Dena O. introduced me to this place after one of our hikes (thanks Dena!). There is a small parking lot in the back where you can park for free (I think it's for two hours). There was a line when we got there, but it is worth waiting in for the delicious food! They had a bunch of breakfast pastries that looked appetising, but their brioche toast was calling my name. Served with Sqirl jam, the toast is light and fluffy and oh-so-delicious. The jam flavour varies (not sure how often) and this time it was blueberry tarragon. Yum! I also got their Iced Latte and my total for the two items came to exactly $7.00. There is a counter near the door with sugar, lids, straws, etc, but you need to ask the lady making the drinks if you want any artificial sweeteners. They bring out their lunch items promptly at noon and their sandwiches looked good, but I was just so happy with my brioche. You know how the saying goes "the proof is in the pudding"? Well in this case - the proof is at proof bakery. The presence of Cognoscenti Coffee is one reason alone. Proof and Cognoscenti work as one entity but this coffee brand comes with acclaim. Then Proof has even been featured on food channel shows so its got cachet as well. If you don't believe me, try finding a seat in there on any given day - or particularly a weekend - you probably won't. You can't go wrong with whatever you choose to come for, whether it be coffee or baked goods. The tea selection is a little slim, but I found a good mint tea that came brewed in this cool little metal contraption that separates the leaves from the water in a mug. The point is you'll find that caffeine fix and it wouldn't hurt to get one of their delectable pastries while you're at it. I'd just like to add that I could have gone for a full five stars but I did not try anything more than just a few bites of a cheesecake, yes unfortunate for me. Proof Bakery's name strikes me as ironic. Its presence in Atwater Village is that of a shadow. The bakery's dark gray frontage bears no noticeable signage, adding to its anonymity. Compared to the bright and near-garish colors of the neighbors on either side, Proof gives off an image of being practically invisible. The drabness of the exterior continues inside. The dark gray dominates blank walls and a smooth ceiling. The bakery's box-like black hole might feel imposing or even ill-conceived by some, but I think it's meant to serve as an inky black background for the stellar enticements that await the bakery's visitors. Like a well-composed black-and-white photograph which uses darkness to lead your eye to its poetic subject, the space quickly leads the attentions of those who enter it to white marble cafe-style tabletops and a display case illuminated by humble arrangements of beautiful pastries. If my reading is correct, this all means Proof is quite aware, but not overly self-conscious, that its proof is in its pastries. That works for me. Even upon first glance at the goods on display, it is apparent that Proof's pastries have been made with love and attention. The ample piles of cookies show off the same spirit of detail and craft as the sparse yet heroic handful of holiday yule log cakes, the latter boldly adorned with frosting-rendered mushrooms. Before I ever visited Atwater Village's black hole bakery, I had the chance to try many of Proof's cookies, boxed for takeaway. All, especially the ginger variations, were excellent, with a balance of sweetness and texture that make them good companions for hot beverages and relaxed conversation. On my recent visit, I sampled mostly savories. The chive gruyere biscuit and the gougere were both very good, and would be excellent if warm. The quiche was fine. I found the smallness of the individual pie made the crust the unavoidably dominant flavor and texture. I would have appreciated a chance to taste more of the quiche's egg, tomato, and chard. From what I could gather, the soul of this quiche was more wet than fluffy, as I generally prefer. I am not a coffee drinker and can't offer any comments on the Four Barrel coffee, served to order at the counter by beverage partner Cognoscenti Coffee. My companion found her soy latte elegantly prepared and enjoyable to drink, even though it was not reminiscent of the way she's had it at Four Barrel in San Francisco. My green tea was sourced from Intelligentsia, kindly brought to me in its own glass teapot, served in a tiny white teacup, and proved excellent. The overall sampling was delicious enough to inspire a second trip to the counter. Time to try a dessert. Proof's coffee cake with hazelnut strudel is a gorgeous two-layer monster. Because the cake has so much height, a single slice feels very tall, more like a tottering pillar than a typical cake wedge. Towering and precariously balanced, moist enough without being too indulgent, the cake is excellent in the morning when the senses are still orienting. Eating the cake, sliced thin and high, becomes an exercise in care and precise fork handling. A good way, no doubt, to slow down and appreciate the crunchy adornments atop both of the cake's layers, which contrast nicely with the more subtle lightness of the cake body's texture and sweetness. read more

