    It's always great to try happy hour deals before spending lots of time and money at a place you may not really like. I decided to try HAPPY Hour at The Gibson. It was a very pleasant experience. The ambiance is sassy and classy, but completely comfortable. The fresh flowers for decor gave it a nice touch. It's cozy with a variety of seating. Chandeliers and lighting fixtures are beautiful. The inside of the restaurant is clean. The bar area is stylish and the outdoor patio is a fun atmosphere. The staff is very friendly and the bartender Will was super nice. He was so helpful and took good care of us. The prices were reasonable and the happy hour menu selections were good. ON...Thirsty Thursday's they offer Martini Specials. I must admit I love the theme for Thursdays! The raspberry martini was delicious. The fresh raspberries and flavor is perfect. The lemon drop martini was just ok. It needed more lemon flavor. The charcuterie board was fabulous. It was a perfect combination of fruit, meat and cheeses. Minus the fresh mozzarella, they need to switch that out. The deviled eggs were great for sharing. Overall I enjoyed the happy hour experience. I will visit again soon to try more cocktails and food items. I left feeling satisfied and happy!

    This review is of the Gibson happy hour. I was really excited to go to this happy hour. The prices for the food and drinks and options for Martinis for Thirsty Thursday was just what I was looking for. The service was exceptional. As soon as I arrived the server had seated my friends and suggested the raspberry martini and took my order. We also decided to get the deviled eggs and charcuterie board for food. The taste martini was strong, tasty, and delicious. I had to get a second one. The deviled eggs and charcuterie board were both good. My only advice is to remove the mozzarella cheese off of the charcuterie board. The ambiance is superb. The inside and outside is high end old Hollywood feeling and there is an outside patio that I must come back to. Overall a great spot with so much potential and a place I will definitely be coming back to.

    4.5! After a rough week, we found ourselves at an artist talk and decided to give The Gibson Dallas a try--and I'm so glad we did. From the moment we walked in, everything was fabulous: the decor, the live entertainment, the service, and of course, the food. The entire staff was incredibly attentive, and our waitress, Lauren, was especially kind and welcoming. We started with the short rib egg rolls, which came out lightning fast--hot, savory, and absolutely delicious. For entrées, we had the Santa Fe short rib (perfectly tender) with uniquely styled potatoes that were whipped to perfection , and the Duroc pork chop with risotto. I'm still wondering how they achieved such a beautiful crust on the pork chop without drying it out--impressive. To complete the night, we had crème brûlée, and it was the perfect sweet ending. One thing I have to highlight: the attention to cleanliness. We watched staff carefully check that glasses and cutlery were spotless--and then someone came behind to double-check their work. THAT level of care deserves recognition. Every restaurant and hospitality space should take notes. The manager's kind spirit, paired with this level of service, made the entire experience feel special. We will definitely be back Oh--and the bathroom was very nice too! I did struggle a bit with locking the door, but that was definitely user error. Take home message: Highly recommend if you're looking for a great atmosphere, amazing food, and top-tier service.

    This review is long overdue. To date, I've visited Gibson twice for happy hour. Happy Hour is Monday - Thursday from 4-6 and all day Sunday. Happy hour includes small bites such as truffle deviled eggs and a petite charcuterie board. The happy hour drinks consist of an old-fashioned, The Gibson (Tanqueray) and several red, white, rose options as well as champagne. They also have $1 off drafts, wells and several wine options. The vibe and service were all outstanding. My first visit I was served by Judge, and I don't remember the name of the very energetic gentleman that served me the second time. If you're a cigar lover you should know that they sell cigars and they have a nice patio where you can smoke. I plan on returning for dinner, but so far so good. Gibson has made it to my list of regular happy hour spots. Go check it out for yourself. -stilettosandsucculents

    First time visiting this restaurant. Although they had no control of the power outage that happened during dinner service, what they should of had control over was how Management control the situation with the customers that had to sit in a dark, smoke filled dining room, while they scrambled in disbelief of what was happening. The good side, the live band remained professional and continued to play. It somewhat reminded me of the orchestra that continued to play in the last minutes of the titanic. Not one Manager stopped by our table, just to apologize for the inconvenience. We had already ordered the truffle eggs. It would of been proper to bring that and the salad out. But instead, our waiter never came by, managers and muscle men finally decided to open the doors and pull back the drapes in the bar area. Even when the lights came back on, no one from Management properly worked tables to even acknowledge what had just happened. Once our food arrived, presentation was good. Food hot. Taste good. The food runner dropped off, the waiter was Casper the friendly ghost. He never came back to the table to see if our food arrived, how it tasted, did we need anything. Had he, he would of known my grilled veggies were cold. Nothing. Once we finished dinner, sitting there twiddling our thumbs, he appears. Dessert? Nope. Check please. No, "it was your first time in, how was everything?" Nothing. So I paid. Left a note on my $150 bill advising the waiter, "next time stop by and visit" I did tip 25% but wanted my voice heard that at "fine" dining.     OH LA LA! The Gibson! How we have anticipated for your opening! I've been lucky to dine here twice this week and have absolutely flawless food and service. First, let's talk about the ambiance. This is a glamorous restaurant with rich colors of cranberry and dark wood. There's geometric art deco features on the bar, ceiling and railing which transports you back in time. The aura is glitzy but comfortable. On to the food: The owner said they just hired a new chef 2 weeks ago and changes have been made. Everything that I had I would get again. The Ahi tuna was so fresh that I did have it twice. I loved the thin slice of cucumber that it was served on for added texture. Also it's served with giant seasoned chips that had a hint of red pepper flakes. The crab cakes were generous and full of crab. I also had the vegetable risotto which had a nice portion of enoki mushrooms and basil oil- truly delicious. The salmon was cooked to perfection and the portion was large. Bartenders and service are top notch.

    This place is fabulous! So glad I found out about it. We were seated on time and everyone from the moment we entered to when we left was so friendly. Service was great and food served quickly. Jonathan was an amazing and kind waiter. Food was delicious and they have a nice drink selection. Ambiance was elegant and the band playing was a nice touch. Would highly recommend. We had the wedge salad, ahi tuna and pesto tagliatelle. We asked for the shrimp to be blackened and the chef nailed it.

    Delicious fondue with added veggies & chicken. And the wedge salad without blue cheese was perfect.

The lamb was cooked just right and turned out moist and tender. The eggplant puree was a great texture; neither too smooth to lose its integrity nor too chunky. The staff was attentive and helpful. Verdict: 9/10: Would definitely go back but with a reservation or in a mindset to sit in the heat on the patio. Also, the deboning process for the fish could've used a little more care, but that didn't take away from the flavor.
