The Gibson is a good restaurant- not great; but I think with more time, it can evolve into what I think it wants to become. The decor is a snazzy Art Deco style. There are lots of details that allude to this, but as another diner mentioned, the finishes are not as high end. However, what the restaurant lacks in premium finishes, it makes up for in spirit. The service here was really great, and that's what propelled the visit into 4 star territory. Our waiter was taking care of 4 of us, and he was very polite and friendly the entire time. It was my husband's birthday, and at the end of the meal, we got to visit the speakeasy at the back of the restaurant. More on that later. To start, I had a non-alcoholic beverage. Since I didn't see a mocktail selection on the menu, I asked the waiter if they could come up with something fruity, but not too sweet. I got a drink that I could not place what fruit it was derived from, but oddly tasted like the candy from the 80's and 90's that were essentially wax with a liquid in them- I hesitate to call it juice, but it tasted like the liquid inside the wax- that's what this drink tasted like. I will not mince words- I did not like my drink. For an appetizer we had the fondue. It came with croutons and pretzel bites. The fondue itself had no real flavor. It was the most subtle cheese and didn't have a distinctive taste. The croutons and pretzel bites were fine, but I questioned the presentation. Brought out in baskets lined in checkerboard liner paper; this was giving me 50's diner vibes. For my meal, I had the Blackened Redfish from the Audition Menu (a menu of items they are testing) and it was a mixed bag. The arugula salad was good- it could've been brighter. The dirty rice was decadent, but almost a little too salty. The redfish was disappointing. It was cooked fine, but there was a spice in the red pepper beurre blanc sauce that didn't go with the other flavors. I would not order this dish again. At the end of the meal, we were escorted to the Speakeasy lounge, where we ordered dessert. They brought out a complementary flambé cheesecake for my husband's birthday, and we also ordered a creme brûlée. Both desserts were exceptional- I'd give 5 stars to both. They tasted rich without being overpowered with too much sweetness. I will definitely be back at some point to experience dessert here again, I'll just order a different entree and skip the fondue. The decor in the speakeasy was more posh than the dining room, albeit a little on the trendy side of Art Deco, still it was very nice to be invited into it. It was a very thoughtful gesture to make my husband's birthday that much more special. Also, they do have live music here which was nice, but prior to the live music starting, they did play a lot of mellow 70's and 80's tunes- think Yacht Rock and all it's cousins (adult soft contemporary and sophisti-pop) which was actually pretty cool. While not quite fine-dining, The Gibson strives to aim for it, and I think with some adjustments it can get there. The service was truly great, and the dessert was standout! The rest I think will come in time. This is still a very new restaurant and I think it's trying to navigate the complexities of establishing itself. This place should be packed all the time. Bartenders are on point. The food is always good. I can't stress enough how awesome the atmosphere is. It's the epitome of "I don't need to review my tab because whatever it is, it's worth it". I hope more folks find it, because it's a true hidden gem right off the tollway. I really wanted to like The Gibson, but the overall experience did not justify the premium pricing. For a venue positioning itself as an upscale cocktail lounge, the details simply did not match the cost. The menus were laminated in plastic, which immediately took away from the high-end atmosphere. The dining furniture felt worn and substandard, lacking the comfort and quality you would expect at this price point. The cocktails were equally disappointing, tasting more like standard bottle-service drinks than thoughtfully crafted cocktails. The one bright spot was the service. Our server was attentive, professional, and did everything possible to make the experience enjoyable. Unfortunately, even great service can only do so much when the overall product falls short. Dallas has too many outstanding restaurants and cocktail bars to settle for an experience like this. Based on my visit, I would not recommend The Gibson. read more

