I asked our server about it and he said that the meat for these dishes were cooked in the wok, so, in a sense if I understand correctly, the lesser quality meat gets added to these dishes. But if you order anything hibachi, then the more tender meat is used for these dishes. He said that it was a Japanese tradition to do it that way. I never had either dish made this way in the past, but I wish we would have been informed before we chose these for our meal. But still, the meals lasted two days and I have no reservations about visiting this restaurant again. I know what to be aware of next time. I also found that the prices were $15-$20 per dinner. That's a decent value for a good restaurant like this at this time. What made the experience even worse was the customer service. When I politely explained that the food was unacceptable and requested a refund, management became argumentative instead of trying to resolve the situation. Rather than addressing the obvious quality issues, they seemed more concerned with refusing responsibility. Between the questionable freshness of the fish, cold steak, poor food quality, and lack of customer service, I would not recommend this restaurant to anyone. There are far better sushi restaurants in Jacksonville Beach that actually care about the quality of their food and their customers.
