Falls Short on Living up to the Hype and Recent Guide Recommendations -- Restaurant Review: Stanbury - Raleigh,NC -- After reading a lot of recently good reviews about this restaurant and its mention in the Michelin guide, I decided it was probably worth the time to see what all the hype was about. When evaluating a restaurant, it is important to consider three main elements: Food, Service, and Ambiance. -- Nestled in a Northern Raleigh residential area, the restaurant's initial curb appeal makes you wonder what is truly hiding beneath the walls. With a rustic outdoor ambience and decorated with random vintage décor, you must wait in a line of potential patrons at 4:30pm to secure a table for the evening, no matter the weather. Inside the restaurant, you are greeted with a cabin-like country feel, with a continued theme of random décor, old garage-sale buys, and walls of chatka. -- The service is definitely elevated, with the staff complementing the environment with a 'welcome to our cabin' feel-like ambience, like pulling up a chair to an open campfire with a group of friends. The service staff made significant efforts to make you feel welcome and went above and beyond to ensure the dining experience left you feeling warm and inviting. -- Unfortunately, the food fell short of what one would expect from an elevated restaurant experience. -- We started with the beef tartare and bluefin tuna crudo, per the waitress's recommendation, along with an order of the bread & butter. The beef tartare definitely delivered a stellar combination of flavors, but fell significantly short in overall presentation. The dish's plating lacked creativity, appearing sloppy. It definitely was not inviting and certainly didn't appear to be a very elevated dish from first glance. The beef itself was well-seasoned, and the sharpness of the scallops complemented the overall dish and flavors, the richness of the quail eggs, the crunch and savory depth of the escargot, and the tanginess of the aioli. The tuna crudo did a better job of living up to the overall expectations of a strong dish, with a good appearance and a strong flavor combination with sunchose, chives, lemon, shallot, and olive oil. The bread was baffling to me. Essentially, you were ordering a couple of pieces of toast. -- We decided to go with the Choucrotte Garnis and homemade Tagliatelle pasta for our main entrees. The garnis was a major disappointment from start to finish, falling significantly short of what you expect from a dish deeply rooted in German and Bavarian tradition. From the poor plating to the less-than-harmonious combination of flavors, this dish really didn't have any degree of culinary elevation that would lead you to wanting more. In fact, I have absolutely experienced a much better version of this dish at a small corner pub in Europe. The bratwurst was bland and lacked flavor; the pork was flavor OK, but certainly didn't leave a memorable experience for me wanting more; and the mustard that complimented the dish completely took over, with an aggressively hot, sharpness that destroyed every bite. -- The Tagliatelle did absolutely stand out with the perfectly cooked, tender pasta, and stellar combination of flavors with porcini and chestnut mushrooms bringing a richness to the dish, garlic bringing a complementary aroma without overpowering the dish, pecorino adding a sharp edge, and walnuts introducing a nuttiness, finalizing a well-balanced and flavorful dish. -- We finished with sticky toffee pudding, date cake, eggnog ice cream, rum caramel, and Maldon. It was a good way to end the night and certainly provided the warmth and finale needed to top off a subpar food delivery. -- I always find it baffling when a restaurant curates amazing images of its dishes but fails to replicate them for actual guests. I wouldn't go so far as to say, " Don't go to this restaurant", but I would recommend tempering your expectations. It doesn't rise to the level of a phenomenal culinary experience. Really interesting process to get a table, you cannot call ahead and make reservations. You walk up at 4:30 and in theory can make reservations for a later time that night... except when we asked for 6:30, they told us they really only had two seatings, 5 and 7:30ish. We ended up just staying, and they bring parties in one at a time starting exactly at five. I guess it's part of the shtick, but that's what lost a star for me. Getting someplace at 4:30 only to wait 45 minutes wasn't ideal. That said, the service was wonderful, and the decor is great, though, it's so dimly lit inside, you don't get the full benefit. We loved the men u and the food was overall outstanding. I was a little disappointed