Came here on a Sunday evening and got on the wait-list at around 430pm and they said the wait would be long, and it was. We waited for like four hours for our group of 10 people for a birthday. We mostly shopped at 99 ranch and hung out in the parking lot until it was our turn to be seated. Once we were seated it was great, all the side dishes and drinks, rice, and soup are available buffet style. You order the meats and other dishes on a iPad and they're very quick in getting your orders in so you can start cooking right away. The 10 of us were seated at a large table with two grills. I believe we chose the cheapest option and it still had wagyu options and everything was so good! Our anniversary was coming up so we decided to come and splurge at Chubby Cattle. The walk in and seating area is pretty small. I wish they had more tables but we ended up eating at the bar. Maybe we just went on an off day, but we went on a Monday. We got there an hour before opening & was 2nd in line. At 11:00am, they bring out their tablet for people who are in line to sign up for the waitlist for when they open. After signing up, you're free to leave the line, but return at 11:30 when they open. We got in and the server showed us how the process works. You order from a tablet and food will be delivered after. Halfway through the meal, I noticed that half the items we ordered weren't coming out. After I inquired about it the first 2 times, they told me they were still cutting the meats, so it'll come out soon. I inquired again when it wasn't coming out just to be told they never had the meat & won't be getting it in until dinner. It was disappointing because if I knew they didn't have the meat cuts I was hoping to try, which was why I opted to pay for Chubby Cattle, I wouldn't have gone. It was a premium price paid for mediocre cuts of meats since the main cuts we wanted were out. We were also seated way in the corner, so we weren't attended to often, so plates just kept piling up & leaving us with not much table space since their tables are on the smaller side. Came here on a Saturday late afternoon for dinner and... be prepared for a wait. The waitlist opens at 4pm and there was already a line just to get on it. It took about an hour just to reach the front and add our name, and then another 3-4 hour wait for a small party before we were actually seated. The restaurant itself isn't huge, but it's decently sized. just felt a little cramped as you're walking back-and-forth to the snack bar. Menu wise, there's a pretty large selection with different tiers. The higher tiers include premium cuts, but you can only order those once (one plate per person). After that, everything else is more standard cuts. They do have a nice self-serve setup: - Open bar for sides (veggies, noodles, etc.) - Milk tea on tap (which was a nice touch) - Soft serve ice cream - Even curry at the snack bar So there's definitely a lot to enjoy beyond just the meat. Overall, it was a pleasant experience and I can see the hype. I was out at the Livermore Outlets this Saturday and figured, nobody should be eating here around 3PM...technically I wasn't wrong. I hadn't eaten since 9AM that day so I was pretty hungry. I got there and talked to a hostess and they said they aren't taking anyone until 4PM. I didn't really understand what that meant since I had seen people inside eating, and also people outside, kinda forming a line, and also people just grouped up outside with no structure.. so that was confusing. In any case, probably oooonly 10 people in line at this point. They don't close mid-day according to their hours. I was hungry so I was like ok we'll just get sushi. We pick a place that doesn't close for mid-day and is 15 minutes away. I get there... doors are closed. The hours they post on their door do show they close mid-day, and open again at 4PM... So I'm like alright, well no other good sushi places, and surely the Chubby Cattle line isn't that bad... Why not just take customers all day, or why not say they're closed from like 3-4PM if they're going to stop taking customers? That part I just found a little confusing. I wouldn't have minded so much if I just got my name down at 3PM when I originally got there, got told 1 hour wait, drove out to sushi, changed my mind, came back, and my table was ready. But instead - I get back there 3:45, there's a line of maybe 40+ people in front of me. It still doesn't look too bad but I'm reading other reviews and they say it's a 2 hour wait if you get there around this time. I get through the waitlist line by 4:10 and get on the list, about 35 parties in front of me, 2 hour wait. I already ate a protein bar at this point and went to have a light snack from Ranch 99 so whatever. I get in around 6PM and I think there's only a 75 minute time limit? Not sure, they didn't mention but I noticed a timer on the top-left of the screen quickly counting down. It's a bit crowded and hectic in there, but food comes fast. They have a small section for side dishes, but it was never crowded, unlike if you were at say Mikiya. My heat was on max, the buttons didn't work for me to turning the heat down but eventually I got a worker to turn it down for us. The meat cooked super fast, which we weren't used to, so we were probably overcooking a bunch of things. Not their fault though. Overall the meat was delicious and some melted in your mouth, while some were tough. It just depends on the meat you pick. Pretty yummy overall, I can hardly eat AYCE anymore. We went with Diamond, but I think next time I'll just go with Gold, even though it's only $10 difference per person. Those special meats we ended up saving for last but we were too full to enjoy it by the end lol. Our mistake. We just wanted to make sure we mastered cooking before we wasted the good pieces of meat. I did get the membership, and with the Milpitas location opening up eventually, we will probably end up there for someone's birthday in the near future.. Dunno though, I used to be the friend that always showed up early and got in line... but now that I have a kid... someone else can do that please :). read more

To start, the check-in process could have been more organized. Staff set out the iPad for the waitlist without saying anything before heading in, which led to confusion and some arguments due to people cutting the line. There was also no option for groups larger than six with just a message saying to "talk to the host," though there wasn't any host to talk to. When the party ahead of us finally found an employee to ask, they were told to put it in the note which should be noted somewhere for less confusion. A brief announcement or instructions would've helped maintain order. Fortunately, my group was only four people, so we didn't have any issues signing up for the waitlist. Still, I felt bad for the two parties ahead of us as we all waited together for about an hour and a half before opening. Once we were seated, though, the experience made up for it. Chubby Cattle was such a treat! We chose the Diamond Tier and really indulged. The meat quality was outstanding; the marinated options were delicious, but the plain cuts really let the natural flavor shine, especially with the great selection of dipping sauces. Our server, Rex, was phenomenal. He was super attentive and efficient even while managing several tables. He ensured we were taken care of even when our grill suddenly stopped working. We arrived around 1025 am and parked right in front. Knowing they open at 11:30 am, we wanted to be in the first group to get seated. At 10:30 am, one person decided to wait at the door and I decided to join the line. Found out that Chubby Cattle staff puts out the wait list iPad at 11:00 am so got to be #2 to get seated once the doors open. Well worth it since by 11:30 am on a Monday, a large number of peeps were outside and I'm sure some missed the first wave. Anyways, our waitress this time was Van and she convinced me to be a Chubby Club member for $28 and told me all the savings I would have by being one. Saved $13 apiece for me and my wife on the gold tier bill by signing up. This time, we got a table (rather than a booth) and tried a few things different from the first one. My wife decided to choose the premium items and selected the A5 Wagyu Foie gras nigiri and the A5 Wagyu Uni Caviar Nigiri. It was pretty good I got to admit. We went on Memorial Day and arrived around 11:45. There was already a line and waitlist. They were seating groups one at a time to stagger wait times. We were seated 2 hours later. The meat quality was not the best. We chose the gold tier. I've had better quality cuts at other Japanese bbq themed restaurants. It was hard to grill the meat at the right temperature and time due to the confusion with changing the temperature settings, and the grill barrier being unstable. It also took an hour to receive beef tongue as they ran out from the first group. The slices were too small and overly chewy/dry. I enjoyed their sides (vegetables, cheese corn) and sauces. They don't have alcoholic beverages at the moment but they do have unlimited fountain drinks and milk tea. We were seated at the bar and the interior has Japanese decorations. We used tablets to order, which was allowed every 5 minutes per set. Moderate to loud atmosphere. The waiter was kind and changed our grill on request.
