I walk by this place everyday on my lunch break but the line is always super long so I never go in... I finally went on Friday and prepared to wait forever but the line moved super fast! It's never too busy during dinner time where they hurry through the pizza making (Fenway) and the pizza makers themselves take their time and are very friendly (Downtown). And the BU one just has it hiccups as being the newest one. Maybe I shouldn't be writing this review in case this one becomes too popular but people should know. I've given it some thought and I've concluded that I wouldn't have sex behind a bush. It doesn't matter how much fun it is, I'm not adventurous enough to do it in public. You can make it work with some candles and rose petals. A sidewalk grate? Nope. A tent? Yes! One of my favorites. With the zipper pulled up and bear spray nearby. Empty parliament house? Nope. "All those in favor of missionary, say aye!" Tree house? Yes. Put down a mat first. Or risk splintery taint. Mosque? If you can keep it up in any religious building, you're god himself. Warehouse? Gray area. Not stimulating and very dry but if your chick likes manly men who lift things, it could help. Catching my drift? Pizza is the same way: The toppings get the attention but the dough and the sauce will make or break the pie. The sauce and dough at Blaze are among the best I've had. That and the fact that you get a wide choice of ingredients are what push this into 4.5-star territory. Let's go through these in the order that every customer does when they build their pizzas. THE DOUGH The pizzas are cooked in a large oven at screaming-hot temperatures just like at Crush or Oath, but the finished dough is perfect here. Crush's is a little on the dry, floury side and Oath's is just a tad on the thin, greasy side, though the latter is pretty good. Blaze's dough is light years better than your average chain's pizza crust which, in comparison, is like chewing on a sandal. It boasts a friendly firmness on the outside, a pillowy pliability on the inside, and retains just enough moisture that it isn't powdery. It makes all the difference, as does the sauce. Their spicy red sauce is the best sauce I've had on a pizza in a long time. But in case you want to mix things up, there's a pesto sauce and an Alfredo sauce too. THE SAUCES When it comes to sauces, Blaze is like a democracy while most other pizza joints are autocracies. There are four sauces to choose from here: Spicy marinara, regular marinara, alfredo, and pesto. Even if you survive under the autocracy of marinara, no matter how delicious it is, the mere knowledge that you have other choices adds a reassuring amount of breathing room to the experience of eating pizza here. Most people prefer one sauce over the others, not unlike political parties but having other choices at all is the point, even if you never deviate. The fact that pesto is even available is the reason I'm going back to Blaze. MEATS & VEGGIES "Liberty is the soul's right to breathe. Without liberty, man is a syncope." ~ Will Hunting on the stand before he got grilled by that judge that looked like George Washington with a porno mustache. Multiple sauces and plentiful ingredients are my belt-buckle's right to breathe. Barring exotic ingredients like gold flakes or fig jam, Blaze offers practically every ingredient you'd want to see on your typical pie. They're fresh and well-prepared. So is the pepperoni. I could tell even from a distance because it still had a hue of pink about it as opposed to the red-brown, petrified circles you get in some places. The salami looked fresh too. The veggies had a ton of flavor. I had onions, mushrooms, and olives, my favorite combination of veggies on a pizza, and they were great. I'd be cautious with the roasted garlic, though. Roasted garlic is absolutely delicious by itself primarily because most of the harshness has cooked out and left behind a beautifully evolved sweetness. There's also a degree of caramelization on the outside, giving the surface of the clove a nutty-brown texture and flavor. And it's soft on the inside! Pure heaven. But it's still strong so if your pizza is on the salty side, it may not fit in that well. I wasn't a fan of it on my pepperoni not because the flavor contrast didn't work but because there was already enough flavor on my pie. The garlic was overkill. But I'd strongly encourage using it on other combinations such as pesto, chicken, and black olives. Or Alfredo and meatball. THE BAKING I don't know how long this is supposed to take and I don't care because it was quick. It's quick by any standards considering that the employees have to move constantly as customers stream in. It's like an assembly line leading straight into our fat faces. And I give them credit for doing this efficiently. Blaze's model achieves the goals of a perfect democracy: We, the people, are in control. Yes, big brother helps us put it together, but we dictate the direction our pies are taking. We have the luxury of choices but we also take responsibility for them. I love this place. I used to hate pizza, but this place makes it so enjoyable because it is customizable. Some days. I can have an all white bacon pizza filled with cheesy goodness with ovalini, ricotta and even vegan cheese or I can be a healthy woman who ran a 5K so she treats herself to a Cauliflower crust with spicy red sauce with vegan chorizo, cheese and spinach topped off with some salt bae pizzazz, the latter not so often. The dough is thin, a high rise is available, and you have a pretty big range in selection of what you can make on your pizza. Top it off with some different sauces (bbq, ranch, pesto or even some evoo) and arugula and you won't regret it. There was a short line but the team is efficient here: 1 guy pressing out doughs and 3 people in the assembly line for toppings, 2 guys handling the pizza oven. I liked how I didn't feel rushed in adding whatever I wanted for toppings and my pizza came out great! I