It was our 15 year anniversary. The Gibson hit all the right notes. They seated us near the music as requested; table had colorful celebratory confetti on it. Restaurant is art deco chandeliers and intimate. The wait staff never let our water glasses go empty. Most of all, our waiter, Reda, was magnificent. Great recommendations--spot on--and checked on us a number of times after initially commenting on our 15 years. The drinks were great; Pear and Pecan and Pecan Old Fashioned. Argentinian Short rib melted in my mouth, charcuterie was ample and great variety. Finally, Reda brought us into the Speakeasy (Yes there's a Speakeasy inside!) and treated us to cheesecake flambe for dessert. Magnificent night! Amazing first experience! read more

It's always great to try happy hour deals before spending lots of time and money at a place you may not really like. I decided to try HAPPY Hour at The Gibson. It was a very pleasant experience. The ambiance is sassy and classy, but completely comfortable. The fresh flowers for decor gave it a nice touch. It's cozy with a variety of seating. Chandeliers and lighting fixtures are beautiful. The inside of the restaurant is clean. The bar area is stylish and the outdoor patio is a fun atmosphere. The staff is very friendly and the bartender Will was super nice. He was so helpful and took good care of us. The prices were reasonable and the happy hour menu selections were good. ON...Thirsty Thursday's they offer Martini Specials. I must admit I love the theme for Thursdays! The raspberry martini was delicious. The fresh raspberries and flavor is perfect. The lemon drop martini was just ok. It needed more lemon flavor. The charcuterie board was fabulous. It was a perfect combination of fruit, meat and cheeses. Minus the fresh mozzarella, they need to switch that out. The deviled eggs were great for sharing. This review is of the Gibson happy hour. I was really excited to go to this happy hour. The prices for the food and drinks and options for Martinis for Thirsty Thursday was just what I was looking for. The service was exceptional. As soon as I arrived the server had seated my friends and suggested the raspberry martini and took my order. We also decided to get the deviled eggs and charcuterie board for food. The taste martini was strong, tasty, and delicious. I had to get a second one. The deviled eggs and charcuterie board were both good. My only advice is to remove the mozzarella cheese off of the charcuterie board. The ambiance is superb. The inside and outside is high end old Hollywood feeling and there is an outside patio that I must come back to. Overall a great spot with so much potential and a place I will definitely be coming back to. read more

