I walked in today, two days after opening to the public, excited to try this place. I was pretty familiar with the idea. Think of Moe's or Chipotle. You walk through a cafeteria style line picking out your toppings and various delectable treats. For my pizza, I chose the 11" standard pie. They offer standard marinara or spicy marinara sauce. I opted for the SPICY! Next, you choose your meats. I chose pepperoni, chicken, Canadian bacon and (more "American") bacon. I shuffled along to the veggies. Blech, but I digressed and chose mushrooms and was pretty stoked they offered fresh mozzarella as well. I always enjoy places where I can play chef. You can't blame a place for having poor food when you are the creator! (I'm looking at you, Genghis Grill.) Finally you pay. My total for my pizza and tea came to around $10.50. Not bad. Good price point and I was more than full at the end of my meal. It took around 10 minutes for my pizza to get to me at lunch time. Much faster than other places to make pizza fresh. I really enjoyed Pyros and wish them all the success in the world. According to the article I read, they plan to open 30 or more locations in the Southeast! That's great. Reaching high! Good pizza, just stupid design and awkward concept. I really don't understand the concept of building your own pizza. This is not to be taken literally. It is more like standing in front of the counter at a sub shop and telling them what to put on your sandwich. In no way whatsoever have you built a sandwich. The concept of designing a pizza also seems ridiculous. People have been ordering pizzas for probably a hundred years and ordering them with their choice of toppings. That is a much smarter approach because it eliminates the long line. A party of three waited in a super long line to order. I get it. People like it, it's popular, and there is a long line. When you get to the order counter, there is only one choice for dough. It resembles a flour tortilla. There is no talent involved since there is a machine to squash a ball of dough. There is no effort to make it circular. It is just kind of, well a shape. The good news is that you do not get a ball of dough from the freezer. Whether it is mixed in house or just trucked in mixed and proofed,I do not know. Then you have to tell them how to " design" your pizza. There is much confusion going on because while selecting your meat and yelling over the counter , someone on your right is yelling out sauce or cheese, and someone on your left is yelling out about peppers and olives. I found it very hard to order because it was just utter chaos. There are no options other than pizza or salad. Instead of breadsticks, there are these "bites" which are just an excuse for breadsticks. No wings, no sandwiches. We wanted beer and were then forced to pay first without the ability to purchase beer. We may have spent fifteen minutes in line and guess what? Now we're in another line for beer. You will have to leave your table each and every time to wait in line for each and every beer since there are no waitresses with the ability to do that for you. You also must pay each and every time. We had a total of four transactions for lunch. Most inconvenient. The selection for beer sucks. They are trying to support local, but there is bud and michalob which I am pretty sure are not local. There were only 4 or 5 drafts and only one that I've even heard of. $4.00 for draft beer? You've got to be kidding me. Those are ball game prices!! There was wine and I think coffee. Did not check into that. Although the three of us all ordered our pizzas in succession, they came out in some kind of crazy random order. After receiving the first one, we watched the pies go all over the dining room even to people who were behind us in line. It was several minutes to get the second, and then pies went all over the place before we received the third. The food itself came out hot and we all agreed was really good. I give five stars for the food, deduct one for the lack of choices, including beer, no choice in dough, lack of menu items, and I choose to deduct another star just for the crazy way in which the service operates. What would make this experience so much better would be to allow customers to take a seat, choose from a menu, among other foods, the pizza. There could even be a type of scorecard to fill out that they could submit to the waitress. That way people could "design" ( if that's the preferred word) their own individual pizza. Also the waitress would be responsible for providing drinks( including alcohol). This way people are not constantly walking around. They can sit the whole time and pay the waitress. This is not a foreign concept and seems to work quite well. Oh, of course, make the orders together, one at a time so they are not scattered all over the place. I checked this place out last night, and I am glad I did. As you walk in, the line seems confusing. Here is the thing... This place is setup like a Chipotle. Once you have that, it is very quick. Pick your entree, pick your toppings, fire it up. Sadly, I came too late. They had already run out of dough for the bites. I will try them next time. I made a meat-lover's style pizza. The toppings tasted fresh and good. I appreciated the addition of the basil after cooking. The GM was present and willing to discuss the restaurant. While I did not use it, the super-Coke machine was cool. This location supports Memphis and Tennessee breweries. They have great prices on these beers: $3.70 for a pint. I'm a simple pizza eater: Marinara sauce, Mozzarella cheese, pepperoni, mushroom topped off with basil. All the toppings that you want still for the set price around $8. Come in on Tuesdays and check in to receive a free 24oz drink. Love