One of my favorite bakeries is Los Angeles. An indication of the quality of baked goods to me is the freshness and crispness of their croissant. I thought that only Renaud in Santa Barbara made croissants as great as France, is now long gone. The more I have done my research, I no longer need to drive to Santa Barbara, as LA is a playground and wonderland for foodies to enjoy a great croissant. My third trip to Proof and not sure I haven't reviewed it until now. This is a cute bakery which also contains one of the best coffee you'll have in Los Angeles courtesy of the permanent third wave coffee pop-up, Cognoscenti Coffee. I was told that this is one of the best coffee experiences in Los Angeles... with a caveat that it's all about the barrista at the time of visit. The draw for me usually is their chocolate cookies (voted "best in LA" in the recent LA Weekly) and their coffee. I've tasted their sandwiches (as great a sandwich in Paris) and enjoy any pastry they have available, with a pour over coffee. They also sell bags of coffee from the best roasters in the West Coast such as Four Barrel, Heart, Coaval, and others is different every time I visit. The only negative is the seating as since this place is so small, you'll be lucky to find a seat when you arrive. read more

Proof Bakery is certainly one popular spot in Atwater Village and you must get there before 10 am if you want to get your hands on their croissants, their canele or quiches as they sell out fast. Their baked goods are solid. Not out of this world but solid. If you don't live in the Atwater / Los Feliz area I don't really see the need for you to go out of your way as you run the risk of going a great distance just to find out that they have sold out which has happened to me. I was there from 8-9 this morning and the line never died down, if anything it got longer. I got the ham and cheese croissant, my go to. The exterior was a little dry but the interior was moist and I like the quality of the ham and the amount of cheese. I've had better but certainly have had a hell of a lot worse. Their latte was well prepared and the coffee had a good bite to it and it was served at the proper temp and with artful design. All in all a very pleasant coffee and a breakfast I enjoyed and most people would. And at ten bucks it's what you expect to dole out. The space is a little small and can get a little crowded but hey it's a popular place and since I don't live in Atwater, I have no room to complain :) I love bakeries and I hold them to the very highest of high standards. This one I definitely would visit again but by no means am I running back. read more

Came here on the suggestion from my son. He said the chocolate croissant was the Bomb ! There was a short line outside coming into the bakery due to Covid guidelines. Once inside, there was goodies of pastries, cakes and cookies to choose from. I picked up three chocolate croissants, a blueberry scone and an almond croissant for me. I must say it was so flakey and yummy and one of the best almond croissant I ever had. Hubby enjoyed his blueberry scone as well. We downed it with java which was a good brew. I always read the reviews on how this place was great and pass by it all the time. So I decided to come here. Although it was around closing time and well there was not that much selection on bakery items. Am not sure if that was the reason or not or they do rotation. So as I came in the place was nice and a little small which is expected but also had a seating area. They had sandwiches I kinda wanted to try but they were on a small side plus I wasn't so interested in it at that time. I got the chocolate caramel tart and ice coffee which I have no idea (thirsty I guess). The chocolate caramel was good but it was sweet. I only ate about half and saved the rest the next day. So I gave this 3 stars because well selection. I wanted to try the pomegranate tart and the croissants. I've seen the pictures and read the reviews about these and I was drooling all over lol. Am not sure if the croissants were only available for breakfast but that was a disappointment for me. Read about, heard about it, see Instagrammers lose their damn minds over it...ok, for a croissant? What is this hype? I dropped my son off in the neighborhood so I thought I'd walk around the corner to see if