    05/24/2026 We had searched for the highest rated chocolate chip cookies around Seattle, and this bakery was on many lists. We stopped here around 9:30am with plenty of pastry options. Got a cookie and a twice baked almond croissant. There is nowhere to sit inside, but we had to run anyway. Both items were pretty good, and I would go back to try others.

    Bakery Nouveau has exploded in popularity over the years, with locations in West Seattle, Cap Hill, and Burien on account of their plethora of creative sweet treats and artisanal coffee concoctions. It's so popular that you might even run into your ex there on a Saturday stroll. If you scroll through the pics here, you'll find some truly genius (or even odd?) baked goods that they're handing out daily. I even caught a glimpse of some sort of pistachio flavored shoe, not sure who gave the green light on that one. If you're looking for a decadent dessert, then you've found the right spot. You may have to wait in line if you come in the morning, but the sights and sounds of Cap Hill will keep you entertained while you're day dreaming about your Kouign Amann. I would advise coming here with a plan, otherwise you may fall victim to a case of what I call Bakery Glass Indecision. The moment of panic that sets in when there is an extensive array of beautiful cakes in front of you, and a hangry group of patrons behind you. However, the good folks at Nouveau are more than willing to help you find that special something to take home. I elected to go with the carrot cake, which has always been a personal favorite of mine. As you can see from the picture, she is truly a goddess. The cake has the perfect texture in all of the right places, but was just a touuuuch too sweet for me. Still a great choice though, I would be happy to have it again. If you're in Cap Hill, it's worth a stop!

    Overall, really enjoyed the cake we ordered here for a celebration! Tart and sweet balance with a good mix of texture. My only feedback: - With the white chocolate bottom (nice thin layer) a bit more tartness would be nice - pick up alerts and reminders would be helpful (to ensure timing and be aware of progress updates) Didn't get a chance to review the bakery, but would love to go next time.

    Really cute place, just better on photos than taste in person. The sandwiches were extremely basic and overpriced for what they were. Same with the pastries, good but not worth the price. Good service though, they were all very friendly. I wouldn't return but it was nice to try.

    Walked into Bakery Nouveau in Capitol Hill and immediately got distracted by the STUNNING sandwich display. The kind of case that makes you press your face a little closer to the glass like a kid at an aquarium. Ordered a dirty chai and an egg salad croissant. Let's talk about that croissant. Super crisp on the outside, soft and buttery inside, with egg salad that was creamy but not too heavy. It was DELICIOUS YALL! Service was quick, the space was bright and inviting, and the whole experience started my day perfectly! Capitol Hill is lucky to have Bakery Nouveau!

    Bakery Nouveau allegedly has the best almond croissant in the city so I was super excited to finally come and try this out. I was planning to eat it in store, but the bakery actually does not have any seating. All the sandwiches and pastries in the casing looked so good! We ended up getting the almond croissant and the German chocolate cake. Here is where it goes downhill.... I asked for my croissant warmed up, and it came out so crunchy. The flakiness and airiness of a croissant is completely gone. I'm not sure if they heated it up for too long or if something went wrong during the process? I also drove 5 minutes home but I don't think that short of a time would've impacted the croissant. But I would not suggest getting your croissant heated up. The German chocolate cake is very rich and dark and the outer casing with coconut is pretty good. I also got a 12 oz latte. Base price is $5 which is not bad nowadays. I opted for soymilk and vanilla syrup which added $2 extra to my drink. I was also standing and waiting for my drink while the workers were just chit chatting for a good minute while my latte was sitting in its cup waiting for ice. All in all, maybe I have a one-off experience, but it did not live up to its hype for me. I will consider coming back and retrying the almond croissant not warmed up but it's not at the top of my list to try anymore.

    This is a good Bakery with amazing desserts (they also have sandwiches and bread). The staff are very fast and efficient, and I enjoyed every dessert I purchased.

    Super sad I didn't get to try an almond croissant, since it's by far their most popular menu item with many variations (our cashier told us they rarely run out, but I guess after 10AM on a Saturday, we just got unlucky). Ended up with a chocolate croissant, which was flaky on the outside and buttery on the inside, but a bit of a disappointment in terms of price to taste ratio (and perhaps I just wanted that almond croissant... next time!).

    This place needs to work on customer service STAT. There is so much going on in the store that it is frantic. I asked what they were known for and the girl said "everything" I ended up getting cake and we also get an Apple strudel. The cake was so dense and dark it was inedible the strudel was only good thanks to the giant sugar chips on top. After research I found that they are known for their pastries. glad I got to waste my money on this place.

    Such delicious pastries!! Only caveat is that the pastries are a bit on the pricier side. Highly recommend the savory mushroom danish with bechamel and caramelized onions. The junction croissant was tasty, but a bit rich, and set us back $14, so would not get it again. But 5 stars since the mushroom pastry was so flavorful!!

    Bakery Nouveau is a cozy, charming spot in Capitol Hill that nails the perfect balance of comforting and elevated. With a tempting menu of pastries, breakfast sandwiches, and thoughtfully crafted coffees and teas, it's the kind of place you'll want to come back to again and again. We tried a few things and everything was amazing. The cinnamon roll was next-level -- full of warm cinnamon flavor with a surprising (and delightful) hint of orange. It added this bright, unexpected twist that made it totally unforgettable. Pro tip: ask to have it warmed up. Game changer. The chai was brewed from real tea (not syrup!) and mixed with oat milk for the creamiest, coziest drink ever. So flavorful and perfectly balanced. And then... the star of the show: the smoked brisket sandwich. This beauty came loaded with smoky brisket, soft potatoes, and melted cheese, all tucked into a buttery, flaky croissant. It was savory, rich, and basically everything you could ever want in a breakfast sandwich. If that description doesn't make you hungry, I don't know what will. Bottom line: go here. You will not regret it. This place is a total gem.

    This is the bakery of my dreams! They have everything I love, from cakes, croissants, sandwiches, macarons, and other amazing pastries. I got the chocolate croissant and an almond croissant, and it was so flaky and delicious. The fillings are not too strong and not too sweet. We also got the sandwiches, the Italian roll is my favorite which has salami and provolone. They also have baguettes, all the delicious cakes such as chocolate, tiramisu, and seasonal cakes such as raspberry spring cake, and lemon spring cake. I also ordered their vanilla latte and it was delicious. This place reminds me of the bakeries in New York, fresh ingredients, so many options. Highly recommend!

    No delivery currently, but they have designated pick-up areas for call-in orders.

Chocolate Cream Hazelnut: 4/5 - Really good. The bread is soft, and the hazelnut flavor is delicious, but the filling had more of a pudding like texture. Beef and Cheese: 4/5 - Savory and delicious. The filling reminded me of a beef empanada. Smoked Salmon Pate: 3/5 - I didn't really like this one. I enjoy smoked salmon, so I thought I would, but the flavor just wasn't for me. The prices are on the expensive side. I'm used to paying $3-$4 for pastries at Asian bakeries in Los Angeles, so spending $7-$8 per pastry took some getting used to.
