Came here for lunch after hiking around the area. It was my first time here and wanted to try it because my fiancé said it was really good as well as the noodle was handmade. Came here on a Saturday night because we heard they had great soba, but this review is reflecting over a negative experience, but I think I see similar negative reviews that shows there is a pattern. So first the wait time was way too long. We waited almost around an hour and a half just to get seated, granted it was a Saturday night, but even then everything still took forever for even the next party to be seated. I have no doubt that the food was good, but it no way justified the wait time. Inside was simple, not much for show. Plenty of parking! The service was friendly and nice, and I know and see that the workers were earnestly trying to do their very best, but my speculation is that this place is just either poorly managed and poorly understaffed. Everyone always comes for the soba samplers but they always run out - that's clear from plenty of other Yelp reviews. The food takes forever to come out, most likely because their kitchen staff is either short staffed or their system is terribly inefficient and are just not ready or prepared for the amount of customers they attract. I don't have a problem with the individual employees that worked there - they were great, but their issue is clearly how their whole system operates and runs. As a vegetarian, it was hard to choose what to order because there are plenty of choices. This would be my first experience choosing cold noodles too, so I wasn't sure what to get. In the end, it made sense to order the sampler. The sampler had 6 servings of noodles with 5 different preparations on top. The matcha noodles were prominently flavored and thought it tasted good. Since I didn't research about cold noodles, I'll share my experience - I do not know if it's right or wrong. Basically the sauce you dip the noodles in is also cold. It's a type of soy sauce mixture.. my guess is light and dark soy sauce, but I could not taste any sesame oil or vinegar.. maybe there was? Came to Tanakaya after hearing a friend rave about it a few years ago and wanted to give it a try. I met up with a friend around 12 on a Saturday afternoon and we were seated around 12:45. After being seated, we ordered a few minutes later. I ordered the Cold Soba Sampler while my friend got the karaage lunch special. It took around 20 minutes to get our food. The noodles were very tasty, with the matcha noodles tasting just ever so slightly of matcha. My favorite noodles out of the set were the Ume/shiso noodles. The tsuyu (dipping sauce) was phenomenal and really complemented the more mild flavored soba. After you are finished with your sampler set, they offer some of the hot water that the soba is cooked in to mix with the tsuyu so that you can sip on it after your meal and it was probably one of my favorite parts of the meal. I will definitely be back if any of my friends were willing to give this place a try, but I would more likely come for dinner on a weeknight rather than any of their other busy times. My friend shared an Instagram reel with someone getting their soba sampler and it looked like a really great deal, considering you get to try so many different soba types and flavors and they also had matcha soba, which is something that I've never seen before. The restaurant itself isn't super big, but it does get quite busy here, especially on busier nights (Fridays and weekends), so you may have to wait a bit to be seated. Additionally with that, since everything is made to order, there is a bit of a wait for that as well, but rest assured, great things come to those with patience and our meal was a great one indeed! For a group of 3, we shared the: 1) Special Combination: -For the special combination, you can choose either one hot noodle or cold noodle (soba or udon) and one donburi (half size rice bowl). It was a difficult choice to make between the noodles, but since we were already getting the soba sampler (cold noodles) the best bet was to get a different hot noodle. -After some deliberation and to balance out what we got to try, we got the udon kakitama and filet katsu don. -The Udon Kakitama had a hearty helping of udon noodles in their homemade starchy soup with an egg stirred in. The soup is VERY thick, think hot and sour soup at a Chinese restaurant, but not as sour. Great for a cold night and the flavor absorbed deliciously well into the noodles themselves. -One of my Yelp OOMFS got the filet katsu don and recommended it, so I wanted to try it as well, this one comes with their homemade sauce (it's not the standard tonkatsu sauce). The sauce is not as tangy, but much richer with slightly sweet undertones, making the crispiness of the deep fried pork cutlet much much more delicious and savory. Meat was moist and tender as well. Delicious and comes with helping of shredded cabbage to boot. 2) Cold Soba Sampler: -This comes with the tsuyu dipping sauce and green onions. -The flavor for the soba are: ume shiso, nameko oroshi, sansai, tanuki, and 2 matcha soba. -Presentation is perfect for Instagram and other social media. Comes in a nice box with the soba rolled into a ball and the toppings displayed beautifully on top. -The tsuyu sauce had a nice light umami taste to it without being too salty and was absorbed very nicely by the noodles. -Each soba noodles had their own distinctive flavor profile with each bite of the toppings that they had. I'm a big fan of shiso and nameko so these stood out to me. The nameko mushroom had a thicker, heartier sauce to it and the ume shiso had a very refreshing taste. The