I've stayed at this resort three times in the last six months, and overall, the experience has been wonderful. The service is great -- seating for breakfast is quick, and staff are always polite and attentive. The ambiance throughout the resort is beautiful and relaxing, making it a perfect getaway. The only downside has been the coffee. Across all locations, it consistently has a bitter taste, Coffee is such a key part of the guest experience, especially in the mornings, I would love to see it improved to match the rest of the resort's high standards. Came here for brunch on our first full day as guests staying at the Fontainebleau. Had a reservation and were seated promptly despite the restaurant being packed on a Saturday morning for brunch. Our waiter was great. Ambiance was nice. Menu had a good selection for brunch. The hash browns were delicious. Giving it 3 stars because coffee was weak (watered-down) and worst of all, something in my mom's food was contaminated, leading to her having a terrible stomach ache and frequent bathroom trips the rest of the day. To be honest, the food here straight up sucked. We ate at Chez Bon Bon the previous morning and saw a huge line for this place, thinking that it had to be good. Well turns out, the only thing good about Vida is its interior, which I must say is really really nice. Cold, stale.. didn't even taste fresh, seasoned, or well made at all. I'm genuinely surprised how a place of this caliber can serve food this bad. Nobody in our party could even finish their food. My coworker and I came for lunch and the restaurant is not full at all. The food was good but the service is bad. The server with a bun on his head attitude was bad. We ordered two dishes and two drinks, took so long and the server did not follow up. When we just got the food, he put down the bill and asked us to pay right away. Since I was staying in Fontainebleau I wanted to at least try out one of the restaurants and Vida was the first one that I went to. It was a very busy weekend afternoon, but the biggest issue for me was the wait times. My table waited 30-35 minutes to be seated. Then we had no waiter or waitress serving us for 10 minutes after we sat down until one of the staff members noticed and they apologized which was okay, but what I noticed was that they were severely understaffed. Like this is definitely not enough staff members for a Memorial weekend and this is way too much for a small team to handle. We ordered our food and then we proceeded to wait 1 whole hour to get our food. Our waiter had to keep apologizing every time and I felt bad and they offered complimentary items which was nice of them. Then I learned that Fontainebleau's management basically cut down on the staff's hours despite the fact that this is going to be one of the busiest weekends for this restaurant. Honestly shame on you, Fontainebleau. The workers don't deserve that. They were working their butts off and doing all they could while understaffed and customers kept coming in. I don't understand that decision. When the food finally arrived it was a relief. You know the wait time is bad when some tables waited so long they applauded when they finally got their food. What I ate and drank: - Vida Prime Bacon Cheeseburger ($28) - Mixed Berry Smoothie The Cheeseburger was okay, but I wish it had more flavor. I did like the bun a lot and the veggies were fresh. It was cooked a perfect medium rare. Unfortunately it was just on the more bland side. The fries were also a strange texture and were cooked a long time, but were still not crispy. They were a brownish color and were over seasoned. It was too salty. I actually liked the Mixed Berry Smoothie, but it would be nice if the glass was like 50% bigger...Especially when customers have to pay $14+ for one. The waiters/waitresses at Vida are honestly pretty amazing and deserve a raise because they are doing some serious heavy lifting when it comes to Vida. I feel like the biggest issues with this restaurant goes beyond that and things some of these staff members can't control when they are part of a large hotel like this. We tried Bagel Salmon, Yogurt and Granola, Everything Bagel, Eggs Benedict and a classic omelet with hash brown and toast. Nicely plated but not as fresh or flavorful as expected. Funny detail: if it came on a bagel, you needed a steak knife, and the servers were not surprised when I used one. $$-$$$ After our visit to this establishment, we have decided that we are going to stay at La Fontaine in Vegas on our next visit. This hotel is bougie, and so is this restaurant, but we felt so comfortable and so welcome that it is definitely the place to have a good brunch in Vegas. It is located within La Fontaine hotel at the north end of the strip, We saw all sorts of dress in this establishment from swimsuits with a slight covering to business suits. The service