There are 3 indoor tables, 3 outdoor tables, and a long counter where customers can stand. I ordered one of their special signature drinks, an iced mint cold brew. A look into their pastry case led me to also request a raspberry danish. The single person behind the counter who was taking orders and working as barista was not exactly charming but it was understandable as she was slammed with multiple customers right when I arrived. My order was presented within a couple minutes (she was great at multitasking!) and I sat out on the patio. The iced mint cold brew was refreshing and was like drinking a box of Campfire Girl mints, both chocolatey and minty (sidebar: I am so sad that, as of last year, those mints are no longer made). It essentially was a mocha made with coconut milk and mint syrup; I really liked it. The pastry was rather dry but the raspberry filling was vibrant in flavor and not overly sweet. The vibe is more of a place for hotel guests to have a business meeting or to grab something prior to dashing off to a corporate event rather than just a place to hang out. But it's also a great option if you are near the Irvine Spectrum and just want to stop to quickly get a coffee drink and sit for a short break.

I mostly stick to lattes, but their signature and seasonal drinks are worth branching out for. The coconut cloud matcha in particular is incredible. They also have an app with a loyalty program, which is a small but appreciated bonus for regulars. This is actually their flagship location, and they roast their own beans on site, so you can watch the roasting process happen while you sip your drink, a fun detail most people probably walk right past. INC Coffee Roasters on Portola Parkway, is located inside of the beautiful Hoag building in Foothill Ranch. Who would've thought they'd have a coffee shop in there? Not I, that's for sure! I'm glad they're there though. I come out from an appointment and go straight to the coffee bar. From the fall seasonal menu, I ordered the maple pecan latte. It was so good. By the time I headed over for a drink though, there wasn't much pastries left so I had to head home with one hand empty. Bummer. Service is usually quick and they don't seem to get very busy, at least when I'm there. Price is a bit on the higher end, however, you can taste the difference with that first sip. In fact, it probably made finding my car it a bit easier because of it. Once entering the main shop on the right (see picture) the demographic leans more toward UCI students with laptop plugs galore, Korean mom's meeting up with pre-school children coloring in the corner, and your coaches for the local HS sports teams taking a quick break to refill their 2nd or 3rd cup of coffee. In terms of coffee, I tend to lean on the traditionalist side and like my drinks more coffee forward. This time I ordered a cortado that was just the perfect amount of espresso forward accompanied by milk that did not taste overly warmed/steamed. It may be a simple drink, but Roosevelt did it well. For those who aren't as pompous as me about my orders, I was still very impressed by the Asian and Asian-American takes on traditional drinks and pastries. Count me in as a fan. Outside the coffee, one of the tell-tale signs of a good shop is the baristas. Every time I come in I feel like the shop is run by not just some of the friendliest staff, but just the friendliest people I have encountered in the county in general.
