Amazing experience at Carbone last night, complete with a new take on the classic Italian steakhouse decor and an oldies soundtrack that was hit after hit of great music. The waiters are very friendly and attentive. Every course was excellent, with the exception of the tableside Caesar... This was missing that briny spicy bite you get from the fresh anchovies. And here is the funny thing, it had anchovies in it but they're tossed in there whole, not mascirerated along with the dressing emulsion. I think this is what was missing from the dressing. Another peculiar problem I had to bring to the attention of the waiter was that he reused the wine glass he used to pour a sample for us. It still had the sediment in it from the bottom of the wine glass he poured the sample from. And he seemed annoyed that I called him out. Oh well, he should have known better. read more

Great food, great drinks, great ambience, great service!! I have been here twice and absolutely loved each visit-- I would come more often if it wasn't on the strip (as a local I only come on the strip when necessary.) I just have to start off with my favorite dish which is the Spicy Rigatoni. This pasta is sooo good I literally left craving more so when I came the 2nd time I knew I had to have it again! I've tried a bunch of other different options on their menu from the bread, salami, tossed salad (that is prepared in front of you), the pork chops, the chicken marinara, etc and not 1 thing disappointed me. I recommend to save room for dessert (preferably the banana flambé) because not only is it delicious but it's also a great show to top off your meal. They also serve the rainbow cookies with limoncello and that limoncello is way too strong for me but the cookies/bread is good. This place is great for a date night or even a group of friends. Lol, f this place. We had reservations for 8:30pm on a Friday and we waited over 45 mins. They told us they were clearing the table for 45 mins. We continued to check in to make sure they didn't forget about us. No they didn't. They just didn't care to apologize either. They have no available seating outside. So imagine, it's vegas, it's a night out, and everyone has their heels and dress shoes on and they keep everyone standing for an hour. We finally get in and boom, within minutes my wife gets a waiter spilling water on her, her phone. This places management is a joke, so if you're the general manager I invite you to outreach to me. Food was sub-par, 2 stars for ambiance. So many other places to try in LV. We fell for those stupid TikTok's that say "must try while in LV". Didn't care for it, won't be back. We got a reservation and was seated right away with the hostess letting us know what was good on the menu and even offering different types of drinks to choose from. I'm giving three stars because of the service. The whole waitstaff team was phenomenal. Other than that, everything was very "Meh." We arrived a couple minutes early of our reservation and were told we would still have to wait 20/30 minutes to be seated. There wasn't much room for sitting so we, along with other people waiting for their reservations, were just awkwardly standing around by the host stand. The bar is reservation only, so there's also not an option to grab a drink while waiting. For how expensive this place is, it seemed like an odd start to the night. We were seated and brought out some snacks and got our drink orders in. I noticed right away that a lot of the plates they use are broken/chipped. I'm not joking when I say that every appetizer plate in front of us had some sort of issue... We ordered the Caesar salad and honestly this was the BEST part of the dinner. We should have just gotten two of those, honestly. My friend got the spicy rigatoni. Be warned!!! It is VERY spicy. She couldn't even eat it. I got the linguine and clams which was definitely different than anywhere else. This is dish was also very spicy. I can't do spice and I guess they put Serranos or jalapeños in it? I came here with a group of old friends for a Friday night dinner. The restaurant is beautiful with flowers, a gorgeous bar and comfortable elegant seating. The music was a perfect volumed mix of NY hip hop classics by Biggie, Nas, Tribe Called Quest, Eric B and Rakim: the restaurant closed to Ice Cubes Today was a Good Day. Loved it. The service was super friendly and the waiters felt like they were plucked from one of the 5 Burroughs becuse they spoke fast , knew the menu and had strong opinions: awesome. Not sure what all the hype is about. Our group was seated in the bar area, it's very loud so we weren't able to have a conversation without yelling. Our server was awful and clearly not wanting to work that night. I asked him what the lamb chops cost as they are MP, he said $83 or $84, turns out it was actually $98 for 4 chops. 