This is the best bakery you'll find in Orange County! Today was my second visit, and it was just as amazing as my first visit. Seeing Karlo, the owner, passing out samples to people in line and thanking them for waiting is such a cool thing to witness and experience as a customer. The workers here are also so inviting and kind. I'm grateful for having such an amazing bakery in my neighborhood, especially after experiencing so many wonderful bakeries in Korea and Japan, I've longed for something like this in Orange County. Every single item I've tried so far has been an 11/10. The scones are NOT DRY, so perfectly buttery and flaky and melts in your mouth. The croissants are all incredible quality, and the sour dough bread is so decadent, moist, perfectly crispy on the outside, has the most perfect cross section, and freezes wonderfully too!!! I wonder how possible it is for everything to taste so good here? The quality of all the baked goods here are top notch (it's totally worth the $$), I almost don't want to spend my money at any other bakery tbh haha, and I still haven't found anything that beats 61 hundred in Orange County! I would give this place 4.5 stars and would come back again to try other pastries. I was looking forward the most to trying the blue corn masa sourdough bread as I love sourdough and I love corn. For whatever reason I didn't like the flavor. I don't know why but it didn't work for me even though it is so popular. The ube croffle was delicious. It's fresh and crispy with the sweet ube filling. My ABSOLUTE FAVORITE was the rosemary focaccia. Omg it was the best focaccia I have ever had PERIOD. The flavor tastes like onion even though there's no filling. It was savory and oniony. This bakery has a quick take-out vibe, but there's also a small patio for enjoying your pastries with coffee. I visited at 9am on a Friday with no line, though parking was a bit tricky. The three sourdough loaves were impressive, especially the heirloom blue corn with its tortilla-like aroma and soft, spongy texture. The red fife had a nice tang, while the sourdough milk bread was cloud-like but not extraordinary. Unfortunately, some pastries like the ube cruffin weren't available. The well-laminated pain au chocolat had good chocolate distribution, the sundried tomato croissant nicely savory, but the chocolate chip cookie was average. The favorites in rotation for us are: -Rosemary focaccia - it's so soft and airy -Sourdough milk bread - so good for sandwiches -Croissants - being a very frequent traveler to Paris, this croissant is legit flaky and airy -Monkey queen - I had this the first time 3 days after we got it (in airtight container) and it was still so good! Lines are long so won't lie about that and it's all street parking. This morning, went at around 8:15, the line was about 12-15 people deep. Hype hasn't died down lol. BTW, the area is not sketchy - it's industrial and new up-and-coming housing near the Santa Ana train station. Got there half an hour before opening and there was already a line. The line moved quickly once they opened though. The bread here is so beautiful and it's nice to be able to see the staff baking in the back. I got the croissant cinnamon roll, an Ube cruffin, a chocolate scone, and a Monkey Queen. Everything was so delicious! I think my favorite was the ube cruffin but the value buy was definitely the croissant cinnamon roll. And the monkey queen is definitely one of the more unique pastries, like monkey bread with kouign-amann - just layers of sweet buttery laminated dough There's a little bit of seating outside but it's definitely not a bring a laptop and work kind of place. The pastries are on the pricier side but that just makes them more of an occasional treat... And I have to resist buying a dozen at a time... I highly recommend giving it a try! So. Much. HYPEEE! But does it live up to it? For the most part yes, but not everything was a hit for me. I recommend their sourdough, ube cruffin (probably their best thing), Kouign amann (close second), and pandelsal. However, I was disappointed with their croissant and pan chocolate. I'm admittedly a French pastry snob and while these were crispy on the outside they were dense and not airy enough in the middle. The lamination was lacking as well. Also tried their jambon beurre sandwich. The baguette was way too hard and tore up the roof of my mouth. Come early and be prepared to wait in line as they do all out of of most items within. The cinnamon roll croissant was delicious although I felt there was too much frosting. We ordered a flat white and americano as well. Both were average. We took home pandesal, a cornbread muffin, an orange scone and bread pudding. The pandesal was way overpiced at $8 for 4 pieces. It wasn't the usual soft and fluffy ones that we get at another place. I can't comment on the scone and muffin since my kids ate those. The bread pudding was pretty good warmed up. Seating was outdoors and in front in a little patio. Yes it's expensive but I am happy to support a small local business in my neighborhood that is absolutely one of the best bakeries in the area. Came in here yesterday for the first time with my wife and kids and immediately couldn't wait to return. Least favorite was the ube cruffle (couldn't taste the ube flavor at all just taste like sugary cream). We came around 9am on Sunday and wait was approximately 40-45 minutes. The line felt like it moved fairly fast though given the length of the line. There's no parking lot but street parking is available. Excited to find a new sourdough/boulangerie open not too far from us. There was a short line around 9:30 on Sunday and unfortunately a couple of items we were interested were sold out already. However, we still got several different pastries/bread - ube croiffin, chocolate croissant, "money queen", sweet focaccia, and ciabatta. Pricey for sure (~$40), but everything was done well. My favorite was the sweet focaccia, which was perfectly pillowy and chewy at the same time. The croiffin had a delicious ube cream filling and chocolate croissant had flavorful layers. I was excited to try this bakery after hearing so many positive things, but unfortunately I was disappointed in my experience. I came in on a Sunday morning, I expected it to be busy so we didn't