I can grab their infamous croissants. I LOVED LOVED LOVED the croissants of Paris and practically survived on croissants when I roamed Paris, so this is the standard I always rate them by. This place is as close to the croissants I got in Paris, they are legit. I'm glad the wait was no longer than 5 minutes when I got here, with little seating. Clearly, this place is for you to grab and go and if you do linger, be prepared to battle all the moms with their gigantic strollers (hey, I'm a mother of two kids under 3, you don't need a Humvee stroller to move them, thanks!) so good luck trying to grab a spot here to enjoy. Basic croissant: perfectly buttery and crispy. For some, it may feel like eating air. Damn good air, I say! Pain de chocolat: I may have botched the spelling, but Proof doesn't botch the taste of this one. I enjoyed this croissant the most, but was it because of the taste of butter AND chocolate combined? Cheesive and chives: With sweet croissants come savory croissants and this one meets the savory in each and every bit. I do say though, this one comes off a bit dense. My daughter found Proof Bakery after searching thru 90+ bakeries in 4 southern california counties, looking for my ultimate favorite dessert ~ Chocolate Raspberry Torte! I hadn't had this dessert in 20+ years because it has a particular taste and has to be done to perfection. Proof Bakery did it! i didn't know where i was going, and once i got there i still didn't know where i was. i told them i was there for a pick-up in my name, and after a few minutes they came back with a small cake. i asked what the flavor was. when they told me, tears began to stream down my face, and in turn the two ladies that were helping me were elated too. i began to tell them my story (didn't get their names), that the last time i had a chocolate-raspberry torte was at a bakery in berkeley, ca quite a while ago. one lady knew exactly where i was talking about ~ she had lived in berkeley too. i got home, ate dinner, and couldn't wait to dig into the torte. i poured a glass of champagne, strategically sliced the torte and commenced to eating it. it was heaven in each bite. Proof Bakery made the torte to perfection. It brought back memories and made my heart sing ~ i know it was made with love. I don't know what else they serve, but if this torte is an indicator of the quality and expertise, i'll be back to see ~ and suggest you do the same. I'm still dreaming of the pastries I had there just a few weeks ago. I've been meaning to get back. Fingers crossed today is my lucky day. Hmm where to start? Proof is a cute little bakery with a bit of seating inside and outside. Husband and I decided to order a blueberry scone, a savory turnover and a vegetable tart. We were in luck because they were putting out fresh baked items of each so the woman behind the counter gave us warm ones from the oven. We paid and decided to eat outside. It's a pretty busy place so seating can be difficult to find. We swooped in to a high standing table as a group was leaving. Started out on our savory treats. The savory tart (I can't remember the name) had tomatoes zucchini corn onion, I might be missing something, but it was good. The pastry was crisp, flaky, and light. The flavor was subtle, but nice. The turnover was a great surprise. The flavor packed a punch, so much depth. It was vegetarian and tasted like ratatouille. Saved the scone for last and it was honestly the best scone I've had so far. The texture was wonderfully melt in your mouth and the blueberries were bursting with flavor. The best thing was that the scone wasn't overly sweet and the natural sweetness of the blueberries shone through. I've been wanting to give it a try since seeing it and the process of making and serving it on youtube's "worth it." At 6.50 a slice, it isn't cheap and now that I've tried it, I probably won't go out of my way to get it again, but that might be b/c I'm not a huge cake person. I like cake, but I don't go out of my way for cake like I might do for pizza, or bbq, or tacos, or things of that nature. Service was nice and friendly. But my BF is a coffee snob - we've tried everywhere (Broome Street, Intelligentsia, Fix, The Lyric, Bru) and he thinks this place is the best. And if we've tried everywhere you know that means I always have to go to the places too! Proof has so many things that I love - even though I don't drink coffee - that I always bug him to go there too. For starters they're the only place I know of that has White Coconut tea. I always get it on ice and they give me the leftovers after they brew it. Then I always get cake - they have a lemon one with pomegranate seeds on top that is to die for! Recently we finally went for sandwiches which really pushed my love for Proof over