in the pig's head, but, to be fair, my husband thought it was great. The fried oysters were perfectly cooked. Celebrated our anniversary with a first time visit to Stanbury. Our server was amazing Love the vibe here. We started off with cocktails, Out in the Sticks and Dance Alone. Both were good, and served quickly. For apps, we had the bread and little gem salad, and enjoyed both. The butter was the star! For dinner, I had tagliatelle (not a fan of this version) and husband had the steak - Best Ribeye in Raleigh, hands down! We ended with the Chocolate Torte, which I was pleasantly surprised with since I'm not an Escazu chocolate fan. I've heard so many good things about Stanbury, but never ventured over bc they don't take reservations & I love a reservation. We got there at 5 on a Friday and only waited 15 minutes, with a menu in hand. Every dish was amazing, honestly. The standouts for me were the smoked fish nduja and striped bass. The smoked fish nduja flavor was so addictive, my whole dinner could have been just that and I would have left happy. The striped bass had one of these nicest fried fish skins I've had in a while, and it stayed surprisingly crisp with the salsa on top. Another fun dish was the bulgogi zucchini - I knew I had to order this unique concoction when I saw it on the menu, and the flavors did not disappoint. The fried oysters dish had perfectly crisp oysters and the sauce gave sriracha mayo vibes, which I love. I love the vibes here, and the seasonal menu was spectacular. We sat outside on the porch which was nice, save for a few pesky flies. I kept hearing about Stanbury and how it's one of the best restaurants in Raleigh. They don't take reservations, so we had a 15 minute wait in a Tuesday night at 7:15 PM. We started out with the smoked fish spread. I saw it had harissa in it but it wasn't spicy at all. It had a wonderful smokey, almost venison flavor. For the main course, the Char Siu NC pork chop hit the spot. A beautiful smokey sweet flavor that was ten times better than the local bbq place we visited earlier in the week. There is plenty of food on this plate to split among two people. We finished the night with Blueberry buckle which is strusel cake, lemon sabayon, thyme, blueberry coulis. Be prepared for a lot of complex citrus flavors that are both tart and sweet. One thing to note, the atmosphere is very dark, and made reading the menu or taking photos somewhat complicated. This place is a culinary experience! This is the type of restaurant the depict in "The Bear" with an ever changing menu and dishes that only a true creative can concoct. This is a place where I say trust a wait staff recommendation and go out on a limb trying new dishes. Whether it's shared tapas style or splitting an entree the wait staff does an incredible job of spacing out your food so you have the perfect amount of time to sit and enjoy the company and ambiance of this tucked away gem! Food is unbeatable. This is a great place to go for a date or a small group of friends. There are so many dishes to try and all are so well executed, absolutely delicious! Probably one of the BEST ribeye steaks I have ever had. The menu changes often, but would recommend the broccolini and fried oysters. Lots of good indoor and outdoor seating options. I would say this is not a place to come to if you're looking for large portions but the cocktails were unique and the food was unique and a great experience overall. The number one thing to know about Stanbury is they do not take reservation. And it's super popular. So timing is everything if you don't want to wait for a table. If you don't mind an early dinner, show up fifteen minutes before they open, get your name on the list and they will seat accordingly as soon as they open. Secondly, do know it won't be an inexpensive evening. You are paying for quality and perfection in execution. Four of us had a recent enjoyable Saturday dinner. The menu changes frequently. You won't find their menu on their website, but they will sometimes post one on Facebook. Off the current menu we shared off the small bites: Fried Oysters, Scallop Yakitori and Grilled NY Bigeye Tuna. All four of us agreed that the Tuna was the best. The Scallop, while good, was really expensive for what was probably two scallops cut up. So half a scallop per person. For the mains, we shared two of the pork chop dishes and one Tagliatelle. Having had pork here before, we knew they do especially well with it and they did again. The pasta was very tasty as well. For dessert we tried all three: a blueberry cheesecake mousse, peach cake and dark chocolate bread pudding. The blueberry one was the surprise favorite. Cake was a light