that they also have adapted the use of the Coca-Cola Freestyle. The location is very spacious and a hot spot for the lunch crowd. We stopped in for a late Lunch/Early Dinner on a Saturday around 4. We were almost the only ones there so we were in no rush to get to know the menu which was nice being such a new place and being our first time there. My Wife and I decided to order our own pizza and share and then whatever was left take home for leftovers. We made our way through the line picking out all the toppings we loved and it went smooth and service was great. There are all the staples you could ask for and more. I ordered the Spicy Marinara and it was very spicy. I enjoyed it but I will go for the regular Marinara next time. I'm not big on super spicy on my pizza, I'll leave that for my Mexican food habit. I liked the cheese choices they have also. The fresh Mozzarella is very good and I was glad to see it as an option. All of the toppings I tried were good quality and fresh. in fact they were chopping more peppers and roasting them while we were there. Good to see they weren't just poured out of a bag like some of the build your own places I've been to. The drink selection was nice as well. Several teas to choose from and they have the new Coke fountain where you can make any soft drink combination you can think of. It was also nice to see Wise Acre beer on tap and one of the Managers told me they were adding a few other local brews as soon as the other kegs are tapped out. I hold Pyros to a high standard because it is my favorite restaurant in Memphis. Unfortunately even if I lower my standards, I would still not be pleased with my recent visit to this location. It was blatantly awful. This is a mixture between the service and the food. Many things went wrong simultaneously and at different times so I will simply state the facts: - the pizza dough on my girlfriends pizza was RAW. The inside was undercooked and mushy. At first I thought it was the Alfredo Sauce that had soaked in but no, it tasted like raw dough. And you know what that means, most of the toppings were not heated enough or evenly. - When we paid, the manager, Brandon, checked us out. It was roughly 4pm on a Wednesday (4/11/18). The restaurant was not busy at all (maybe 5 patrons total). We asked for two water cups and we never received them. In fact, Brandon did not give us the vibrating order apparatus. He was also rude for some reason, he had an attitude with customers (not just myself). When we were leaving I heard an older gentleman tell his granddaughter "We are not eating dinner here because the manager is being extremely rude." - My pizza went in the oven and it had already come out before my girlfriend's pizza event went in (I took a picture of the pizza, see below). When the pizza came out, it sat on the counter for at least 8 minutes before anyone had noticed. (My girlfriends pizza was still not in the oven!). Then they brought me my pizza and that is when we asked for water cups. Also our sweet bites were left on the counter for 10 minutes. - When they brought out my girlfriend's pizza, our sweet bites were still on the counter. We asked them about it and they said they didn't know who they went to. The manager then said they were ours. - I had eaten most of my pizza by the time my girlfriends pizza arrived - cold and uncooked thoroughly. Her pizza did not have the sour cream on top so we told the cook and he took it back. It took 5 more minutes to take it back and put sour cream! - Because my pizza, my girlfriends pizza, and our sweet bites were left on the counter for so long, they were all cold by the time we started eating them. - My girlfriend mentioned that there was no toilet paper or soap in the women's bathroom. - The manager seemed frustrated the entire time and was walking back and forth. Once again, it was a slow afternoon and not quite dinner time yet. I wish my experience was better, I truly do. None of the patrons in the restaurant at that time were pleased with the service. The older gentleman that I mentioned did not receive his food by the time we walked out. I turned to him and I told him that he was not wrong for being mad at the restaurant and wanting to go somewhere else for dinner. He ordered his pizza right after us. That is unacceptable. Many pizzas were left on the counter for over 10 minutes. The people before us got tired of waiting in their booth, they went up and grabbed their pizza from the counter. There weren't many people in line so we ordered quickly. I ordered the Spud specialty pizza and it was on point. Going to lunch here today was not on purpose. After church this morning my mom and I were on out way to P.F.Changs. I had not been to that place in ages and i was looking forward to eating some yummy rice. However, after we parked my mom said look a new pizza place....so we changed our minds at the last minute and went to Pyro's. We walk in not knowing what to expect. The menu looked great and by the looks of the line almost outside the door, I could tell the food must be good. We waited in that line for 35 minutes. It was the longest 35 minutes EVER considering how hungry I was and we almost left because of how long the line was. In the end we were very glad we stuck it out. We finally got to order. I discovered it is one of those make it yourself places like Booyah's. The people were very nice and helpful to us newbies. I love the fact that we pizza's are 8.50 and you can add as many toppings are you wish. Other places it is an extra .75 or something like that to add additional toppings. I could load up my pizza and it all costs the same. Loved it. The pizza did not take long at all, unlike the wait in line to order the pizza! haha. Now, I am not a huge fan of the