I like Chuy's. I am not an expert on Tex-Mex food; I don't get all the kitschy Elvis stuff, either. I like Chuy's because I like their flavor and execution of the food. Their salsa is always freshly made. Although the tomatoes never look ripe, but they always manage to make the salsa taste refreshingly balanced. I love their signature sauces, especially the Hatch Green Chile. Wimps need not apply! It is just hot enough to make me sweat, but not so much so I cannot taste the food. My favorite menu item is the Chiles Rellenos (with cheese). The light crust is definitely freshly battered. It is not greasy or overstuffed like the many versions of this I've had before. There is just enough cheese to ooze out when I cut into it...mmmmmm.....I do wish the refried beans can be made tastier. But refried beans can only be improved with lard. They will say that you can call ahead but you cannot and you will wait the same amount of time when you get there. They will not accommodate you when you do get there. It is not worth your time. I never say no when friends want to come here, and last night I came to dinner with my family so they could try something new. Yet again, I left enjoying the company but not the food. This place is always busy so I highly recommend that you use the no wait feature on Yelp. We put our name on the list from home with 25 parties ahead of us. No wait tells you when to arrive. We were a few minutes behind their suggestion but did not have a problem checking in and at that time only had 4 parties ahead of us so we were seated rather quickly upon arrival. Chuy's is a big spot with lots of rooms for seating. There's tons of pictures and items nailed to the walls and the ceilings, including multiple car hub caps in one area. The restaurant is very colorful and lively so I understand why it's a popular destination. Our waiter was friendly but he seemed new or maybe didn't know how to fully engage with customers. When I told him that my husband and kids had never been to the restaurant, and asked if he had specials to share or suggestions on the menu, he seemed confused. A few minutes later he did tell me that their food was made fresh and that if I got a burrito I could choose from the sauces listed on the menu. We did enjoy the jalapeno dip which comes with the salsa and chips at your table. The salsa has a kick to it, so wait for your drink to arrive before you nosh. My family is a big fan of queso but I would describe their version as average. More like a cheese fondue than a flavorful queso. My husband and kids did enjoy their food. My youngest got the cheeseburger and fries from the kids menu. My other son got the three crispy taco platter. And, my husband got a combination that had so many items it took up half the table! I ordered the cheese quesadilla appetizer, which really is a full meal. If you prefer it with chicken, that is also an option. Unfortunately, I missed the notation the quesadilla also came with caramelized onions and after a few bites pushed my plate away. Our server questioned if I was going to eat it and when I said no, that I didn't care for the flavor or the onions that I forgot to have removed, he said "oh yeah" and brought me a to-go box. Food was good not great but the portions were large and filling. I had the bean and cheese burrito which I usually get at Tumbleweed. It was good, but I still prefer Tumbleweed. Chuy's burrito was significantly larger. My wife had the Chimichonga. She liked the fact that the queso was underneath instead of poured on top leaving her chimi crunchy. Rice and beans were just ok. Having received a coupon for a free queso during a recent margarita event, we decide to grab lunch at Chuy's while out near Oxmoor Mall. We sat on the outdoor patio and enjoyed the fantastic, albeit strange, August weather. This Chuy's, it's a chain restaurant, also has a great fire pit next to the patio. Would be a wonderful happy hour spot in fall! Our server started us off with chips, salsa & a creamy jalapeño sauce. Delicious all around! Next came our queso. It had green chilies and spices with a nice cheese blend. Good flavor. My only complaint was that it's very thin and drips off chips easily. Chuy's doesn't have a lunch menu, but our server said they offer half portions of many dishes. We decided to split the Baja tacos. You can choose fish or shrimp. We went with fish and we're so pleased. Two, fried fish tacos in freshly made, flour tacos came out with cabbage and the creamy jalapeño sauce. They kindly split the order onto two plates with the sides - Mexican rice, beans & fixings (like, chopped tomatoes, jalapeño slices, lettuce). We had a coke and an ice tea to wash down our yummy entrée. With my coupon, our check was about $16. The only negative was the high price for drinks. At almost $2.50 a piece, you need to drink up! Chuy's has always been a good go-to for American or Tex-Mex. The