blah, while bread pudding was the least fave. Service good. Two of us got a little water dropped on us when refilling water glasses, but hey they kept them filled to go along with the alcohol we consumed. My wife and I love going out to really nice dinners for our dates. We also look for unique and high quality restaurants that are slightly out of the norm. This is what we thought we were getting into with Stanbury. We knew that you can't make reservations and it was first come first serve. We expected to wait. We showed to the host stand about 5:45pm. We checked in and were told that we wouldn't be seated until 8:15pm and we couldn't even get drinks and snacks until 7:15pm. We thought this odd, but figured they must be busy and very good to be so packed. So we checked in, and walked about 1/4 mile to another bar for drinks and a small app to hold us over for two hours. We showed back at 7:15 and were seated "on deck" in an outdoor, unheated patio holding area to wait until our seating time. We both ordered an old fashioned and a cheese plate to share. The old fashions were watery, overpowered by excessive angostura, and generally not well balanced at all. For $16 a cocktail we expected a bit better (a speakeasy about a mile away deliver exponentially better). The cheese plate was four slices of cheese, some pecans, pepper jelly, and cucumber slices (substitute for crackers due to an allergy) for $10. The cheese was good, but generally the plate fell flat also. Our seating time finally came and we were seated (first available) in a partially heated covered outdoor patio. We were both cold but the restaurant doesn't control the weather. The waitress was pleasant and up front asked about allergies and then took about 10 minutes providing a clear picture of what menu items fit our allergy concerns. We ordered the oyster mushrooms, the beef marrow, and ribeye; and all requested to be allergy compliant. My wife enjoyed the mushrooms, but I couldn't eat them due to announced allergy cross contamination. The marrow came out with a clear indication that the kitchen staff did not adhere to the allergy request. We pointed it out immediately and the staff attempted to remedy. We tasted the marrow and it was so bland and unexciting. The pickled arugula on the side was 10x more flavorful and complex. We could have had the same effect with some olive oil vs marrow. The ribeye came out ($80 plate) and looked good. It had a good crust on it, came with a baked potato, and some greens. This plate was the ultimate disappointment. The best part of the plate was the baked potato. The steak looked good, but was 60% fat. We understand marbling in ribeyes but when every bite is mostly globby fat and not tender savory meat, it's extremely disappointing. The "A-1000" sauce was nothing special and the greens tasted like someone dumped a handful of course kosher salt on them. We could have purchased a filet mignon from our hotel that would have been better cooked for 1/4 the price. The staff tried to make up for the marrow plate allergy mixup with a comped chocolate torte cake. The cake was decent but also generally unimpressive. The sauce looked like it was supposed to be caramel or some sort but was overpowered by coffee in the cake. Regardless we appreciated the effort and gesture. At the end of the evening my wife and I both agreed that the hype was just that. The Stanbury was a social experiment in psychological exclusivity and did not deliver on any of their product. For well over $230 for two people and a 2.5 hour wait to be seated, we recommend you look elsewhere. I'm giving two stars solely for the customer service. The staff was very nice and did make an effort to correct mistakes. Everything else...save your time and money. read more

Every once in a great while you discover a restaurant that you immediately fall in love with. For me, Stanbury is one of those restaurants. Yes, she doesn't take reservations. Yeah, she's quirky. But she's fun, totally alluring, and unforgettable. First things first: if you want to be seated in the first seating (5:00 to ~5:15), arrive at 4:50 or so. If you'd like to dine at 7:00 or ~7:15, arrive at 4:50 or so. Notice a pattern? For even later times, I suspect you're also going to have to stop by relatively early; they'll take your name and number and give you an approximate time. If you live in Oakwood or Mordecai, this system is great; if you're in Durham, Wake Forest or another similarly distant town, not so much. But whatever it takes to snag a table, do it, because this restaurant is well worth this inconvenience. The restaurant's decor appears to be the product of a Wyoming hunting lodge, a funky art gallery and