She warned me that there's always a wait, but being a Monday, I thought it would be ok. We were surprised to find parking right across the street, then arrive to no line and being seated right away. Don't get me wrong -- the place was bustling! Shortly after we got to our table, which looked like the last one, the line started to form. Nicholas was our wonderful server. He was busy but stayed engaged throughout our time there. My daughter ordered the Banana Bread Pancakes while I chose the Swedish Pancakes, then added the Candied Bacon to share. It all came out super-fast! The Banana Bread Pancakes were fluffy, flavorful and so yummy. My Swedish Pancakes were classically thin, slightly sweet and loaded with lingonberry. And that Candied Bacon -- OMG. That was so good! It's definitely pricey, but worth it (IMO). The Pancake Pantry team work amazingly well in the organized chaos. I had heard so much about Pancake Pantry in Hillsboro Village, so I finally decided to give it a try. With all the great reviews, I had pretty high expectations. We waited 30-40 minutes in line just to get a table, followed by another 15 minutes for the food to arrive. After waiting nearly an hour, I was honestly expecting something exceptional, but I came away feeling underwhelmed. They have a huge variety of pancakes on the menu, which is impressive, but the flavors didn't really stand out. We ordered the Sweet Potato Pancakes, but they didn't really taste like sweet potato. The Blueberry Pancakes were good but felt like something you could get at many other breakfast spots. The hash browns were another disappointment--they were essentially just grilled, smashed potatoes and lacked the crispy texture I was expecting. I also ordered the Chorizo Quesadilla, which tasted pretty plain and could have used much more seasoning and flavor. The French Toast was good, but the real highlight of the meal was the hot chocolate. It was rich, comforting, and easily my favorite item we ordered. We had never been to The Pancake Pantry before, but after seeing online that it's basically a Nashville icon that's been around since 1961, we knew we had to try it while we were in town. And honestly? It completely lived up to the hype. We also ordered coffee to go with everything and wow... such a comforting, satisfying breakfast. The blueberry pancakes were fluffy, buttery, and filled with sweet blueberries in every bite, while the banana pancake had that perfect caramelized banana flavor that tasted homemade in the best way possible. And PLEASE do yourself a favor and try the cinnamon syrup with the pancakes. It was insanely good and honestly took the pancakes to another level. We tried an omelet; buttermilk pancakes, Caribbean pancake, and sweet potato pancake and all were exceptional in their individual ways. Came here on a Sunday morning at 9 just a few minutes before the rush. Large interior with plenty of seating as well as some patio seating. Paid parking lot behind the restaurant (I believe there is some sort of discount if you eat here - inquire inside). We were promptly seated and the waitstaff came by and answered any questions we had about the menu. We got the avocado toast with turkey crumbles which was fantastic.