the edge. They put out platters of freshly made sandwiches at noon. He picked a prosciutto/fig and I got a ham/gruyere. Both delicious! Very simple, great ingredients and the best finishing touch was the light salt flakes on the bread. Trust me - you have to try it! Came here since I've been hearing a lot about this place and their amazing pastries, drinks and even sandwiches. I came twice in a day, once for breakfast and then for lunch. In the morning I decided to get: Chai Latte (1 star): Incredibly disappointed they can't actually make their own chai tea, I heard the girl say check if we still have mix. And even if she didn't I know exactly where they got it, because I've had this fake "chai" before. Purple bag from restaurant depot, and it's disgusting. Some powder you mix in, what's so great about that?? You'd think since they roast their own coffee and everything they could make something which didn't include a pre-mixed powder. Too bad they even have this, it certainly doesn't live up to the standards of the rest of their stuff. Starbucks and coffee bean rank even much higher than this!!! I'll never get this again... Ham, Broccoli Quiche (4.5 stars): Really good quiche! Crust was awesome, everything was fluffy and light and super tasty and home-made. Lunch: Ham and Radish Sandwich (4.5 stars): Like everyone says the bread is amazing!!!! Even little salt crystals on top, it's just so good! I was hoping they'd have the salami one or others but this one was still pretty good, literally just like 3 ingredients though. It looks super skinny and small and you should buy 2 but 1 is actually not so bad and can keep you satisfied. Fruit Tart (4 stars): mmmm this was delish, kiwi and some other fruit on top which was sour and super good, you could tell it was home-made and just super tasty! I need to try more of their desserts. So besides the drink this place is pretty good, prices can be up there, but I guess it's because they make everything from scratch and it's fresh everyday! I stopped by here on the way to work for some croissant and a chocolate chip cookie. All pretty solid. The croissants (chocolate, plain, and almond) were buttery, crisp and flakey. The chocolate chip cookie is the best I've found on the eastside. If it's normally busy, I didn't encounter it because I stopped by at 9 in the morning. Very good food, however VERY NOISY and VERY BUSY. Was here at 11:00 on a Monday. Great croissants, Flat White Coffee needs to be improved on. Had a cheese and ham croissant, and a chocolate croissant. Croissant was very flaky but filling very meager. The noise is so great that it is difficult to hear when your name is called to pick up your drink/food. NO TABLE SERVICE. Baristas need to practice more on their Flat Whites. Haven't quite got the thickness of the smooth top of the coffee yet. No Ahhhh, when you take your first sip. I don't think the milk is heated to 150-155 degrees. read more

Wow this place completely exceeded my expectations. First impressions: This place has that typical hipster cliche vibe to it that I didn't care for. It's not a typical place I would go to but since I live near by I decided why not? They didn't have much selection and nothing stood out to me as looking extremely tasty or anything. The employees were extremely friendly and welcoming. The prices are up there so I for sure won't be coming on a daily basis or anything. The food: Since nothing stood out to me I decided to just pick some random stuff that I came across. I got the chive biscuit, mini quiche, chocolate scone, and apple turnover. As soon as I left I took a bite of the chive biscuit and turned right around and bought 4 more. I can't even describe how delicious and moist this biscuit was. It's so amazing! I literally had to forcefully stop myself from finishing them in one sitting. They're so good. I would definitely come back for those biscuits. The quiche was okay. I may have stuffed myself too much with biscuits to truly enjoy the taste of the other stuff I bought. Oh well! They close early! So make sure you check the hours. We came around 2PM and they pretty much still had stock of everything. We ordered the chocolate espresso cake and the Gateau de Savoie. Chocolate Espresso Cake: DELICIOUS. It's actually not overly sweet, but there's more emphasis on the chocolate than the espresso. I was hoping for a more even balance, but the layers are so perfect and the taste so rich that I was satisfied. I think once slice was about 1/6 of the cake so it's pretty big. Gateau de Savoie: Reminds me of strawberry shortcake! It's a light spongy cake with whipped creme fraiche inside, filled with strawberries. This one was very refreshing to have. The outer layer of the cake is nice and crispy too so you get a variety of textures. Pretty big slice too. Overall, I loved the cakes we had here. They're pricey though, so it's not something I would keep coming back to. Even the vanilla latte that I had came out to over $5. Well, it was something to try and to enjoy. read more