a garage getting together to experiment with hallucinogens. It's funky, distinctive and seemingly 180° opposite the imaginative, elevated cuisine, but it all somehow works. The vibe is playful and casual, the drinks are wonderful, and the service is attentive without being overly fussy. And the food! As the kitchen uses local providers and seasonally available ingredients, the menu changes frequently. It usually features approximately a dozen small and four large plates, all intended for sharing, as well as a few desserts. Everything we tried was sublime. In particular, the beef heart bolognese was extraordinary, and the ribeye was perfectly cooked with a great char and and luscious flavor. The Szechuan Cucumber was another delight, featuring cantaloupe, Lady Edison ham, peanut, and cilantro, while Szechuan peppercorns provided their tingly, numbing magic: very good. Don't skip the bread and butter: the sesame loaf slices from Boulted Bread had spent a few moments on the grill, and the marriage of smoke with the richness of the loaf and butter was memorable. We need to return - soon! - to try some of the other dishes. Finally, I need to mention that this is a restaurant that's genuinely committed to providing a great customer experience. There were a couple of minor hiccups during our visit (a drink ordered "up" was served on the rocks, the pacing of the dishes coming to the table wasn't ideal); the restaurant's staff went to great lengths to make things right. This was totally unexpected and seemingly disproportionate to the couple of minor things that went wrong, but it solidified in our minds that this is a restaurant that deserves our business and we need to return to, frequently. I ate here a couple weeks ago with 2 other people. Overall we were disappointed. There was only 1 dish out of 6 that we thought was really good and that we'd come back for-- the Black Pepper Cavatelli. Bread and Butter-- 4 pretty good, the butter they served with the bread was really good. NC Bigeye Tuna Crudo-- 4 Black Pepper Cavatelli-- 4.5 Delicious! The corn made this dish! F1 Hungarian Sausage-- 3.5 Flavors didn't come together quite right. Roasted Marrow-- 2 Tasted like fat blobs. There was no richness of flavor that marrow should have. Peach Crisp-- 3 The flavors weren't balanced. The peaches didn't have enough sugar in the filling. And wasn't served with enough ice cream. We had to order another scoop to have enough for the crisp. I was torn between giving this restaurant a 3 and 4. It deserved 3.5. However I decided to give it 3 stars because it's pricey. So for the price, the quality should be better. Great food, great vibe, cozy place off beaten path, just north of downtown town, will def repeat

While the wait was around 1.5 hours, the appetizers and cocktails were a prelude to an inevitable wondrous culinary experience. I met a friend here for a late lunch. Neither of us had ever visited and we were eager to try the selections. Everything was perfect! From the smoked bluefish pate with the radish, Dijon mustard, gherkins and tasty crackers to the succulent pork chop that literally melted in your mouth. Dessert was fantastic (light and not too sweet) as was my new favorite cocktail (The Midtown). Staff was courteous and greeted you with a smile...they were also Uber attentive as well as informative. The atmosphere was a little loud but the music and rustic look served as a perfect backdrop for some of the finest food you'll ever eat in Raleigh. This gem is a must! BLUF: Will absolutely be back. Be smart about which day of the week you choose to dine here, there is always a wait. Joseph was such a gracious host! We had our dog with us for date night and he was being his usual good boy-ness. Joseph saw our bored looking pup and asked us if Ollie would like a marrow bone. He came out with the marrow bone and water. Needless to say, our dog loves him which by the transitive property we love Stanbury. The star of the night, the Seared Scallops!! Perfect complete dish. The scallops had a beautiful heavy sear without compromising and drying out the inside. Served on top of beef bourguignon and pureed parsnips, which in of itself could have been a dish. Topped with crispy plantains and chives. MUAH! Chef's kiss Every one of their dishes are accurately described and superbly prepared. From the crispy pig's head on top of a bed of lentils to the earthy mushroom tagliatelle. Every dish made us feel that they've put effort and care into its components and crafting. This is one of those places where nearly all there is to say has been said by somebody else, so the only way to truly capture its excellence is to go ahead and experience it yourself. An absolute gem, this unique and semi-eclectically decorated restaurant offers some of the most fantastic food in the area. Each dish on their ever changing menu is packed with flavor and freshness, and presented beautifully. From the small plates to the dessert, each unique offering is truly exquisite. The interior offers a cozy and casual environment with exceptionally friendly, warm, and efficient service. While their waits and walk up reservation system can at times be a bit frustrating, it is worth it and they offer some drinks and appetizers at times while you wait. Would highly recommend and will definitely try to return. read more

