time for. Their chocolate chip cookie is good. Kinda a tad too crunchy than bendy for me but it was one of the better ones I've had. read more

This review is solely based on the coffee service this morning. The woman manning the coffee bar was rude and unapologetic about my order. I like the pastries and am usually a big fan, but this experience has left a sour taste in my mouth about coming here - especially because it's pretty expensive. 5 stars for the best chocolate cookie I've had in my life. That's a pretty huge statement and I stand behind it. If you're not going to read any further, please be advised that Proof Bakery is home to the world's best chocolate cookie (unverified). Proof is located in a charming area in Atwater Village and telling from the massive line inside the relatively small storefront, its reputation precedes itself -- for good reason. Walking down past the pastry displays and truly before I knew it, I amassed an order that included a Salami Sandwich, Ham Sandwich, a Croissant, a Mini Quiche, a Savory Brioche Bun, and a Chocolate Chip Cookie. When faced with the total cost (Proof will cost you a pretty penny), I tried justifying my order by planning to take the quiche, brioche bun, and croissant to-go... ...No such thing happened. AGAIN, before I knew it, I had polished off every single item. And I would do it again. And again, and again, and again, because the food at Proof is ridiculously good. Starting with the sandwiches: The Salami sandwich comes with manchego cheese, arugula, and a truly delectable chive butter while the Ham sandwich came with butter and a pickle. How simple and how freaking delicious. First of all, the bread used is magical -- it's brushed with coarse salt and everything from the flavor to texture is memorable. Ingredients are fresh and both sandwiches re elevated by the most basic elements of bread and butter. Doesn't get much better! Only after I had finished in my buttery, ultra-flaky croissant did I decide that it was a good idea to "sample" the quiche and brioche bun. If you lack self control, I advise against this kind of decision-making because you will eat everything -- I mean, all of it. The quiche, with its caramelized onions, asparagus, and beautifully flaky crust, is divine. All of it is buttery, creamy, and sinfully indulgent. The brioche bun is baked with goat cheese and fresh baby tomatoes and is a sweet and savory dream. I am no coffee connoisseur, but I know my carbs -- and the bread at Proof is next level amazing, you guys. Each rendition I had, from sweet flaky puff pastry to soft brioche to the perfect sandwich bread was executed with a masterful hand. Went there for the expresso chocolate cake & they sold out within an hour of opening. Found this spot due to Buzzfeed youtube video. So sad they didn't have it but the cappuccino & lemon blood orange promagrant tart was delicious. Customer service was great too. We'll be back. read more

Admitting fully that day one of this whirlwind trip to Los Angeles was absurd - a mere 5 hours of sleep in 48 hours and 5 dining destinations intertwined the following day would actually prove to be even more prolific with seven spots visited between 8am and midnight, the first Na Young's highly acclaimed "Proof" just south of Glendale off the I-5. Having retired quite early the prior night after dinner at Alma and already with a nine mile jog at Veterans Memorial Park in Commerce behind me I arrived at Proof quite hungry and with parking ample and the small bakery just opened I made my way through the doors to find the shelves just being stocked, the smells of butter and sugar wafting in the air and the staff all smiling brightly. Having heard good things about a number of Proof's creations but with my heart set on one of my very favorite pastries - the Paris Brest - I was disheartened temporarily to see none in the case and inquiring further my fears were confirmed when I was told none of the hazelnut and choux pastry was yet available that morning and I'd be forced to make the best of a bad situation; a first-world problem without a doubt and one that I remedied with a selection of four alternatives, a $15 tab setting the bar rather high and thanking the staff as I returned to Glendale Avenue my tasting started off on a good note with a still-warm scone juxtaposing pockets of butter with crunchy pearls of sugar and tart currants all beneath a crunchy sucrose gloss. Feeling the warmth of what was left in the bag but wanting to save the other morning pastries for last my next taste of Proof came in the form of an item obviously better suited as a dessert but stereotyped meal times be damned the Salted Caramel Tart was absolutely outstanding - a nearly liquid fresh caramel beneath a creamy dark chocolate ganache all resting atop a buttery shortbread crust and topped with flaked Maldon sea salt; bite for bite one of the most decadent desserts I've had in some time and as perfect at 8am as it would have been mid-day. Moving next to another option still warm from the oven, the oft raved Morning Bun proved to be another outstanding bite as the crispy cinnamon-sugar speckled exterior gave way to elastic buttery layers rife with light aromatics and refined sweetness; part laminated brioche cinnamon roll and part Kouign Amann this was excellent but still not on par with what followed; an Almond Croissant that rivals the very best in both stateside and in Paris, the shattering layers on the exterior giving way to a loosely wound core brimming with butter and light on frangipane; a truly beautiful creation that only reaffirmed that fact that I need to go back in order to experience the Brest, the bread pudding, and the canele - even if I have to call ahead from Phoenix to figure out what day and time they'll be available during my next visit. ...for now I'm calling it four stars and reserving the fifth for when they deliver on the rest of the menu, but even at an average of nearly $4/item this is a bakery not to be missed. read more

Unimpressed with the customer service. Female blonde employee was rude. For a location that was not busy she placed other customers before myself when they were still browsing products and I clearly just wanted to order a drink. The female brunette was a delight to interact with. Hot chocolate wasn't even hot in temperature and was lacking flavor. read more
