The line moves surprisingly fast (these guys have it down to a science), and it's absolutely worth the wait. The steak was tender, juicy, and perfectly seasoned, and the sauces had that perfect balance of heat, sweetness, and umami that makes you close your eyes after every bite. The rice was fluffy and soaked up every drop of flavor. You can tell Dorjee, the owner, takes real pride in what he serves. He's one of the nicest guys you'll ever meet -- greeting regulars by name, joking with the crowd, and hustling behind the grill like a pro. Pro tip: Get there early. Let us split the difference and call it four. I made reservations for my family of four at 7:15 on a Saturday night. This was theater district paranoia. When we arrived the dining room was nearly empty. A few tables were scattered with quiet diners. The rumor goes that it only fills before and after the Broadway shows nearby. I suspect that rumor is true. We were seated at once and handed menus. We decided on two appetizers and three entrees for the table. The soup dumplings were slightly smaller than what I am used to but they released a tidal wave of flavor when bitten. They were excellent. My oldest son asked for something called steam fried buns with condensed milk. This turned out to be three small steamed buns and three small fried ones. He devoured the steamed before I could get near them. I tried half a fried bun. It was fine. It was not bad. It was the least exciting thing I ate that evening. My wife ordered chow fun. My younger son ordered braised beef noodle soup but asked for it mild since the menu had marked it with the little flame of warning. I ordered spicy crispy shredded beef. I think the waitress understood his request by applying it to my order as well. That was probably for the best. I would have enjoyed more fire but in its mild state the boys could try it too. My youngest son said it was the best tea of his life. He is thirteen. He has not seen much of life. But he may be right. Once the food came, the service vanished like a magician's rabbit.