2 were cooked as ordered and the other 2 were cooked well done. I told the server my husband and I wanted to share a Caesar salad, when he mixed the salad, I asked him if I could have an extra bowl for my portion, and he said no. Then, after our appetizers, the server told us it would be 40 minutes for our dinner to be done, and he never came back to the table to ask if we wanted another drink. During our dinner, our server never came by to check on us. The salad was good, our friends liked their veal Parmesan and rigatoni. Another friend felt ill after her mushroom pasta, and my lamb wasn't very good due being cooked to the wrong temp. Maybe it was an off night? SERVICE FAILURE! We were met by our "captain" James (bald) and experienced rushed verbiage and a dismissive attitude and then he just disappeared! From what my wife noticed his attention was on a fellow pretty "server" helping her rather than giving us attention?strange, at least the busser was sort of nice. The ambience is really nice and romantic. Perfect for date night. We got the spicy rigatoni and the veal. The rigatoni was delicious and we were recommended the veal "best in Vegas" but was a bit disappointed for the $89 price tag. However, I'm not a veal expert and have only had it a few times in my life. Otherwise the experience was great. The bread and cheese they bring out complimentary before the meal with tasty. Julie and Bernie were so incredibly assertive and quick. They really took special attention to each guest and went the extra mile to ensure a VIP experience. Julie recommended the Gorgonzola salad and the tortellini. Both were spectacular! The Gorgonzola salad had shallots and chives along with a nice light Gorgonzola crumble and dressing. I wasn't too keen on the meat ragu because it was a bit heavy for me but the tortellini melted in my mouth. Next time I would order the spicy rigatoni. I had it last time I was here and loved it! The complementary various breads, cheese, and pickled cauliflower were excellent! And the carpaccio was unlike any I have had--light arugula, mushrooms, truffles, garlic, melts in your mouth! We also got linguini and clams! To die for! So fresh and the pasta was perfectly cooked al dente. Julie recommended the lemon cheesecake and the hazelnut torte. Bernie recommended the ameretto gelato. The lemon cheesecake was so airy and light. Really just okay overall. I like the vibe but it is loud inside. The prior night we had eaten at Mastro's Ocean Club at a similar price point and the service there made Carbone look pedestrian. I feel like they may have been understaffed. I certainly did not feel full attended to. Even the wait for the bill was significant. Anyway the food. First don't order the veal parmesean. It was honestly like 11 dollar truck stop diner quality. Others in my party agreed. It wasn't good, and definitely wasnt 69 dollars good. The octopus appetizer was lovely. Others really loved the carpaccio. For the main courses we shared again the veal was a travesty, like TV dinner quality. The dover sole picatta was good, and the others raved about the lamb chops. The spicy rigatoni pasta course was excellent. Definitely the best part of the meal. The desserts were good as well. Maybe this deserves more than the 2 stars I'm giving them? Maybe they do. But here is my thought, at this price point you can't phone it in on service and you cannot phone it in on any dish like that veal. Also it was loud in there, the music was turned up too high, and there was gum stuck to the bottom of my table. I want to be clear, the service was good, at a Red Lobster I would have been pleased but even there I would have been annoyed at the large wait for our check. But this isn't Red Lobster. At this price point you need more service. And yes it is really special how the waitstaff plates at your table. I dig that. However it takes a lot of time and it means you probably need fewer tables per server. So, minus the veal, the food was good, but the overall experience I think was not. However the food overall while good was mediocre compared to other high end Italian restaurants. I've been trying to get a reservation here since May 2021. Yes, it's that serious. I had to come to the world famous Carbone. The service is impeccable. Everyone is so delightful and accommodating. The menu is very straight forward. Not a ton of selections but what's available is the, "best of the best." The complimentary breads with peppers and fresh Parmesan truly hit the spot. I'll be honest, I heard so much hype about this place I didn't want to like it. But the interior and ambience is beautiful and the food was absolutely delicious. The waiter was so friendly and gave me all the vegetarian options. We ordered the eggplant and zucchini scapeche (sp?), the caprese salad, spicy rigatoni, and also the corn tartufino (sp?). The caprese was incredible - SO FRESH and the mozzarella was made in house. They also gave us a bread basket and the grandmas focaccia was seriously tasty. The spicy rigatoni was also very good - creamy and rich. The portion size was small but we were told that ahead of ordering. The zucchini starter was also very tasty. The one thing I wouldn't reorder was the corn dish - it was a LOT of truffle on top and we ended up not even eating it. The dessert however is worth it. Probably the best Italian restaurant I have ever tried in the US. Having spent a month in Italy, I've become quite critical regarding Italian food. Although skeptical at first (considering the high tourism in the area) the food and experience