mind waiting in line. I think the line set up was very awkward, only a few people are allowed inside at a time so by the time you walk in they immediately ask what you want. For a first timer, this felt incredibly rushed and overwhelming. It would be helpful to add a QR code menu outside to see what's sold out/what items are still available etc. Staff could be more welcoming, it kind of felt like they just wanted us out as fast as possible. I ordered the japanese sourdough milk bread, 2 ube cruffin, and 1 scone. Totaled up to almost $35, so definitely on the pricey side. I didn't really like the ube cruffin as much as i would've liked. It's overly sweet, with sugar on the outside and marshmallow on top. Ube filling was good overall, and texture was just right. I think it could be better without the marshmallow, it felt too sweet by the time i got the the ube center. I honestly felt they could amplify the uber flavor even more. The scone was pumpkin and cranberry flavored. Neither of us could finish it, it felt like an odd combination. The japanese milk bread was good but it wasn't anything special. I've been waiting awhile to try this bakery after seeing so much of it on social media. Now that they've extended their opening hours to Thursdays and Fridays and some of the hype has died down I paid a visit. Showed up on a Thursday morning right before opening and there were about 10 people ahead of me. Not bad. Took about 30min to get through the line, order, pay and leave. The employees were really lovely. Very friendly and all smiles. As for the items I picked up: 1. Blue corn masa sourdough - This was the highlight for me. It's so simple yet so unique and delicious. The pillowy texture is just so perfect. If there's one thing you want to pick up it's this. Even by itself with some good butter it's awesome. A simple joy. 2. Sun-dried tomato Oaxacan cheese chili garlic croissant - Also highly recommend. Chock full of flavor and very savory. 3. Croissant - Pretty standard. Nothing extraordinary. If you like croissants grab one but otherwise can skip. 4. Ube cruffin - I was really looking forward to this because it looked amazing but if I'm being honest it was much too sweet for me. I ate half and probably would have only enjoyed a quarter of it. Personal preference though so if you like sweeter things you'll enjoy this. It's well made. 5. Monkey queen - felt the same about this as I did the ube cruffin. Too sweet for me. It is very dense. I know it's supposed to be a cross between monkey bread and a croissant. First order of business: Yes, the wait is worth it! Plenty of street parking with a little bit of a walk the later you come after open. Focaccia is hands down the best, with a fragrant rosemary and fluffy texture even with the mini pockets of olive oil throughout. As far as pasties everything is done more on the crispy side; something I prefer, but if that's not for you then maybe go for something more cake like and less flakey. Came on a Thursday at 9am. From time of arrival till the time I paid, it took me 17 minutes. Parking is very limited on the street, but cars are constantly leaving, so I got a spot within 3 minutes of arriving. Spent $84 to try out a some items. Beurre Disigny AOP Butter - decent, but I don't think I'll purchase it again. Rosemary Focaccia - fluffy and good texture, but needs a little bit more flavor. Heirloom Bluecorn Sourdough - crunchy on the outside with a nice bouncy texture on the inside. I would buy this again, but would love if it was a bit more sour. Butter Croissant - fantastic. GET IT! Pain au Chocolat - skip it. Chocolate Chip Cookie - ok Monkey Bread Croissant - good chewy, crispy texture. I'd get it again. Ube Cruffin - very good. Yummy filling and topping with and great pastry. The 4 items we got were all yummy. Croissant dough is light and flaky, and buttery. The monkey bread croissant looks deceptively simple but was actually very good- crisp and caramelized on the outside, buttery and just the right sweetness. Next we tried the ube cruffin. I felt the filling could have had a deeper, more pronounced ube flavor, the mallow-like brûlée topping was pretty but not needed as it added even more sweetness to the already sweet ube custard inside. Third was the pain su chocolat- on point. Buttery, flaky with bits of dark chocolate, it was one of my faves. Lastly was the almond chocolate chip croissant. It was tasty with a layer of almond paste enveloped with the flaky croissant dough. Overall this was a great new discovery for us. It was delicious but on the pricier side $6-7/ item. I got the sun-dried tomato pastry with Oaxaca cheese and did not super enjoy it. The savory filling was great and had great flavor but the Oaxaca cheese didn't bring much to the pastry. There wasn't much of a taste to the cheese and it made the pastry EXTREMELY oily. Instead of biting into a nice, buttery pastry, it was soggy and greasy. The pastry was definitely flaky and fresh. The gochujang roll was not as flaky because of the caramelized gochujang so it held together but was a tad stale. I personally thought the pastry was overly sweet and didn't have a great balance like the first one. The gochujang glaze was already sweet on the outside but the filling was sweet onion. My wife, daughter, and I stopped by 61Hundred Bakery in Santa Ana last weekend, and wow -- what a find! We tried a few things that immediately caught our eye: the cornbread muffin, focaccia, sun-dried tomato danish, chocolate croissant, and the blue corn sourdough loaf. First off, the focaccia deserves its own shoutout -- absolutely addictive! Perfectly soft, flavorful, and so well-balanced that we couldn't stop picking at it. The cornbread muffin and pastries were all spot on too -- rich, fresh, and clearly made with care. Every item we tried would easily get a 10/10 from us... except for the blue corn sourdough, which didn't quite live up to the hype for our taste. Stopped in this morning for breakfast and some treats. Do not let the long line turn you away! The closer we got to the door we were greeted with the delicious smell of warm fresh bread. We ended up getting a mix of items. Several items were sold out but that only insured we will be back! We got the crescent style cinnamon roll. So delicious. Crispy and lots of cinnamon.