only reason it doesn't rate a 5 star is that it is a chain, and they don't have many choices in the way of sides. Probably my family's favorite thing about Chuy's is their paper thin tortilla chips, fresh as fresh can be salsa, and yummy ranch dip (sounds weird on a chip but oh so good). My son and I shared steak fajitas on our last visit. One of the things that jumped out was that the steak was actually a sliced grilled steak versus the stir-fried versions at your local mexican restaurant (not that there's anything wrong with that either). But super delicious. My other son and husband got fried burritos with cheese sauce. Delish. However, as mentioned previously, rice and beans that come with it are just so-so. There is a soft spot in my heart for Chuy's. Every time I make my way down to Austin, TX, I visit the original Chuy's as tradition. Which is why I make a point to stop in when in the St. Matthews area! I typically sit at the bar; they have a free, build-your-own nacho station, with chips, beans, ground beef, queso, and more. Yes, please! Chuy's free salsa and jalapeno ranch are always so fresh and a perfect starter. I'll be honest, the first time I went to Chuy's, I fell in love with my entree and haven't tried anything else on the menu. The Chicka Chicka Boom Boom chicken enchiladas, served with beans and rice, are 100% the way to go. I know. It's just that good. The Boom Boom sauce is cheesy, spicy and full of flavor, despite how awkward it is to ask for it. I've found most Chuy's are pretty slammed during regular business hours, and service can fluctuate depending on the server, but it's definitely one of my favorite Mexican joints in Louisville. read more

There were two huge parties in the same room including a table of 10 kids who were completely unsupervised by their parents eating at another table. Each and every time we needed refills we had to ask. Our queso came but we didn't have chips until we requested that the baskets be refilled. Several diners left because of the extraordinarily loud table of kids. We've been to Chuy's twice since we moved to Louisville, and had never been to one previously. It was recommended by a teammate, and we're always game for Mexican. Aside from "GO THERE" he gave no further advice. To be honest, it doesn't take a lot of arm-twisting to get me to go to a Mexican restaurant, so off we go. From the outside to the inside, Chuy's is themed very well. It's colorful, has a shaded waiting area outside, and as you approach the building you get drawn into the experience. The inside is just as vibrant as the outside, and there's so much stuff hanging from the ceiling you wonder how it stays up. There is what used to be a train track running around the ceiling, too, but I'm sure it's sole purpose is to be a place to hang things. There are also multiple dining areas, and the building is much bigger inside than it looks outside. Although we've not tried it yet, I'm told the happy hour hor's-d'oeuvres.....hor'sd'uvres....snacks are awesome, and they are served (not joking) out of the trunk of a car. The staff is constantly in motion here, and one of the cool things they do is provide your silverware in a sealed paper bag, ensuring that is has been cleaned and sanitized. Chuy's tortilla chips are amazing...no, they're fantastic...no, they're OUTSTANDING. Thin, light, and crisp, and freshly made. I've eaten chips in (and this is not an exaggeration) hundreds of Mexican restaurants. These are THE BEST, hands down. They have a (I'm guessing) sour cream based jalapeño salsa that is out of this world delicious. I ordered the steak burrito, and I was only disappointed when I was done with it. :( It was amazing, and the steak was cooked like it was in a contest. I'd have taken a picture, but it would have meant waiting to start eating it. Chuy's is also not afraid to use spice, and the steak burrito was definitely my idea of perfectly spicy. We mentioned that this was our first visit and our server took full advantage of that. When we were done he presented us with a couple gifts. A large back of their incredible chips, along with a cup of their tomato-based salsa and the aforementioned jalapeño salsa to go....AND...a piece of their Tres Leche cake. I don't usually moan when eating dessert, but the Tres Leche cake was unbelievable (and FREE!). We've been back since, and plan to go back again soon. Came here for my wife's birthday dinner with friends. We were seated pretty quick, maybe about 5 minute wait. This isn't the first time I've been here but the first time since I've been yelping. I ordered my usual lol the steak burrito! Yummy! It's really my mane reason for coming here. Always awesome! It is a 12" burrito stuffed with steak, and cheese and topped with Green Chile sauce. I had the Chile sauce replaced with queso. Also no beans and ordered the rice and fries. The meal was awesome from what I was able