Loved Carbone! The spicy vodka was just so goooood. The food, ambiance and service lived up to its hype! From start to finish our server was attentive and the service was just great. This place was everything I expected and more! After about a year, and finally linking my AMEX Plat Card - we were able to snipe a reservation at 11:30 on a Thursday. Checked in about 11:15 and were told to wait by the bar while the table was being prepared. It gave me Arthur & Sons vibes with the bar, the floor and the overall feel of the place. We started with the table bread and gabagool, along with a bowl of pickled cauliflower - which I've never had. We ordered the mozzarella and prosciutto which is cut live at the table, with the cheese milk drizzled over the meat. So very good. I have a bad habit of taking spontaneous trips for food based on hard to get reservations and this was one of them. I again booked the dinner before I booked the flight, so my expectations might have been blown out of proportion all things considered. Is it fair, maybe, maybe not, but I've had their Spicy Rigatoni and you haven't. JK. Its an Italian Americans version of what Italian is. Italian menu, wines, pastas, salads, antipasti (except the Chinese Chicken) from decor to service, menu. So they did pay some homage to the flavors that influence the city and not the cuisine, but not much because the Chinese Chicken doesn't taste Chinese or even Chinese American. A breaded fried cutlet with sweet and sour soy sesame glaze. It laked ginger or garlic 2 Chinese staple flavors. Great flavor, but not Chinese. I'd rather have had Hainese Chicken. Spicy Rigatoni is made famous for how luxuriously velvety using copious amounts of heavy cream and butter and an absense of EVOO to help things stick. The pasta is perfectly al dente and saltier than most dishes. The heat from the calabrian chilis is warming and lingering, normal chili flakes heighten the taste buds. There is no need for sausage like how most people eat theirs, but a side of meatballs is a nice touch as they actually lighten and cleans the palate. There is a sweetness from onions and the butter cuts the acid from the tomatos. Parm is less effective due to how much they salt everything, in a good way. I'd have liked pecorino for that pepperyness. The Veal parm was my favorite, not many places do Veal anymore and Casino was right that milk fed veal is much lighter and more tender. It's so tender it doesn't need velveting, but I wish they seasoned it more and not just the coating. Ask for a dusting of parm for the win. Lonbster ravioli is a perfectly toothsome bite every time. Tender, juicy, umami bombs. The bite of a U10 shrimp, but the chew of knuckle meat and the finish of tail. The prices are high, but the ambaince, quality make up for it. The service from the staff is excellent, they aren't snooty with dress code and know not everyone is from here as even for them reservations are still hard to get. It's a great date night becuase the flavors aren't as complex as some places and the name alone congures excellence. It's dark, white linens, lots of wood, candles and I think they pump scents into the dining room or maybe other tables just had strong perfume. It's not as hustle and bustle as some places becuase they have their systems down well in the kitchen. Snagged this reservation about a month in advance and was so excited to finally try Carbone after thoroughly enjoying Torrisi last month. Really enjoyed the fresh mozzarella with the salami and garlic bread. Would have liked more garlic bread though bc we ended up just shoving all the mozzarella on the small slice of bread. Assorted Baked Clams - they serve 3 types of clams (can't remember all the specific flavors now) and really liked the variety here. There was one with uni and the 2 others were more classic Italian with breadcrumbs and more of a tomato sauce. Would recommend! Spicy Rigatoni Vodka - we had to order this classic and I'm glad we did! The sauce is rich and creamy but is nicely balanced with the kick of spice. I wish we ordered a second plate. A classy and exclusive but might I even say overly pretentious Italian restaurant located in the Soho area of New York. As a tourist, I was quite intrigued by the popularity of this place. However, after trying it, I can say this isn't my kind of fancy Italian restaurant. Our group made a reso for 11pm dinner and when we arrived, it was loud, crowded with tables, and very dark inside. We sat in a high traffic area that left me wondering why they even put a table there in the first place. The menus are gargantuan (like 2x the size of a regular menu) which made it memorable but I'm not sure if in a positive way. My friend ordered a variety of dishes