The crispy maitake mushrooms came with a fish sauce which gave a nice brightening note to eat with fried food. Lemon was also fried with them to help cut any grease, so overall this dish did not feel oily or heavy. The steamed local black cod's ginger scallion oil surprisingly paired very well with the black truffle pesto. It had an earthy flavor profile that was brightened by the ginger. The cod was perfectly cooked and the mushrooms soaked up all of that saucy goodness. I loved this dish! The grilled house-made lamb sausage was Thai inspired and you could definitely taste the spices in the sausage.
