I've been wanting to come here for a while now. Ugh so delicious! I got a pho ga (chicken pho) and it was delicious!! I also got the shaken beef and it was delicious as well. The shaken beef was a bit on the salty side but still very delicious. I want to try the spicy noddle soup next time. But overall great food with fast service. The waiter suggested items and took our order quick. He came to refill water as needed. The inside is pretty chill. On the outside it looks small but once you walk in there is ample space. Maybe Chico's most underrated restaurant, Vietnam Bistro has long been a favorite and has recently become a weekly part of our lives. 7 years later I am changing my review. Been there again and food excellent and timing was perfect. I got the broken rice chicken and shrimp and the Banh Xeo which was also really good. Thin rice crepe and inside was onions shrimp pork and bean sprouts served with fresh lettuce and mint with dipping sauce nuoc cham. Service was great. Glad to see they're still around. Came here the first time to try their Bun Bo Hue (Spicy Beef Noodle) because this is the only Vietnamese restaurant in Chico that serves it.. it wasn't too bad, they also give blood chunks with the dish which is good - if you're adventurous, definitely try it! The noodles that were served were thin vermicelli noodles, which is a different take on this dish because BBH is usually served with thicker vermicelli noodles. But overall, not too bad - I know I can come here if I'm ever craving BBH noodles.. Came back a second and third time for their beef pho. The first time, the broth was a little sweeter.. the second time, the broth was a little saltier, but that's okay.. i like both styles of broth. They do give a good amount of beef slices and beef ball in the bowl and it's pretty well portioned. However, I do wish they had other options for pho, like combination pho with: tripe, flank steak, beef ball, rare steak, brisket etc.. something more than the 3-4 that they have on the menu.. The service is pretty slow .. we went during a lunch rush once - that took a really long time.. then went on a Sunday morning when they opened and that took even longer... there was only one other person that was in the restaurant when we arrived & the food did take a really long time to get to us...Our server was yawning the whole time and he just looked sooo tired.. But - overall, after trying EVERY Vietnamese restaurant in Chico, I can honestly say this is one of the top 2 places to get good pho. If I could do negative stars I would. I was extremely disappointed with the lack of customer service. I've been coming here for over a year. I have a severe food allergy to tomato and I've never had to worry about it with pho. It's not listen on their menu but the tofu pho randomly had tomato in it and at this point my group had eaten. I only requested my meal to be taken off since we had to go. The owner started getting combative, argumentative and the whole situation was incredibly awkward. I WOULD NOT EAT HERE. If they had refused the refund but suggested a remake I would've taken that but that wasn't even offered. I've gone here twice since moving to Chico, and while the food is good, I have to make a comment about the customer service of the little old lady who works there. I ordered a standard fountain drink soda and their menu clearly states FREE REFILLS. As she went by I asked her if she could refill my glass. She said, there are no free refills but you can buy another one. I replied "but your menu says they are." She shrugged and didn't seem to care. We really wanted to like this place. We bought the classic items: pho, eggs rolls and bbq pork with vermicelli. The pho was pretty good, simple and without the multiple layers that pho should have but the basic beef bone broth was adequate. The bbq pork was a little dry and burnt but also good enough. Tasted a bit like mall food but that's ok, we can live with that. What was extremely and shockingly disappointing were the eggs rolls/cha gio. I mean, they could have googled the recipe! Who puts potato in Vietnamese egg rolls?!?! They were busy on a Sunday night and service was slow but there were only two of them at the front.