for everyone to share. The bread service to start off was phenomenal - 3 different types of delicious bread (the pizza one was the best) with cheese and pickled cauliflower. Unfortunately, that was my highest compliment for the night. Most of food is overwhelmingly salty - I suppose this is the American special. To all the asians out there who have a lighter palette like myself...you will be very thirsty after this dinner. The caesar was liked by a few members of my group but I found it bitter (and yes I am comparing it to other table side caesar's I've had!). The spicy vodka pasta was delicious but I think I have had better in Vancouver. The grilled branzino fish was very unique and well-liked by most people in my group. It featured a couple of different sauces to pair that were all quite nice. Dessert was a massive slice of tiramisu and it was very delicious! It was structured and cake-like, different from the typical sloppy in a bowl or cup. I generally prefer the sloppy ones but this one was not too sweet and they did not cheap out on the cocoa powder. A little disappointed. Maybe it was all the hype but I left thinking that the food was overpriced and some of it was not what we had expected. When you walk in the ambience is nice with all the friendly waiters and waitresses formally dressed. The choice of music was odd for an Italian restaurant though. All the pastas were perfectly cooked. We got their popular Spicy Vodka rigatoni which was very good. I would recommend ordering one of their side vegetable dishes to cut down on the spiciness of the pasta. We also had their spaghetti puttanesca which was just ok if you like olives and capers. My son and I came for an early lunch today and had a wonderful time. Food, as always, was terrific. Bread service with prosciutto and mozzarella starts things off right. I highly suggest the caesar salad and the eggplant/zucchini scapece (had a nice heat to it which I loved). My son had the spicy rigatoni - the sauce is terrific but it shouldn't overshadow the actual pasta which had the perfect 'chew' to it. Dining at Carbone makes you feel like you're part of an elaborate uncomfortable show from people arriving in limos to a security guard appearing man opening the door for you to the over dramatic, annoying waiter hounding you for your orders. I'm glad I was able to cross this off my list but didn't think it was worth it to try to come back. I'm curious what they do with the bread and cured meats that we barely touched which was on the table before we even ordered anything. The calamari, meatballs and spicy rigatoni were ok. Nothing spectacular. I did like the linguine with clams. Of all the great Italian places in NYC like Don Angie, L'artusi, I would skip Carbone. You can get their pasta sauce in your local market. Let's be honest - you always hear people talking about Carbone in NYC. Is it worth the hype? 100000%, in my opinion! They take reservations up to 30 days in advance, and you have to book online. As they fill up extremely quick and hard to come by, make sure you plan ahead if you want to dine here! Came here for lunch around noon [as we had a reservation] and the place was absolutely packed. The atmosphere is extremely inviting and comfortable. It's loud so you don't feel bad having a conversation or talking loud, which is a huge win for me! The customer service is impeccable. I don't think I have ever dined at a restaurant with better service, attentiveness and overall hospitality. We truly were shocked at how friendly and helpful every single person we encountered was! When you go to the restroom, one of the employees even comes by to fold your napkin for you. UNREAL customer serivice experience! They start off by serving you fresh salami and bread - the salamai was so delicous! We ordered the meatballs and the spicy rigatoni vodka pasta which were both phenomenal. I believe this is due to the restaurant's popularity, as it helps keep the doors clear for guests entering and leaving. First and foremost, I want to highlight that the staff is absolutely phenomenal. There's a great number of attentive staff members, which truly creates an old-time Copacabana vibe within a modern setting. The focus is clearly on the customer and their experience. After securing our reservation, I did some research and learned that Michael recommended bringing two cases of beer for the kitchen and suggested starting with a 25% tip, which I did. I'm sharing this review because I was surprised by some of the negative reviews I saw. Many reviews seemed underwhelmed, but I think those opinions might come from a different perspective--perhaps from non-Italians who might find Carbone's overrated. As someone of Italian descent, I usually