4.5! After a rough week, we found ourselves at an artist talk and decided to give The Gibson Dallas a try--and I'm so glad we did. From the moment we walked in, everything was fabulous: the decor, the live entertainment, the service, and of course, the food. The entire staff was incredibly attentive, and our waitress, Lauren, was especially kind and welcoming. We started with the short rib egg rolls, which came out lightning fast--hot, savory, and absolutely delicious. For entrées, we had the Santa Fe short rib (perfectly tender) with uniquely styled potatoes that were whipped to perfection , and the Duroc pork chop with risotto. I'm still wondering how they achieved such a beautiful crust on the pork chop without drying it out--impressive. To complete the night, we had crème brûlée, and it was the perfect sweet ending. One thing I have to highlight: the attention to cleanliness. We watched staff carefully check that glasses and cutlery were spotless--and then someone came behind to double-check their work. THAT level of care deserves recognition. Every restaurant and hospitality space should take notes. The manager's kind spirit, paired with this level of service, made the entire experience feel special. We will definitely be back Oh--and the bathroom was very nice too! I did struggle a bit with locking the door, but that was definitely user error. This review is long overdue. To date, I've visited Gibson twice for happy hour. Happy Hour is Monday - Thursday from 4-6 and all day Sunday. Happy hour includes small bites such as truffle deviled eggs and a petite charcuterie board. The happy hour drinks consist of an old-fashioned, The Gibson (Tanqueray) and several red, white, rose options as well as champagne. They also have $1 off drafts, wells and several wine options. The vibe and service were all outstanding. My first visit I was served by Judge, and I don't remember the name of the very energetic gentleman that served me the second time. If you're a cigar lover you should know that they sell cigars and they have a nice patio where you can smoke. I plan on returning for dinner, but so far so good. The vibe, atmosphere, and service were all outstanding. My friends and I were first time visitors for lunch. Two of us tried the recommended French Dip sandwich, one the yellow fin tuna salad, and the pear and pecan salad. The yellow fin was pretty good my friend thought and the pear and pecan salad was just ok. The French Dip sandwich was average at best in my opinion. Definitely a disappointment and I would not order it again. The prime rib in the sandwich was overcooked and dry. The accompanying fries were very good, and the French bread had a nice crust. First time visiting this restaurant. Although they had no control of the power outage that happened during dinner service, what they should of had control over was how Management control the situation with the customers that had to sit in a dark, smoke filled dining room, while they scrambled in disbelief of what was happening. The good side, the live band remained professional and continued to play. It somewhat reminded me of the orchestra that continued to play in the last minutes of the titanic. Not one Manager stopped by our table, just to apologize for the inconvenience. We had already ordered the truffle eggs. It would of been proper to bring that and the salad out. But instead, our waiter never came by, managers and muscle men finally decided to open the doors and pull back the drapes in the bar area. Even when the lights came back on, no one from Management properly worked tables to even acknowledge what had just happened. Once our food arrived, presentation was good. Food hot. Taste good. The food runner dropped off, the waiter was Casper the friendly ghost. He never came back to the table to see if our food arrived, how it tasted, did we need anything. Had he, he would of known my grilled veggies were cold. Nothing. Once we finished dinner, sitting there twiddling our thumbs, he appears. Dessert? Nope. Check please. No, "it was your first time in, how was everything?" Nothing. So I paid. Left a note on my $150 bill advising the waiter, "next time stop by and visit" I did tip 25% but wanted my voice heard that at "fine" dining. OH LA LA! The Gibson! How we have anticipated for your opening! I've been lucky to dine here twice this week and have absolutely flawless food and service. First, let's talk about the ambiance. This is a glamorous restaurant with rich colors of cranberry and dark wood. There's geometric art deco features on the bar, ceiling and railing which transports you back in time. The aura is glitzy but comfortable. On to the food: The owner said they just hired a new chef 2 weeks ago and changes have been made. Everything that I had I would get again. The Ahi tuna was so fresh that I did have it twice. I loved the thin slice of cucumber that it was served on for added texture. Also it's served with giant seasoned chips that had a hint of red pepper flakes. The crab cakes were generous and full of crab. I also had the vegetable risotto which had a nice portion of enoki mushrooms and basil oil- truly delicious. The salmon was cooked to perfection and the portion was large. Didn't get to experience Food, Service or Ambiance. My husband went to the restaurant 3 weeks before to get a room for a milestone surprise birthday for me. He had 15 people coming. The young man at the front was very nice and showed him the room where the restaurant sets up for parties and gave him a card of who to contact for it. Carrie was the name and after phone calls, voicemail to her and emails, he never got a response of yes or no or any response for that matter. So another restaurant, Seasons 52 at Legacy and the tollway got the party. Food was incredible, service was excellent, room was beautiful and a LOT of money was spent there that The Gibson missed out on because the manager would not return a call or email. This is going to be critiqued rather harshly with room for apologies and do overs. The decor was nice inside. It's the former McGuire's. I was with a group of friends on a cigar tour and we had lunch on the patio. There were only four ash trays available and we had two, so they gave us very nice rocks glasses to dump the ashes. Moving on to the food. The egg rolls were a big hit. The creamed spinach was prepared nicely and didn't have too much heavy cream. Someone had the burger that was reported to be good. I had the crab cakes and because I was starving, I ate them although they didn't have any lump crab and was served under tempered and was very lack luster. We were served warm water instead of chilled with no ice as we sat outside. Our server Garrett appeared to work very hard but not smart as he would forget simple things and didn't follow up with things related to the menu however I give him kudos for putting forth the effort with a smile. I would definitely come back and give it a second chance and would even recommend it. Hopefully they can work out some of the kinks. read more

