Came here to check out the new store and it was pretty easy to find. Heads up, it's near the theater. Anyways, from what I could tell, all workers were wearing masks. Anyone who dealt with the process of making food had gloves on and there was a protective shield at the cash register. Considering the store is new, they only have a few flavors: original, chocolate, strawberry, ube and a special one which is Basque/Burnt. From the San Mateo one, I've had chocolate, ube, and original and I must say that even with the SJ location, original is still the way to go. In general though, their cheesecakes are not the western kind (so don't expect thick/creamy). These are fluffy and soft, similar to sponge cake. But considering I tend to not do well with thick cheesecakes, I absolutely love uncle tetsu cheesecake. Not sure of the situation during weekdays but came here yesterday (Saturday) and the line got extremely long after I lined up around 5:30 PM or so. So just keep in mind it may be a bit of a wait. Online ordering is awesome to skip the line but it seems like they only allow 1 order per 15 minute time slot and it's a 4 cheesecake order maximum. I love cheesecake ! Have tried the original and the ube so far. They also have chocolate and strawberry. Once I stopped by and was able to purchase an original flavor (they only had these ones left). Next time my friend did an online order. There are two lines so make sure to stand in the right one. Very consistent in their cheesecake. Always light and fluffy. This is the Uncle I never knew I had. This location is super clean. The staff are pleasant enough, although a little shy. I'd work on direct engagement and smiling, discussing the product. Make sure they've all tried every item at some point so they can talk about them. I'd even have a day where one of each is cut and tried by everyone who works that day. I've tried almost everything now, including the basque cakes. The coconut cheesecake to me is the most successful, with the traditional not having a lot flavor wise going on. The tarts, I've enjoyed all of them. The ube was really good also, I recommend everyone try one of those at some point. The burnt basque is the star of the show. The chocolate basque is also good, but the cocoa blend needs a little massaging to get right in my opinion. I'd probably go with a ground chocolate rather than just the cocoa powder as the powder really cuts through. The only thing I would adjust is, I was told the basque cakes would no longer count towards a free cheesecake. This makes no sense as they are $25, more than a normal one. I was so excited to hear that they opened up an Uncle Tetsu in our area. Also, in the Valley Fair mall is a great location since the mall attracts a lot of people as is. I came on a Monday afternoon and was excited to try the original cheesecake. They had a pretty long line for a Monday afternoon but I opted to wait. Once I got up to the counter, I asked for an original cheesecake. The girl at the front said that they do not have any available right now as they are cooling down and that I would have to get back in the line again as they do not allow customers to pay and wait for something that wasn't available. I did not want to get back in the huge long line again. What if I waited again and there weren't any available once it was my turn again? I just ended up getting the Ube cheesecake as it was the only one available at that time. I was actually happy with my purchase as the cheesecake ended up tasting really good. The Ube flavor was very subtle and I loved the fluffy/eggy texture. Minus one star for the slight confusing process of asking customers to get back in line if something isn't available. I guess I should have preordered but now I know for next time. Not being able to get my hands on the original cheesecake is just another reason for me to return. The cheesecakes are a little bit on the pricier side but I definitely felt like they are worth it. The good: I am really happy they opened a location near me. I heard about this place long before it arrived in San Jose so I was definitely excited to have this location open up. I tried the ube and matcha Japanese cheesecake and it was delicious. I like how the soft texture melts in your mouth and feels light and airy. I much prefer this style of cheesecake over the denser American style. They have new flavors like the burnt basque cheesecake (that is much more expensive). The packaging is nice and they always have cheesecakes ready to pickup. The cake is great for potlucks or gifts. It transports well and stays stable at room temperature. It also lasts a while in the fridge. The cake is on the small side but the price is very fair. The bad: This place is located upstairs in the mall so it's a bit of a trek if you're coming just to pickup a cake. The interesting: When I googled images of the real Uncle Tetsu he didn't look like the cute cartoon signature logo that is pressed onto the cake. read more

The taste was pretty bland, but I definitely want to try the other flavors. The best part was the fluffiness, though. I have never had a cheesecake that was so soft and fluffy! Matcha, ube, cheese, chocolate tarts: 10/10 SUPER good!!! Each are so flavorful. They have the texture of a regular cheesecake, but I think these are so much better. It's very light and not overly sweet which I definitely appreciate but after the first two bites, it gets boring. I just feel like if there were some toppings or syrups, it would just be so much better. Also it's not worth it if you are getting this for yourself because you have to buy the entire cake. If you are sharing it, that's a little different. I wish they offered slices so I could try multiple flavors and not have to buy an entire cake. Covid- enough space to socially distance ,organized line, ability to online order and every worker is well protected in ppe! Uncle tetsu is pretty consistent, its really fascinating to watch the workers continuously go through a cycle of putting cakes into steamed pans into the oven, taking them out and cooling the bouncy mounds before ripping off the paper. They've also standardised packaging really well with a box and have an adorable information card if you ask! The lining inside the box is a breathable fabric and thus the cheesecake doesn't really stick or condensate or get soggy. Did you know that the cake can be eaten 4 ways? Its more like a cheesecake if you put it in the fridge, dense in the freezer and warm and fluffy if u eat it right away/leave it at room temperature. I love the art! I tried the ube cheesecake this time and I still recommend the original for the best flavor profile. The ube was extremely purple and fluffy as always, but the ube taste was very much an after fragrance. If you've never had japanese cheesecake, think of an angel food cake but fluffier and a lot more moist. The flavor is very soft and lightly creamed, and not too sweet. I would recommend trying it if you've never had before! This place is in the mall and very popular with orders! I'm most impressed with their ability to streamline the cheesecake process so that you can get cheesecakes in less than a minute and for an affordable price. It was so light that 4 of my friends and I got one whole Oreo cheesecake to share (plus 3 Lady M slices cuz it was right next door and we pigs). We brought the cakes out to the outdoor patio dining area and dug in with forks. Within 5 min, the entire cheesecake was gone (so were the Lady M slices).