wild veggies were a unique twist to it too since they're not the standard vegetables you're generally served at the normie Japanese restaurant. -As much as I love matcha, I'm a bit over the hype so I was a tad skeptical with the matcha soba noodles, but they are the REAL DEAL. Many such cases the matcha either has no taste or become so grossly overpowering in foods that are not supposed to be matcha focused (aka anything that isn't a dessert or tea to me), but this was the perfect balance of taste. The matcha comes in subtly in as a slightly earthy aftertaste after the light umami of the tsuyu. Very delightful. -If this is available, definitely get it! You won't regret it! Tables were well spread out so even if you're sitting next to another table, you don't feel like you're invading each other's privacy and hearing their conversation. Service: The wait staff were very friendly and patient given how busy they were. Food: [I'm not a big eater] I got the Karaage chicken appetizer to share and Ume Shiso Soba noodles. Chicken was great, lightly breaded so you get majority meat that are decent sized. I was pretty much full after eating 4pieces of chicken. I am so mad at myself for not finding this gem of a spot sooner, because I'm already dying to go back after my first visit!!! If you're looking for quality Soba, TANAKAYA is definitely a place you need to try! - PARKING - Shares a parking lot with several other businesses - take notice of any spots that have a placard/sign that dictate if it's meant for a particular restaurant! - SERVICE/ENVIRONMENT - It's not a large restaurant, although still very spacious. They seem to have spread out the tables purposefully as to not make you or the other customers/staff feel cramped. You write your name down on a paper list, and wait until they call your name. I wouldn't recommend coming if you have more than 6 people as their tables seem to accomodate 2-4 people the best. 6 is probably the max, and even then I'd recommend you calling in advance or having someone come early! I finally got to try out Tanakaya out! I've been eyeing it ever since I saw the soba sampler on Yelp. Service/Ambiance: The servers are relatively friendly and the food came out at a reasonable time. I don't have pickled plum often but I thought the tartness gave a kick to soba. My second favorite was the matcha soba. I was a bit skeptical at first but the matcha flavor is light. I thought it was surprisingly tasty. Also, something to note is that the soba sampler does not come with any protein. I ordered the 2 shrimp separately. The quality of the shrimp was great but the batter was too thick for me. It was also quite pricey at $5 a piece. Overall, I would come back again. As many other reviews will tell you, the wait for the place is indeed long. I thought I could avoid it by coming a bit later in the afternoon, but even coming around ~1PM, I still had to wait till after 2PM (for which if you are on their waitlist prior to their lunch closing time, they will still seat you if you prefer so there is no need to worry about not making it if you are there prior to their lunch close). There are two main things that I heard that I had to try from this place, their karaage, and their soba. Unfortunately by the time I had gotten there, they said that they were sold out of their karaage, so opted to just go for their soba sampler set. This comprised a total of six soba servings that included 5 different soba types that they sell (their Ume Shiso (pickled plum), Nameko Oroshi (Nameko Mushrooms), Sansai (Veggies), Tanuki (Tempura flakes), and Matcha x2). Other than the matcha, the soba were all the same type of soba with just different toppings. In regards to the toppings, they were definitely a bit more traditional in a sense, and in my opinion require a certain palate to appreciate, eg. things like the Ume Shiso was a bit too sour for me, the mushrooms had a strong bitterness to them that was difficult for me. However, I did really like the Tanuki and Matcha soba, and the soba by itself with the sauce was very good. Visited after seeing a few videos on instagram! Location is a little hidden away in a plaza on the old town side of Tustin. We ordered the soba sampler and tempura. Tempura was delicious, it was thinly battered, and still retained a solid crisp. Soba sampler had 6 bundles of noodles. Each bundle had their own combination of flavors and were all unique and flavorful. That being said, it wasn't anything overly amazing or anything that wowed me. Service was overall nice as well. Wow! Best udon noodles I had in a long time. Everything tasted really fresh & home-made. We were lucky to get there a little before opening 11:30a Saturday & was seated right away. There was a line of people waiting outside after us. We enjoyed everything we ordered & they had great friendly service! I got the lunch combo with karaage chicken & udon, my husband got tonkatsu combo with udon, and my daughter got vegetable tempura combo with udon. All lunch specials come with rice & salad. They serve free ice tea or hot tea. The only negative thing is the wait, it took 45min for the food to come out. I recommend getting there at least 20min before opening so you're first in line to get seated & first to get your food! Next time we will try the soba noodles! read more

Damn good noodles! I had the natto cold soba and loved every bite! I never can turn down a natto dish. My friend had the sampler and loved hers too. She'd never had umeboshi but really liked it. We shared the kara age appetizer and it was spot on. Good iced green tea too with attentive service on refills. Definitely coming back to try more. read more
