If you're a little queasy about such things, there is a table about 20 feet from the door where they process the day's catch, so you may want to look away or have someone else do your shopping for you. The shopping area is small, about 6 by 15 feet, maybe? A counter with fresh fish and scallops on display and two freezers with frozen goodies. Prices were reasonable; we picked up some smoked salmon and went to a little park nearby to snack. Now that we know it's here, we have another place to go besides our old stand-by in Gill's Rock! 34/2022

My first experience at Chop was very positive; I'd go again in a heartbeat. I base the four stars on Yelp's criteria for number of stars (Yay, I'm a fan). I ordered the 12 oz. rib-eye (medium) and smashed potatoes. My steak came with a tad of gristle* and was a bit more well done than I like, but better that than too rare (for my taste), and I have to say it was still one of the most flavorful steaks I have ever eaten! The crust was crisp and delicious and it was more than I could finish so I took some home. The "Bearnaise" sauce was actually more of a compound butter, and they were very gracious about bringing me a little extra when I saw the dollop melting on the top of my steak when our server brought our plates, but my rib-eye was so well seasoned, I ended up not even needing it. My dinner companion ordered the 6 oz. fillet, a cut I always avoid because while almost always very tender, it rarely has much flavor to me due to the lack of marbling. Still, she was very happy with it and the smashed potatoes and glazed carrots that came with her meal. We started with salads, mine, the house salad with blue cheese/ ranch dressing which I can highly recommend and hers, the Caesar. Both were absolutely delicious. The bread basket is actually a couple of popovers and honey butter, a risky choice since popovers are best served hot and fresh out of the oven so that they can be turned into the vehicle for melted butter they are meant to be! As they cool down they lose their freshness and quickly begin to taste a bit stale. These were not just out of the oven. I think it would be wise of them to rethink this one. I was raised on "Sunday popovers". While I appreciate the effort they are making to serve them to us (they are not as simple as slicing bread, sometimes, on rainy days or for no apparent reason they won't even "pop"), a safer bet would be a wonderful grainy bread that is easy to heat and serve warm with an always great outcome. Service was spot-on. We sat outside on the porch on one of the last days of warmer weather in late September, protected from the wind by the plastic rolled down "walls". It was quite comfortable and bright and it felt like dining al fresco without the usual cast of characters that have to be shooed away. *I say give it a shot-it won't disappoint. No restaurant has complete control over every steak, so the fact that mine had some gristle on it doesn't mean that yours will. And if it does, relax; cut it off and enjoy your steak. Although it appears we have fallen short in meeting some people's expectations, I would like to say that CHOP 's steaks are always cut to order from Certified Angus Beef branded loins to ensure quality and tenderness. Additionally, to accommodate both appetites and budgets, we offer our steaks cut in sizes ranging from 6-16 oz, (even more if you'd like). I should also mention that we do have over 25 wines available by the glass every day, and also have a modest, but comprehensive reserve list available as well. First good steak restaurant in Door County, Wisconsin. Four of us dined on a Friday night. Restaurant is small. Only seats about 30 people. Can accommodate another 15 or so outside when the weather gets warmer. One of our diners had ribs, another pork chops and the other two had filets. All were excellent. Service was average, but should get better with time. The restaurant has only been in business a few years. Prices were good as we're portion sizes. All in all it is a very good restaurant. Just opened last week. This is a small cozy place with about 10 tables inside and 5 outside. They have great steaks and an excellent wine list at a reasonable price. We had the Filet Mignon and it was one of the best I've had. Fine dining at a good price. I would definitely recommend it! Dropped by the new Savor space Sister Bay this weekend and it's nice to have the extra seating,…read morebigger menu and expanded craft beer menu. I did the ribs again and they were still awesome. Great some flavor and very moist. My wife had the Gaucho Sandwich and it was great. She did admit there might have been a touch too much cream cheese but the brisket was done perfectly. Still love the fact that the owners young daughter waits table and greets you when you enter.