The Gibson recently opened and we decided to try Happy Hour. The restaurant has a beautiful decor. We sat at their bar which is very large. Our drinks were perfectly made and of generous size. We ordered off the happy hour menu. Husband had a few oysters and I chose the deviled eggs. Then we also ordered the fondue, which comes with croutons for dipping, but we added French fries to also dip. Service was attentive and informative about the menu. Everything was delicious. Two of us split the wedge salad, a fantastic choice, followed by the filet with bernaise. So delicious, paired with truffle mashed potatoes. The Service was excellent! First time here. We came with a group of four to celebrate two birthdays during a week of celebrations, my wife's and my daughter's boyfriend. The entire evening was pretty much a letdown. The food in general was a disappointment. The ingredients of the fondue were cold. The burger we ordered split in half wasn't even the same burger. One side had two layers of bread, the other had three layers of bread. Hard to trust the kitchen when the plates don't even match. And one drink in particular tasted medicinal. Basically, undrinkable Service was delayed because the wait staff clearly wasn't complete or prepared. We were later informed some staff members quit recently. The atmosphere didn't help either. There was supposed to be live music but there was none. When we asked why, the explanation was basically "I don't know, it was cancelled." The photos online suggest a warm, lively vibe, but the reality felt more like sitting in a large airport restaurant. Bland, echoey, and nothing like what's advertised. We tried to give the restaurant an opportunity to address what went wrong. So my wife called twice over several days and left messages for the owner, Carrie Britton to call her back. She never returned my wife's call. Given the disappointing evening and the lack of response from the owner. We won't be returning. read more

Been driving by this new restaurant daily for a month. My wife and I had our Friday Night Date-night here last night. Great old Hollywood atmosphere with good vibes. Excellent live music playing in the background. Great service and just the right amount of attention from our server. Nice and tasty appetizers, and salads, and good selection of entrees. My wife's salmon was delicious, and I had a perfectly cooked filet with peppercorn sauce on the side. We shared sides of truffle mashed potatoes and creamed spinach. Wine list is enormous and entertaining. We had a Red Burgundy which was awesome and priced fairly. It was a pleasurable dining experience and we will definitely be going back soon read more

We decided to try The Gibson for lunch as it had opened in the spot at the Tollway and Trinity Mills where Maguires used to be. They did a nice remodel. We ordered the pear and pecan salad and the seared tuna salad and wanted to try an order of their fries. We should have had a giant order of their fries each and skipped the salads, which were very interesting. The balsamic berry vinaigrette on the pear and pecan salad was good but the pecans were literally glued to the plate via the mascarpone (we tried and even a knife would not budge them) and the sliced red wine pears could have been used as frisbees. The seared tuna was a wedge of yellowfin tuna sliced into 1/4 inch cuts but they were almost frozen (never had seared tuna on a salad served like this).Truly the weirdest lunch ever. read more

We went to Gibson's the first full week of the regular opening. We were regulars at Maguires for 20 years and were excited to try this place. The decor is nice, but a bit flashy. The service was good. My wife had the signature cocktail and I had the dirty vodka martini. The martini was $18 and that included $2 for the blue cheese olives. A bit pricey for that cocktail. The crab cakes were a huge disappointment. Extremely small and very expensive($28) for what you get. Three cakes about the size of a silver dollar. The fondue was good, but the bread it came with was a toasted hamburger bun torn into pieces. We did order pretzel bites to dip for an additional $8. Glad we did, otherwise the fondue would have been a huge disappointment. The sea bass was cooked to perfection. It had a white chocolate and berry reduction that made the dish too sweet. The half roasted chicken with pan gravy was outstanding. All in all, it was a disappointing visit, but have hopes that it gets batter with time. We will give it another try at some point. read more

Service was beyond slow. Began the evening in the bar. Was provided a drink menu/wine list, but nobody ever returned to take my order. Sat in the bar for 45 minutes, no drink. When we were seated for dinner, it took 15-20 minutes for first drink order to be served. Same for second drink - ordered when entree was served, drink showed up when entree was finished. Unfortunate; food was good but completely overshadowed by terribly slow service. These are self-inflicted wounds. No excuse. read more