Wow this place was probably my favorite meal in NC when I visited. The wait was a bit long so be prepared. The staff was nice and friendly, but the food was unbeatable. I loved that they have a rotating menu, even though it meant that I couldn't try all the ones I've seen in pictures. I got some beef tartare, pickle soup, a porkchop, and a drink and it was all divine. The tartar was melt in my mouth delicious. The pickle soup was surprisingly yum, less pickley than I expected, just creamy and rich, with some tang to cut the richness so it wasn't boring. Even something as simple as the bread and butter was inspired. The butter felt like they just made it fresh. I feel like when they perfect the simple things, you know the more complex meals will be phenomenal. And it was. Literally everything we tasted was divine - we ordered at least half the menu. Wow, wow and a third wow!! This was our first time here and I can't wait to go back! We made the mistake though of getting there at 5:30pm and was told it was close to a two hour wait lol. Oh well, we grabbed two chairs by the fire in front and perused the cocktail menu. From what I read our wait would be worth it. We had a couple of craft cocktails while we waited to be seated. The ambiance here is top notch. It's different than most restaurants and very eclectic, which we enjoyed. There was a nice crowd inside and outside. The small fire in the mini firepit added to the great vibe here. When we finally got seated inside we were near the kitchen. It was bustling with the staff and the servers. The service here is great. We ordered the following: roasted cauliflower, roasted brussels sprouts, pork cheeks and bone marrow. Everything was awesome. Each dish came out separately, which was fine. Like I said they were really busy. We haven't had bone marrow in a very long time. The last time was in February 2013 at Tom Colicchio's Craft restaurant in NYC, so we were newbies again to this dish. It was delicious!!!! Its not a dish you see here in Raleigh often and I hope on our next visit they will still have it, it really was that good. The pork cheeks were also delicious although the bone marrow stole tonight's show. We finished off with desert which is a rarity for my wife and I. We got the apple crisp with a scoop of vanilla ice cream which was locally sourced. Forgive me though, I'm not sure if it was from NC State or another producer. The desert finished off the meal nicely. The Stanbury was a great experience last week. My wife and I had a lot of fun on a rare date night. We will definitely be back! read more

My two trips to the Stanbury have been exceptional. You can count on them for adventurous proteins, great cocktails, and attention to detail throughout a rotating menu. This place is the perfect spot for a "treat yourself" dinner, and they throw down aces on every plate as far as I can tell. Was disappointed the last time I tried this place and after my favorite spot was closed on a Tuesday decided to check it out and Two words resonate : over seasoned and overdressed. The flavor profile is amazing but for some reason, the salt and the volume of sauce overshadowed the potential. And as I walk out after paying almost $150 for dinner I'm really amazed that my server nor management bothered to inquire, as to whether or not, I enjoyed the dining experience. So much potential but I simply give up. read more

Eating at Stanbury was the culinary highlight of my Raleigh trip. I was here on Halloween and everything from the moment my friend and I got out of our car until we walked out after dinner was spectacular. The menu at Stanbury is like nothing we had ever seen. It is a delicious assortment of different types of meats, organs, vegetables, and sauces. Chef's kiss. The staff made our time even more enjoyable with a very warm welcome, patience in explaining the menu to us, making great food recommendations, and seeing us off with a smile. The ambiance is also uniquely Stanbury! Highly recommended! I will definitely be back with every Raleigh trip. read more