and the food was excellent on both. We were not rushed at all and taken very good care of by our server. From our observation, La Fontaine is not a smoking establishment so the air was fresh and clean, and the restaurant itself was bright and airy with high ceilings. The presentation of the plate was awesome. The eggs were perfectly poached and delicatlely placed. I was super exited until I ate. My meal was very bland. I had to add both salt and pepper. I never add salt and pepper to my meals. The hollandaise sauce seemed like it could he good, but it had no pop. My wife had the Quinoa breakfast bowl and she also felt it was bland. We came here on Friday early lunch on December 15 so only 2 days after the opening. We were seated immediately. We were asked by three different staff members if there are food allergies , that's a little much. Once he enough/Plenty of staff working. Very friendly staff, professional and everything is very polished. Interior is very nice and modern and timeless. Tables are far enough from each other to have privacy. The fresh squeezed orange juice was $12 for a glass that's not really big and has a bunch of ice in it. I believe fresh juice needs to be served without ice. Everything else on the menu is equally overpriced as expected. I ordered the keto egg white omelette with regular toast and my partner asked for the regular bacon cheeseburger. It took exactly 20 minutes for the food to come out. My toast was great with butter. The omelette was really good. Best part was the little hash brown. Went here with family on Christmas Day. The staff was so lovely, they'll be hard to beat. Zero complaints. The decor is in a gorgeous art deco style with blue and gold accents. We started off with coffee, which unfortunately was 1/2 of the reason they lost a star for me. To make a long story short, I was not a fan. For our appetizer we got a platter of in season fruits of which were fresh and very tasty. For my main I got the keto omelette which includes egg whites, salmon, fresh vegetables, and Gouda. Unfortunately, it is the other 1/2 of the reason they lost a star. The egg whites texture was inconsistent & I wasn't really a fan of the salmon. I got light cheese, which in the end had a negative effect because it seems like that's what the dish relies on flavor wise. Each morning we had the pleasure of being helped by Alejandro and Adrian. By the end of our trip, we felt like they were our friends. We visited Vida one week after the opening of Fontainebleau while checking out the resort. What a hidden gem, we hope it isn't hidden for much longer! Open only for breakfast and lunch, we hope eventually it will open for dinner as well: such a fabulous space, excellent food, and great staff ought to be appreciated more widely and applauded more loudly. The decor is absolutely gorgeous: open, spacious, tasteful, trendy, but not obnoxious. My husband (retired from the joinery trade) had high compliments for the fit-out. My La Scala chopped salad was outstanding: a perfect blend of flavors and just the right size for a hearty lunch. My husband had the California Chicken Burger, made with chicken ground in-house, and proclaimed it one of the top 3 burgers he's ever had. The fries served with it were out of this world (thanks, I assume, to the potato starch they were dipped in before frying -- super crispy exterior and smooth interior, not greasy, just delicious). We split a piece of key lime cheesecake for dessert and it was heavenly. 100% recommended, we can hardly wait to eat there again! read more

Honest Review: My fam and I wanted to have brunch and was recommended to Vida by the security at the guest elevator entrance area. We checked in with no reservations and waited about 20mins, Ari our host was very nice and was able to get us seated in a booth; super comfy and spacious for a party of 4. The atmosphere was very warm, grand and the open bar area in the middle is definitely a sight to see and even dwell in! We ordered 2x ALL IN with Chicken Sausage and Orange Juice, 1x Ham and Eggs, 1x Eggs Benedict with Ham, 2x Lattes, 1x Steam Milk and 1x Tropical Press (fresh fruits and ginger). My fam enjoyed their dishes, drinks and there was a super cool and very fast paced busboy named Victor helping out who got us hot waters, lemon and honey all around; he is super amazing and deserves a promotion/raise/bonus. My food however was a bit disappointing and I expected a lot more from a 5-Star Luxury hotel! The portion is mediocre; eggs were great/fluffy, pancakes decent/medium sized, hash browns was like a mini crab cake lump a bit strange but good. However, the chicken sausage felt weird as it were 2x small links, but mine was very tough and dry super difficult to digest. My waitress Stephanie was super friendly and cordial, she was able to help get a different protein via ham for me upon request which in turn