really enjoyed it and the drinks. Was in the area last night (Friday) with a friend. We were both pretty hungry and saw the place had good reviews so we thought it might be a fun idea for dinner. The place was pretty busy when we walked in, after waiting in line a few moments we reached the front and were able to start placing our order and regret choosing the place. I have never encountered SO MANY rude and unhappy employees. Neither my friend nor I had ever been to Blaze. Pretty sure we will NEVER go back. When I get to the first lady who asks for your name and crust type, I tell her this is the first time I've been here so I'm not 100% on the options and how it works. She grunts and ignores me. Get to the second woman, who puts the stuff on your pizza. She clearly hates her life, hates her work, and hates me. I want to try the sauces, since I've never been here, so I ask for traditional tomato on one side and alfredo+pesto on the other. She shakes a pesto spoon on the pizza and it all comes out in a huge gob on one spot. She goes to move on to the cheese and is irritated when I ask her to spread it out so that i'm not getting the whole mound of pesto in a single bite. She shoves me so fast through the cheese and meat toppings (I'm talking 10 seconds tops) I don't even get a chance to see what my options are. I have to ask her to add extra pepperoni too, because there were literally 5 slices on the entire pizza. She glares at me again. She doesn't even give me the chance to ask for vegetable toppings-I have to call after when I realize that it's still her station and no one else is handling that side in order to get the rest of my toppings. More hateful looks. Then they shove my pizza into the fire stove and its out shortly thereafter. They never gave me my receipt. I asked for water and had to request a water cup 3 times before they gave me one. I was pleasant and calm throughout all of this, but both my friend and I were blown away by how absolutely unpleasant the employees were. I understand it is busy, but I have worked fast-paced, line out the door, jobs too and could still keep a smile on my face and give decent service while also moving my customers or guests along. SERVICE MATTERS. The food was nowhere near good enough for this to be forgivable. Both my friend and I left wishing we had walked the extra half mile to the other food place we had been considering or just taken an Uber to Harvard Square for food instead. Being a control freak and wanting to create a delicious pie just for my own tastebuds, I go for the latter. I always start with the spicy red sauce - slightly sweet and all sorts of Italian spice. From there, the options are limitless and better yet - you can put as many toppings on your pizza as you want! From start to finish, the entire process takes about 5-7 minutes. Had my first foray into the world of make your own pizza today, and it was delicious. Even though they only opened a couple days ago, there wasn't a huge crowd at 2pm. Everyone I dealt with was super friendly and addressed me by name which was great. I was in and out in about 5 minutes from the time I ordered until the pizza was in my hands, so definitely can't complain about that. I'm sure that at busier times the wait would be a tad longer. The fact I can get as many toppings as I want and pay the same price relieves all of my anxiety about whether that extra pepperoni is really worth it. However, I also love that there are calorie counts on everything, bringing back the aforementioned anxiety about whether that pepperoni is reallllllly worth it (yep, every time). Blaze was awesome enough to give out one free pie to each person in line for their a grand opening, on a Friday afternoon. It was pretty packed but they moved fairly quickly. They are located right before (next to) Cambridgeside Galleria by Lechimere - quite convenient! Parking was pretty easy for us (meters available as well as the mall lot). We both built our own pizza. I made a pepperoni-sausage-spinach pizza with spicy red sauce and mozzarella. My other half had more meat and more veggies. When we first looked at the pizza, it looked like they didn't put enough sauce or enough toppings and cheese. I had fairly low expectations. When I ate the pizza, it was very good! My first experience here was great, but then after eating here 5-6 times, I found them very inconsistent the way they do business here. Things can go wrong so easily when they get too crowded. I know others will dock stars for that but it's the nature of an awesome new restaurant opening in a busy location, if anything, good for them! I swear the sheer amount of toppings is overwhelming (in the best way!) that by the time it was oven-ready, my pizza was more of a pyramid than a pie. I rarely post positive reviews for chain places especially when they can be a hit or a miss. For the most part, I have nothing but great things to say about this place. Occasionally they mess up when they get really busy and my experience had been more or so great except for one time where they totally got my pizza wrong and gave me someone else's. The management was nice enough to take care of me and a friend the next time we visited which I thought was wonderful. The toppings are fresh, the staff are friendly and the choices are unlimited for the price you pay. I don't think I've had such a flavorful pizza in my life. The dough is amazing, omg!!! their cheese's are so fresh, perfectly sharp, perfectly creamy. The bbq pizza had crunchy banana peppers and onions, and a bbq drizzle. I added bacon to compliment the chicken it comes with. Me and my friend nodded to each other after ever bite. Oh man..... Service was great, but you could tell it was super scripted, like they HAD to be super friendly in case of a secret shopper or what not; that part seemed disingenuous. They explained what their product was all about in a friendly fashion and before I knew it, my pizza was hot and ready out of the oven..... Super fast!!