did not disappoint. We tried the meatballs (a recommendation made by our waiter) and they were quite flavorful and filling. My boyfriend and I each ordered the spicy rigatoni vodka pasta which was AMAZING. Probably our favorite part of the meal. The drinks also did not disappoint. Overall, we will definitely be coming again (if not every time we visit Vegas). From the ambiance/vibe, to the old school music, which turns into gangster rap at 11pm, but most importantly the quality of the ingredients. Hands down one of the best meals I've ever had on the strip. I loved that they give complimentary Parmesan cheese as soon as we are sat. The bread basket comes out piping hot. Huge points for that! If you're a fatty like me you'll take a piece of bread, butter it, stick some cheese and salami on it and it's magic in your mouth. The pickled cauliflower was surprisingly very yummy and the perfect relief before starting on our appetizers. We ordered the Caesar salad (because they make it table side and it's just a must), the chopped salad, and caprese to start. Caesar salad was AH-MAZING! But I have to say the chopped salad was 10x better and super refreshing. The caprese was probably the best caprese I've ever had. The tomatoes were so sweet, they tasted like they were picked right at their peak and cut then served to us. For our main dishes we got the Spicy Rigatoni, Dover Sole, Steak, and Veal. It was all phenomenal! As far as desserts go, we got the lemon cheesecake and that first bite I took I felt like I died and went to heaven. Carbone you seriously hit it straight out of the ballpark. Everything, I tried was tasty and fresh and I could tell it was fine dining cuisine. However the rest of the experience was quite underwhelming. The presentation was lack luster. The decor and massive tables didn't make sense to me. Worst of all, it took almost 90 mins to serve us our food which was ridiculous. We are hotel guests with children, meaning it's very tough to make reservations between pool & kids nap time. Not just Carbone but all the restaurants were booked. Meaning several hotel guests are unable to dine. Must go else where. We end up taking a 5 mins drive to Ferraro's, they got us in right away. Good was fantastic as well. I hope somehow you can make it more accommodating towards hotel guests (especially w children) & players platinum & noir. read more

Wow. Carbone definitely lives up to its hype. Service. Good. Everything. We made reservations a few weeks in advance for Carbone and I was definitely looking forward to it. We were seated right away and the waiter gave us a few recommendations. We ended up ordering all of his recs. + Bread Basket - the garlic bread was my favorite. This was so good and the pizza focaccia was so good. + Caprese Salad - 10/10 - they only serve this for about 9 weeks during the summer. They get tomatoes from Napa and serve it then. It was fresh, seasoned well and everything you'd want it to be. + Spicy Vodka Rigatoni - 10/10 - the pasta is cooked perfectly al dente and has the perfect amount of spice. So good. + Veal Parmesan - 10/10 - another dish done perfectly. I've never had veal parm before and I don't think I can have it anymore after having it here. My only complaint is that they don't have one in LA. Our server was amazing and so nice. We made our return to Carbone for another special occasion after having such a great experience and meal the last time we were here. I can't say any part of our trip this time matched our last experience. Our wait staff didn't visit our table frequently, so after I finished my initial drink, I was never offered another. We had the tableside Caesar salad again this time, which last time was incredibly delicious. This time we could not even finish eating it because the amount of garlic in the dressing was so over the top. So much over the top that one of our guests had to leave dinner because it made her feel ill. We had to take their entrees to go with us. I grabbed one of their mints (instead of a cocktail, because I never was offered that) and it helped but I was still tasting garlic even into the next morning despite all of my best efforts. After we let our waiter know about the garlic...he never returned to our table. He had the busboy handle us instead. The manager on duty came over and seemed bothered by us rather than concerned. They removed the salad from the bill, but it was the service around the event that was underwhelming and really disappointing. Other than that Caesar debacle, the food we ordered was good as always. We had a show to get to at 9, and with the 2 hour limit they sent on our reservations, we thought it would be perfect. So, we asked our server if the food would be here soon, and to check on the steak we had ordered (pasta did not arrive yet either). we told him we had a show at 9, hoping it would make things a little faster. However, he canceled both our pasta and steak order when he went to check on it (without asking us if we wanted to cancel) and came back and told us it would've been another 15 and he just canceled it and gave us the bill. First I must tell you that the ambiance and music are my favorite oldies unbelievable. ! Couldn't stop singing.