became 3x slices of thin Canadian Bacon stripes in rectangles flooded with greasy oil and overpowered with salt. I struggled to eat it and even patted it with napkins to absorb the salt/grease out AND poured maple syrup over it to counter the saltiness but it didn't work. A bit upset, I told Stephanie at the very end that I didn't need a refund for the ALL IN but instead requested to be comped for another Tropical Press since it was really good and great for detox. Stephanie asked her Supervisor who under their discretion with a special exception only this time, was able to grant canceling the drink instead; normally the cancellation would be the actual food plate itself but I told them I've finished the other portion except for the protein itself since both were inedible and sadly, was the only reason that made it -2 stars. Edit: Made on Sunday, 12/29; my family told me that our Waitress Stephanie gave me the glare and mean mugging when I wasn't looking at least 2x; therefore 3 star review is now a 1 star review. Customers are always right and I hate FAKE people like that all smiles and talk BS later behind their backs. Most of the food comes out cold, likely because it's prepared ahead of time to move people through quickly. It feels like the focus is more on quantity and getting people in and out than on the customer experience. The server also seemed overwhelmed and appeared to be working alone, which led to very brief interactions and some assumptions being made rather than attentive service. The food was absolutely fabulous. I had their signature pancakes called cinnamon roll pancakes. It is the best pancakes I ever had. My husband ordered the avocado toast, which was very delicious. The food definitely exceeded expectations but what was amazing was the service and personalized attention provided by our server "Trisha." She went up and beyond the call of duty when our meal was delayed due to kitchen constraints but was able to offset the inconvenience by providing us complimentary pastries which were no longer going to be offered on their menu. Trisha was extremely attentive to any of our needs, spoke to us as if we knew one another from previous interactions, and was very knowledgeable about menu options/recommendations which guided us towards the perfect meal. After a disappointing dining experience at our hotels restaurant, we traveled back to Vida at the Fountainebleau Hotel two more times before traveling back home not so much for the food but due to the welcoming environment that Trisha provided for us! We asked to speak to her manager so that we could compliment on her exemplary service but according to the hotel, social media would be the best avenue so we certainly hope that her superiors will take heed of the appreciation we are trying to express? In summary, Trisha is a hard working young lady who puts her patrons needs first, provides a warm and caring environment while dining, and has authentic customer service skills that should be emulated by her peers. Really enjoyed eating at Vida! Located on the casino level of the Fontainebleau this restaurant has a great atmosphere and is easy on the wallet. Was able to get a seat right away with no reservation but the hostess did suggest booking one during busier days. Menu is not very extensive but covers a good variety of options. I went with the rigatoni and it delivered on the promise of a solid 20 something dollar pasta. Also ordered the triple decker turkey club with fries which was delicious and the Margherti flat bread for the table was very flavorful. Hospitality from the moment you walk into the Hotel... yes we didn't understand how the ac unit operated. But when we called the front desk the maintenance guy explained and we understood. So the way it works is the ac unit starts to cool upon entering the room, and when leaving it shuts off for energy efficiency. As well as curtains. We couldn't have asked for better service. Yes we didn't have a great experience at Vida. But overall the experience of staying there was great! From the pool to the Bleu Bar.. Service was on point at the Bleu Bar. Both times we had brunch at Vida we were helped by Maggie. The experience was great because of her. Not only the recommendations were spot on but the attention and friendliness made our breakfast a great beginning of the day. We loved the fresh ingredients, made from scratch disheses and dressings. Everything was very flavourful and tasty. Cold plates with salads, fruit and hot ones with pasta. It made a difference! The pastry basket was amazing in taste and so fresh. My favorite item on the menu was the avocado toast and my husband's, the chicken soup (best hangover choice). The toast was so pretty I couldn't make myself bite into it but once I did I had to finish all of it and it was a big piece of toast. Overall, we will be back for the food and service!
