I've worked in a few restaurants that have had that sort of visit and we always knew long beforehand, so we'd use the few days prior to make things look perfect for the inspection, and then the kitchen would fall back to their usual lower sanitary conditions afterwards. I can't even imagine how a restaurant gets a 51 from a routine inspection. It implies that the regular conditions are bad and the management is ineffective or that the regular conditions are so awful that the preparatory cleaning wasn't enough. I think a grade of U forces them to have a follow up visit sometime soon that determines if they can even stay in business. So hopefully I get to update this quickly.