I fell in love with the vegan sandwich. I am nowhere near vegan but I appreciated the flavors of the sandwich so much! Who would have thought shoving half a roasted carrot inside a baguette would be so good?! I had also tried the salami sandwich, which was nice as well, but the flavor of salami was nothing new to me. TRY THE VEGAN! Besides that, I also took home some brioche buns which my family and I enjoyed for breakfast. The items here are pricey but I feel like it's quality stuff. I like Proof Bakery. These are the crispiest croissants ever. My fave is the chocolate croissant (3.75). I've tried the almond and didn't like it as much. Just go for the chocolate or plain. Ham sandwich 8 - tiny and pricy! It's worth trying and is extremely delicious but 8!? The bread has big chunks of sea salt on top. It's more pretzel than baguette. Really chewy and salted. It's so good!! But so expensive! Rugelach 1.5 - this is a tiny crispy croissant with nuts and sugar inside. Kinda like a french baklava. Two bites and it's gone. Kinda pricy but interesting. Ginger molasses cookies 2 - kinda dry. Not as chewy as I wanted it to be. Crisp on the edges. Shortening cookie so it scares me a little bit. Chocolate chip 2 - prob the best chocolate chip cookie I've ever had. Crisp edges, chewy center. Chocolate throughout the cookie. Flat and wide. Not too sweet but sprinkled with sea salt anyway to make it even tastier. Dear god my mouth is watering as I write this. I've got to get one tomorrow. Do not leave without buying a chocolate chip cookie. It's the iconic chocolate chip cookie done well. Gougeres 2 - gooood. These are cream puffs mixed with cheese and black pepper. So gooood. I've had dozens of different offerings from Proof and each one is exceptional. A bakery unlike any I've ever experienced.

Haven't been to this bakery in a while, but I needed a break from business school work. Headed over to Proof and so glad I did. Was a little discouraged by the line, but it was worth the wait. Plenty of free parking behind the building and they their covid set-up is great. They allow three people in at a time. We ordered a latte, a black iced tea and the following pastries: cardamom morning bun, ham and cheese croissant, financier, nectarine galleys and passionfruit orange curd tart. The drinks were great- honestly one of the best iced teas I've had. The pastries were delicious- both the croissant and cardamom bun were super flaky and buttery. I originally came here for the espresso chocolate cake that was featured on Buzzfeed's "Worth It". However, they didn't have the cake today so I got their other chocolate cake instead. This was the first time I've ever tasted sour coffee. I guess the reason is I've always only had starbucks coffee most of the time, so I've never tasted bad quality coffee. The coffee was so sour and bitter! My friend had to add so much cream and sugar to her's, and even then her coffee still tasted bitter and sour... So I'm taking 1 star off of the taste of the coffee and another star off for the price we had to pay for the gross tasting cold brews (the cold brew was $4 each). However, I will give 4 stars for the ham croissant sandwich and the chocolate cake. Chocolate Cake (4/5): The chocolate cake was solid and rich in flavor. There was some sort of raspberry jam or compote in between the layers of chocolate cake, which made the cake taste even better. The chocolate ganache was not too sweet and the texture was great as well. The reason i'm giving it 4/5 is because the cake was great, but not amazing. I wouldn't come back again though. Phenomenal hand-made cherry pastry! Not the cherry part ... but the pastry part! And great-tasting coffee! Got the mocha since it's the only coffee item in their menu they offer with flavor. And Friendly service with a smile. No wonder this place gets four Yelp stars, and is busy!... read more

This place has gotten pretentious or something because the woman working there had a chip on her shoulder. They apparently don't even have caneles anymore, which is the whole reason I went there. The woman behind the pastry counter was rude and made me feel rushed for needing a minute to figure out what I wanted after the only thing I went for wasn't there anymore (should be understandable). There wasn't anyone behind me in line. This is the last time I go out of my way to drive there. I gave an extra star because it turns out the pastry I got (plum financier) was actually pretty good. But I can do without the attitude, so Peace Proof. read more
