    I had the tri tip shawarma wrap and it was delicious! Zankou Chicken is truly a bang for your buck place. There is ample seating and casual vibes if you wanna dine in. Service was great considering how busy it was, but I asked for a garlic sauce and they forgot to put it in the order entirely. I asked when I got the order and they gave me one. This parking lot is kind of hellish tho be careful when it's time to pull out and leave!

    Another delicious Zankou Chicken location. This location is just as busy as the others I've been to with the same old school decor. There is a small parking lot in front and an underground parking structure that has an elevator if you are concerned about accessibility. I was in the area and decided to drop in for takeout. Took home chicken, hummus, garlic paste, tabbouleh, pickles, and tzatziki. Every single item was so good. They forgot my baklava though hence the one star down.

    I've come back here a few more times since my last review; mainly because it's the closest location to me, and let's be real, I love my chicken. I'm someone who prefers healthy, smaller meal portions, and Zankou definitely delivers on that (They offer other, large portioned items on the menu, but this is simply what I like). That said, I really want to point out how much the service has improved for me since my original experience. Tigran (shoutout to you!) has been amazing every time I've come in these past few months. He's taken care of my order with no issues, and even when he's not there, the other staff members have been nothing short of great. I always get the Chicken Tarna in a large container or the Tarna bowl with rice. And since I've become a bit of a regular lately, Tigran and a few of the others have remembered my name and my order, which honestly makes me feel so welcome. I'm really glad I gave this place another shot; now it's one of my favorite quick food spots to stop by.

They have case after case of cold drinks so we picked out a couple of drinks, paid for those and left. It was easy and fast. Enjoyed the yumminess at home. I normally would save a half for another meal but my "Pasadena" hit the spot that I finished it up all at once. Quality bread, meats, cheese, fillings aka all the ingredients...to boot! I ordered a few sandwiches. They were made to order and still fast service. The sandwiches were delicious. Generous portions, freshly sliced deli meats, and fresh lettuce and tomatoes. While I didn't get any, they have a cool selection of wines and beers. They have very helpful descriptions too.

I also have to emphasize that making bread is not as simple as it may seem, especially with sourdough but it could definitely be improved. I bought a "house bread" that claims to contain a percentage of rye and to have a tangy flavor profile. However, the final product seems to me more like an over-fermented loaf than the result of a well-balanced sourdough process. When a sourdough starter is allowed to mature too far and begins to run out of available food, its acidity and fermentation byproducts can become more pronounced, often producing a sharper, more acidic or alcoholic aroma. If that overly mature starter is then used in the dough, it can contribute to an excessively acidic and over-fermented final product. This also seems to be reflected in the crumb. The crumb is neither particularly uniform nor well-developed in a three-dimensional sense. Instead, there are large, irregular open areas concentrated along the edges near the crust. This can be consistent with excessive fermentation and uneven gas retention, although other factors such as shaping and dough tension can also contribute to this type of crumb structure. If the starter being used is rye-based and additional rye flour is incorporated into the dough, fermentation can become more active and the dough structure can behave differently from an all-wheat dough. Rye also has a significant effect on gluten development and gas retention. For that reason, the fermentation schedule needs to be adjusted accordingly, and the dough should not necessarily be subjected to an excessively long cold bulk fermentation. Perhaps the process being used for these breads is something along the lines of feeding the sourdough starter approximately four hours before mixing the dough, preparing the dough, and then placing it directly into the refrigerator for an extended cold bulk fermentation. If that is indeed the process, it could certainly produce a more pronounced acidic profile. However, if the fermentation is allowed to proceed too far, the result may be an over-fermented loaf with excessive acidity and poor crumb structure rather than a well-balanced sourdough bread. In my view, the goal should not simply be to maximize acidity. A well-balanced sourdough bread should ideally combine acidity with fermentation-derived aromas, good dough strength, even gas distribution, and a well-developed crumb structure.