thin crust pizza. I like the original crust that is doughy BUT this pizza was amazingly good! It was cooked to perfection. The size is perfect for one person so if you go with someone else I would definitely get your own pizza. My mom and I were going to split one but very glad at the last minute decided to get our own. I'm not a fan of thin crust, but Pyro's has good pizza if you like thin crust. The best part is, no matter how many toppings you put on your pizza the price is the same. Every time I've been here, the service is good. There may be a line but you never have to wait too long, and once you order, you won't have to wait long for your food. However, today was different. There was no line and we ordered our food. The two people I was with got their food very fast as usual, but my pizza was nowhere to be found. We told the waitress, and she went to check on it. She came back empty handed and apparently they gave my pizza to someone else. She asked what I had on my pizza. I told her and she remade it. The people I was with had nearly finished their food and were ready for a box to go. I still had no pizza. The boyfriend and I stopped in here for lunch on Saturday, and it was kinda eh. At 1:30pm, the line wasn't long, but it moved very slowly -- while the employees were friendly, I would've appreciated less chit chat and more speed. I stuck with something simple, just the regular marinara, mozzarella, pepperoni, and sun-dried tomatoes. There's a whole lot of stuff to choose from, much of which I would never imagine putting on a pizza! The boyfriend, on the other hand, ordered the Southwest salad, and watching it get put together was just painful. They kept asking what he wanted on it, despite the fact that it's a "fixed" salad on the menu, and after making it alongside my pizza, instead of handing it over (since it was done...right?), it was kept behind the counter. We paid, got drinks, and my pizza was brought out..but not the boyfriend's salad. When I asked, the guy said that someone was just finishing dressing it. Uh, what's it been doing while my pizza was baking? Just hanging out? My pizza was ok; I've had better, and I've had worse. The crust was thin (pressed and I think slightly pre-baked at the front of the line) and cooked through, but had very little color on it. I think their much-vaunted 4 minute bake time is just long enough to melt the cheese -- by the time I reached the last piece, it was cold, so it couldn't have been that hot to begin with. The boyfriend's salad was a disappointment -- basically a big bowl of lettuce with a few things tossed on top, and very little meat for what's supposedly an entree salad. He liked the dressing, but he said he was still hungry after finishing it. And the bread that was served with it was cold, which I just don't get -- don't they have a nice big oven back there? Overall, it's not that anything was bad, it just wasn't that great either. For twenty bucks, we can get a better lunch elsewhere. And if I were running this place, I'd work the kinks out of this location before starting another one in Midtown! read more

I enjoy Pyro's because you can't beat their price point and they have a fun atmosphere. They have good craft beer options that are roughly $3 with tax. You can get a large pizza made from scratch for under $10 with whatever toppings and however much of them you want. You order at the counter, so you don't even need tip money. Also have good coffee & frappucino options. The atmosphere is upscale, but casual. I especially like their large, unusual patio. Instead of just tables outside, they have huge glass windows they open up. I did go when they JUST opened, so there was a wait for my food and a slow moving prep line. However, that will probably change with more training and experience, so no complaints. read more

Great concept if you want to have a little more of an interactive experience while having your pizza created. We got here at 7:30 on a Friday night, and the place was packed! The line was long, but not too bad. I like that you can get your drinks at the bar and stand in line if you have to. First stop is to select the size of your pizza. The snack size comes with 4 slices I believe which should be plenty for one person. But if you're really hungry you could put away an 11 inch pretty easily, since the crust is thin. Then you go down the line to select the sauce--keep in mind you can mix sauces if you like. Then comes the cheese and meat and veggies. The "pit crew" members are friendly and will give you suggestions if you're feeling lost. The emphasis is definitely on the toppings, and since it's a "make it your way" kind of place, you only have yourself to blame if it tastes bad, right? When you're done selecting all the ingredients, you watch your pizza go in the oven, and you check out and get your drinks at the soda machine or bar and find a table. I tried the Seagram Lime Ginger ale (which was surprisingly good). My friends had some of the local beer on draft. The pizza will be delivered to your table hot from the oven. It went like this: Somehow, my original pizza "got messed up" (not sure if it was dropped or burnt or what...no explanation was given). I just got hired at the location in Cordova, so I figured I should try it at the Ridgeway location first! Lol. After going through the orientation, you notice all the little things. Pyros Pizza is a 901 original. Currently there are three locations in Memphis and they are expanding to two more before the end of next year. There are two owners of Pyros and I got to go through orientation with one of them, Chad Foreman. And let me tell you, these guys have thought through literally every single detail. Even the restrooms are unique with foot pedals on the