All of the staff are professional and genuinely friendly people. Of the owner/managers that I have met they are also superb. One handles customer service (Minh) and he is so hard working. He's there every time I go. He gets credit for the staff being so amazing I think the other one is in charge of the kitchen where the magic happens . The restaurant is also super clean and well designed. If the restaurant was a little closer to me, I would probably go almost every day . We tried below: - Nem Nuong Cuon, Pork Sausage Spring Rolls (Very expensive and almost did not get it, but glad we did, was my favorite dish that night. It was made well and the sauce was great with it! I ordered the crab and pork meatball Pho soup. I didn't like it, honestly. I should have stuck with what I know I like - the chicken Pho soup. But I don't like chicken anymore after having lived near a chicken farm. So it wasn't my scene. But the family I am staying with loves this place and loved the food. They are very happy. I tried this restaurant this week for lunch and we LOVED it! It was incredibly busy, but we were seated as quickly as possible. We were also served very promptly. The inside is decorated nicely as well. They have a good sized menu, but we were here for the pho! I got the "make your own" pho with options A, B, and C. When it came out, it was perfectly hot and delicious. I really enjoyed their broth and it came with a good amount of meat too. I appreciated how it was cut into manageable pieces. I'm not a pho person at all but Saigon Bistro is the place to go! I had a bit of a sniffle and wanted to get some spicy broth so I came over to Saigon and they were booked and busy! The overall place was gorgeous and the owners were very hospitable. My mom got the chicken pho and I got the spicy lemon grass pho with a beef rib in it and it was really good and light. Not overwhelming in flavor or acidic due to spice it was all perfectly balanced. We also ordered crispy egg rolls and they were really good and packed with minced pork and veggies. (IYKYK) fish was a bit salty for me I didn't even use the sauce on the side. The beef a bit tough for me. Since these are cubes of beef rather than thin slices of beef I prefer mine medium. Although I'm pretty sure that these are the same beef that was in the Bo Luc Lac. Bread was the soft pillowy kind and nice toasted good crumb but bland. Let's call it average bread. +Bo Luc Lac -Shaking Beef -after having Bo Ne and then having these cubes of beef this one was a tad bit sweeter. I mean the veggies on this dish were massively needed with my Bo ne. Cause man was that salty. This shaky beef was okay again beef was well done cooked and not medium so it was a bit tough. Overall: So it was average to my parents would they go back? I think if we are in chantilly and want to get Vietnamese food and I don't mind splurging on this is the place. However being so close to Eden Center and other varied places the price point is just too high and yes there is quality but if the execution of the dish is teetering in flavor I cannot justify paying the price for quality food ingredients with decent execution. Just wish there were bigger crab chunks. -Lobster Scallion ginger noodles: flavor was good, but the lobster was so overcooked, which left it SO chewy & hard to separate the meat. The place was a very comfortable place to be in. They also do live Vietnamese karaoke on Fridays. I had the fresh summer rolls (Goi Cuon), crab fried rice, calamari and pho with chicken. The Goi Cuon is the best I've had since living in Virginia (I've been here since 2002). The crab fried rice was perfect, not greasy, and tasty . The calamari was hand made and tasted like fresh! Came here for a casual date :) There's a lot of natural light and the decor is really pretty. The staff are all super friendly and joked with us. The food came quickly, which pleasantly surprised me since it was so busy. I wanted to try other pho spots besides Pho 75, and I had a sip of the broth from my partner and it was very flavorful. I had the nem nuong cuon, which went very well with the seafood sauce. The server even cut the two rolls into smaller pieces so we could easily share. The coffee was also fantastic and helped fulfill the craving I had for a good Vietnamese coffee. I've been here for the previous managements so this was different but I'm pleasantly surprised. The interior -- I needed to get used to, but very comfortable with the booths, nice bar, little stage. The mi xao gion was delicious, could use a little more sauce maybe, but perfectly crispy. The lump crab fried rice had garlic bits and crunchy rice that made it different and very flavorful. Service was friendly, my family's regulars. Would come here again. The price is a little bit steep but as you can see from the crispy noodles, this is definitely a shareable place. My friends and I are huge fans of Saigon Bistro. We used to drive to their Sterling location, so we were really happy when they opened a branch closer to us in Chantilly. The food is consistently great. My personal favorites are the Shaking Beef, Lump Crab Fried Rice, Tamarind Fish Soup, and the Stone Pot Soft Shell Crab. Those are must-orders for me every time. I've tried several other dishes too, and honestly everything has been good. The place has a warm, welcoming vibe. It's family-run, and you can feel the friendly service every time you visit. My boy needed noodles so we got the house special pho (FIRE) and the spare ribs platter (FIRE). This ain't exactly your hole-in-the-wall pho joint so my expectations were really low, and well, I'm an idiot, because this joint was a HIT. Deep, flavorful broth without too much of that star-anise smell that lots of pho joints overdo. STUPID amount of meats too. Short Rib Platter was BOMB but that's only because I reeeeally like some "chew & tear" to my meat. If you're looking for super delicate short rib, I would pass. Sanjay had is service game ON POINT. It almost seemed like his fulltime job was to make sure that NO glass is ever less than halfway empty- and he was always so cheerful. There's a bunch of other things I want to try. Though I've never dined at the former Pho Bac, I am not too impress with this new restaurant. There were a few signs that I look for in a Vietnamese restaurant. There was karaoke which was a good sign. The menu had items that we would find at Eden Center. That's also a plus. The staff's kids brought water to the table and checked on us. Typical for an Asian restaurant. Service was overall excellent. With all that said, I wasn't a fan of the food. I ordered Bun Rieu which is a dish that I love. The broth was kind of plain and lackluster. We also had calamari which was descent. It wasn't as crispy for being fried. We loved the sausage summer rolls and that was the highlight of my meal. Good news is the restaurant was nonstop consistently busy, bad news was it was severely understaffed. We ordered a couple salads (lotus and banana blossom) - both were very good. The mains were all just ok - the BBH is just ok - definitely good for close by option but not the best. Bo Kho is a bit over fragrant and inconsistent - we ordered 2 and one came with noodles and one didn't. But server didn't ask for clarification. The Bo Ne only came with 1 egg..anywhere else we've been, comes with two. The garlic egg noodles were overly soggy - noodles and vegetables. Lastly, we ordered Vietnamese iced coffees and they came with whipped cream! Highly recommend the restaurant preface the drink, even if it is a "signature".