to eat of it. It's the one thing I truly look forward to when I come there. My wife initially recommended the steak nachos which I'm sure would have been just as awesome. Our waiter was pretty cool, he made sure that my wife got her birthday drinks at the happy hour prices even though we were there before it was over he wasn't able to enter them in the system in time but he took care of us. As far as chain Mexican restaurants go - Chuy's is pretty solid. The menu has a variety of TexMex options. It's exactly what you'd expect from TexMex - burritos, tacos, quesadillas, fajitas. They have a variety of sauces to go with the different dishes. Like everyone else, I love the creamy jalapeño and the salsa. I'm not crazy about their queso dip. It reminds me of the jarred yellow cheese mixed with salsa. My favorite part about Chuy's is the tortillas! They're so soft, stretchy, and fresh. I always get the fajita soft tacos and they're great. The meat is well seasoned sliced breast meat in peppers and onions. It comes with a variety of toppings for your liking. It's a great option if you like fajitas but don't always want that much food. The service at Chuy's has always been great. They let me sample a few of the sauces before committing. I love the drinks, too. The frozen swirl margaritas are my go-to drink. read more

The order was 35 minutes late. Tried to contact driver but the phone number shown was out of order (this appears to be increasingly common among delivery drivers.) Despite explicit written instructions and three locations of the house number, driver went to our neighbor's house. The food: guacamole was stiff and bland, tasted old. Chips were nice and crisp. Beans were very, very salty and overly spiced. Chicken fajita, at $20, had almost no peppers or onions. Chicken was pre-baked strips from someplace like Costco. Shrimp tacos had little inside them and shrimp was tough. The new Bam-Bam enchilada was very good. Rice was tasteless. I guess the high reviews are for an in person visit and the ambience must be wonderful to justify the prices for very mediocre food. We'll be going back to our fave, El Tarasco in St Matthews. read more

My wife and I love Chuy's! We come here often when we are craving good, affordable Mexican food. The best time to go is during their happy hour, which lasts until 7:00pm on weekdays, (not sure what time it starts). For happy hour, we take advantage of the full nacho bar and $4 (and some change) margaritas! It really is a great deal. For our meal, we always order the chicken quesadilla and split it because it is so much food to begin with! The result is endless nachos, 2 margaritas and a full meal for under $20. The food is delicious and the prices beyond reasonable. We always leave satisfied. Keep it up Chuy's! read more

Hate to have to do this, have eaten at several of these in the past and never an issue. In town for a baseball tournament, after a game made it to the restaurant about 3:30 in the afternoon. Hardly anyone in the restaurant, we are seated promptly, and this is where it went bad. We look over the menu decide what drinks we would like as well as what we want to order. Trust me we had time to make all of these important decisions... Server walks through sees us cleans a table and moves along, never to be seen again. We wait, 15 minutes or so, and decide this isn't the place for us. As we leave I casually let the poor souls that had just walked in to this restaurant to "make sure they don't forget about you" and we leave. Make the short drive over to BJ's and are taken care of. Once I discovered a meal that I love, I freaking love Chuy's. They have amazing margaritas, pina coladas, AND food. It's usually always crowded (which can be good because it means business is booming), but you can reserve seating through yelp! What I love most about Chuy's (besides the food) is the atmosphere. The staff always seems happy and willing to serve, and the customers generally seem satisfied. The decor is amazing. Each wall has a different theme, and the ceiling in one area is decorated entirely with hubcaps, which is so creative awesome. The best wall in the whole place is in that same area and is just covered in framed pictures of dogs of all kinds. The jalapeño dip that they serve along with salsa is probably the best thing ever. I could eat that as my meal and be completely happy. The chips are amazing, and they're even good leftover. I usually order a grilled chicken burrito, but watch out for the tomatillo sauce that automatically comes on some of the burritos--it is nasty! I can see why some people might like it, but it has a weird metallic taste in it that I can't stand. Prices are reasonable, especially for the alcohol selection. I've never had a bad experience at either Chuy's been to, and I definitely recommend it to anyone who loves Mexican food or even just margaritas as much as I do! read more