bottom of the doors, so you don't have to use the handle after washing your hands! And the sign above it is hilarious but I won't spoil it :) Pyros has a setup kinda like subway. You first decide if you want an 11' personal pizza or a snack size, and you get to choose if you want a side salad or a full salad. There is a menu where you can choose your pizza already designed, but what fun is that?? Unlimited toppings for a flat rate so of course I stacked up haha. So you choose your sauce, protein, and vegetables. Then you get to watch the fire attendant put your pizza into the oven- It's cooked and prepared right in front of you! So you pay and the cashier will give you cups for the hydration station. After getting your drinks, you can sit anywhere and someone will bring you your very own personalized pizza. Since it is thin crust, your pizza is cooked quickly. When I went, I forgot my phone in the car so I went out to get it and by the time I got back to my table, the pizza was already there! There is also a bar and a coffee bar but I have yet to try it. After my first training day a couple days ago, I saw just how much work the crew has to do to make the restaurant run so smoothly! Pyro's is trying to be a lot of different things at once and, for the most part, it succeeds. But perhaps they should stick to working on the pizza first and foremost. The first thing I noticed was the wait--it gets really, really crowded around dinnertime and the line got even longer after I joined it to the point where it was almost out the door. This normally is a good sign of how popular a place is, but the line was moving pretty slowly and when I got up to start ordering I realized why: the staff is very, very green and half the people there were still being trained "on the job" it seemed. They were very pleasant for the most part and made friendly chit-chat, but I would've preferred a bit more efficiency since on this assembly line any small delay by one person compounded the problem. Once the ordering process (which took about 20-25 minutes, all told) was complete, it was time to find a seat in some of the rather posh-looking seating areas and to grab my drink at the beer. The beers were very reasonably priced at $3.75 each, although actually ordering them was somewhat strange since the bar (which is also a coffee/latte bar??) is separate from the main payment area. I was very amused when the bartender warned me how "bitter" the Wiseacre IPA was--I've been hopped out by so many West Coast IPAs that this one practically tasted sweet. It was pretty good too, first time I had it, and I hope Pyro's continues to expand their selection of locals. Pizza came out in good time and it was pretty delicious. The order-your-own pizza trend is catching on everywhere I've been (shout out to Your Pie in Athens, GA for doing it well and cheaply 5 years ago) and Pyro's is trying to be a bit more higher-end than some of the other markets. It mostly succeeds and my pesto pizza was delicious, with generous portions of sun dried tomatoes. I might've preferred a bit smaller pizza though for a bit smaller price since they're too hefty to really be for one person but not enough to split with two. I enjoyed my food and drink, despite the wait. It's still a weird kind of spot, but I like that they're trying to be different and offer a lot of different options. Maybe I'll come back to try their espresso bar and beer sometime and avoid the pizza line. read more

I LOVE PYROS. I am so glad they came to memphis! This location is the first one in Memphis, and is slightly larger in size than the one on Union. (to date 11/2014, the germantown one isnt open yet). I like the spaciousness of the area, and how they have tons of TVs around for us to watch the game. My review will be similar to my other review of Union's, so if you already know about pyros then disregard below. Pyro's is basically like the subway of pizzas. but thin crust yummylicious pizza. You put however many toppings you want on the pizza, and they will still charge the same amount. Same with the salads! They also have some premade types that you can order (like pesto pizza, southwestern bbq pizza, etc) if you like those. The great thing about this place is the friendliness of literally every single staff member I've encountered, the speediness of the pizza delivery, and the DELICIOUSNESS of the pizza!!! also, super awesome thin crust. I love that its CUSTOMIZABLE to your liking, so you dont have to like pick toppings off that you dont like when you order to share like other pizza establishments. Their SWEET BITES are GOOD, order them. Not too much icing, yet just enough to get you through the dish. the great part is you can tell them when you bring it out, so you dont have to sit there with it getting cold while you finish off your pizza. They have alcohol here too, so for those that like to kick back and relax this is a great place as well. highly recommended!!! Any pyro's location is great, they all taste equally delicious. I love this place!!! great service great people great pizza I've told all of my friends and all of my other social media friends about Pyros i love the fact that by the time you sit down after you create your pizza and grab a drink your food is being brought to your table.( That's fast!) Neat concept, friendly staff, craft beer, and a good casual atmosphere. For this, I give Pyro's 3 stars. The pizza just isn't as good compared to the neighborhood competition. The crust is machine pressed, not tossed. The sauce is skimpy. I like the assortment of toppings, but I feel the toppings could have been of better quality and preparation at the same price. For this, I give Pyro's 3 stars. I will be back, but next time it will be to try the salads. read more