don't patronize Italian restaurants because I often believe I can make better dishes at home. However, that was not the case at Carbone's. Every dish was cooked al dente and had a distinct flavor that I couldn't replicate myself. That's exactly what a restaurant should offer--things you can't get at home, and when you can, it should be better. Finally got a rez at carbone. While I think their execution is pretty good for most dishes, they're all priced at a premium even if you get a table. I'd say the veal parm was the only real stand out from what I tried, it was cooked to perfection, nice and crispy, great marinara sauce on top and a thick cut while being very tender. They also cut the veal into 4 pieces once it hits the table which is why it seems like there are pieces missing. The spicy rigatoni and the lobster ravioli weren't bad, but the rigatoni for over $30 with not 1 bit of protein seems a bit much... I'd go back only if I was in the mood for the veal, neither of the pastas quite hit their price point as far as my expectations. The service was pretty good too. I have seen so many TikTok's debating whether Carbone lives up to the hype. To me it does..... My suggestion would be to try to get a reservation for lunch since it's virtually impossible to get one for dinner lol. Decided to treat myself to a really nice lunch - when I arrived there was already a line of people to get in. I was promptly seated and my waitress, Samantha, was amazing! She was friendly and checked on me often. She even took a few minutes to have a small conversation with me. The waiters constantly refill your water glasses and remove any empty plates and utensils quickly and quietly. The service is a solid 10/10. The start you with homemade fresh mozzarella, bread and a salami-type meat. From the start I was in seventh heaven lol it was so good. I ordered meatballs and the spicy rigatoni which is a crowd favorite. Absolute perfection! I really wanted to finish the whole thing but I needed to save room for dessert which was a lemon cheesecake and they even give you two Italian cookies. Everything was absolutely delicious! My only negative was the Frank Sinatra music was LOUD lol. Other than that the atmosphere was great. Had a fantastic meal featuring a yummy rigatoni that hit all the right notes. I also tried the same rigatoni at Parma restaurant , and it was equally delicious. The espresso martini was smooth and perfectly balanced. I was dining with a friend who is gluten-free, and they mentioned the gluten-free pasta option was just as tasty and satisfying as the regular version. Is it worth the hype? Absolutely. Get up early get online and get a reservation when they open it. I could not have loved a pasta more if I tried. Everything tastes so fresh, I was transported back to Italy. The meatballs are an absolute must and their garlic bread will live in my dreams rent free. Honestly, what can I even say about this place - it's f&#*!n Carbone. Spicy Rigatoni (out of this world), Cesar salad (fire even tho $34 for salad is wilddd), lobster ravioli, veal parm, geeez even the broccolini was hittin'. Overpriced? Yeah fs but for the ambiance especially w/ a special someone, it's worth every bite. Unfortunately the most disappointing experience in NYC. We had our reservation moved one hour early, which we thought would be a good opportunity to relax in the restaurant, but instead we were rushed through dinner. We received our amuse bouche within 10 minutes of sitting in the restaurant, and we were then rushed through selecting a wine bottle and entrees. The person recommending wines had very vague descriptions and was not trying to understand our wine preferences, which led me to choose one without much clarity. We were then asked multiple times about whether or not we were ready to order, and after the second time we decided to order a pasta to start, but this wasn't doable as they wanted the entire order at once. We therefore rush through our entree order, which we thought would give us time to enjoy the wine, but they arrived within less than 10 minutes. All of this meant we had no time to enjoy anything, and when I brought up this concern to the main person on the floor the response was "you could've said something". This is the kind of service I would expect as shake shack, not a restaurant where reservations are hard to find. Add insult to injury by considering that when the server came to crumb the table he dusted some of it on the floor - where we happened to have shopping bags with new clothes. Add to that entrees sat on the table for about 30 minutes before anyone checked on quality. Add to that water glasses were empty multiple times. This is easily not worth the money whatsoever.
