We walked into this place expecting a Vietnamese restaurant but was welcomed to a modern organized pseudo-cafe equipped with bar seating, aesthetic decorations, and a photo-op wall. The menu was succinct with only a couple items, which helps with my choice anxiety (opposed to the typical Vietnamese restaurant with 80 menu items). The beef ball & short rib pho ($18) had great flavor. The beef had a nice chew and the meatballs were filling. The broth was on the salty side. The (free!) Thai Tea was sweet! With the highlight obviously being the bone-rib rib, the meat was so tender that if fell off the bone immediately with the slightest touch. The soup recipe could be improved: more beef bones, less five spice. I recommend making the peanut sauce non-spicy to reach a wider audience, since sriracha can be added by any spice-lovers. We hadn't been back to this location in quite some time because of our previous experiences, but this latest visit was actually a pleasant surprise. I'm not here to talk about ambiance, decor, or the overall dining experience -- this review is strictly about the food. The main reason we stopped coming before was because they changed the rib plate from two larger ribs to three much smaller ones. Personally, I wasn't a fan of that change. The smaller ribs felt noticeably fattier and didn't have nearly as much meat, so over time we just stopped returning. Recently, we decided to give the place another try and ordered the same dish again. To my surprise, the larger two-rib portion was back. That alone was a huge improvement. I've always enjoyed their pho here as well. The broth has a flavor profile that stands out from a lot of other spots -- rich and flavorful without feeling overly greasy or heavy. The bowls are also generously filled with quality cuts of meat, which is something I definitely appreciate. That said, I'm still landing at four stars because while the larger ribs returned, something else seemed to change. In the past, the ribs had this nice char to them, almost like they were grilled or pan-seared before serving. That slight crisp and smoky flavor was honestly what made this place stand out from other similar spots. The ribs on this visit were still good, but they didn't have that same finish that made them memorable before. Great first visit. Came in for a late night dinner at 9pm on a Saturday. No wait but a full restaurant. Ordered egg rolls and their boneless Short Rib pho. Everything was super tasty and fresh. The broth and the meat were flavorful; I didn't even bother adding sauces to it. Filling portion. They ran out of ice when we first arrived but the two servers handled it well. Viet Nom is a solid spot for a bowl of pho near the La Jolla area. This spot is located in a plaza with a good amount of parking spots. Wait times can get long so plan accordingly to put your name down on the waitlist. Wifey and I stopped by for dinner around 6pm and there was about a 15 minute wait. Inside, they have a casual setup with a decent amount of seating. We ended up getting the Grilled Pork Spring Rolls, Meatball and Boneless Short Rib Pho, and the Pho Nom. Overall, everything that we had was delicious and we thoroughly enjoyed our dining experience. All of the staff here are friendly and welcoming. This restaurant is located in a plaza less than 1/2 mile away from UTC. Parking is ok as there were plenty on a Saturday afternoon when we walked in at 1700. The place is small with only 6 tables and bar seating for 10 and there is a sign up list on the door so this place can get busy. Service is kind of slow as there is only one person in the front serving. We came here because of the bone in short rib pho. The ambiance is mixed as the music was playing all genre. It is clean and there is only one restroom that can use a little help. Our appetizers came out and we had to ask the server for plates and utensils as it got busy. There was a couple waiting by the door for 15 minutes as there were 2 tables that needed to be bussed and again only one server, waiter, bus boy, phone in order as he was trying to do it all. For the price you pay here they can at least hire one more person to help out. We had to ask and waited a while for the veggies to come out after our soup was served to by that time the broth was not piping hot for the veggies to cook anymore. When I went up to the counter and asked he said he forgot. We asked for extra bowls for the kids to share and he forgot also so we just used the plates for the egg and spring rolls. We ordered: -Pho Nom with nomsen tamago. Again the waiter forgot to bring out the nomsen tamago so I had to just tell him to cancel that part of the order. The short rib was good and tender as it just fell out of the bone. The rest of the soup was ok and nothing special about it. -Short Rib Boneless. Nothing special and not worth it. -Grilled Pork Spring Roll. This is pretty good and has a crunch to the bite. The sauce had a small kick to it and this is just a try but would not pay eight dollars for four small pieces as elsewhere is bigger and better. -Egg Rolls. Nothing to rave about either and for 7.50 for four small pieces, again there are better places to go for your money. No fish sauce with the veggies as they served it with the chili thick sauce, now you know this is not authentic. -Thai Tea no ice. This is just like any other Thai tea wherever you go so nothing to rave about. *the mint leaves were brown and wilting* why would you want to serve that????!!!!!! You may think that this review is a bit harsh but in reality I am being kind as the service was the most horrible experience ever and I even spoke to three other families and they said the same thing. People were going up to the counter now to get what they needed as I did the same for the to go soup container and the bill on two separate occasions. This is just a hype and if you want good Vietnamese food go somewhere else. This is an Asian fusion and you really do not get the authentic taste of the Vietnamese food. Plus the service is bad.
