On the drive home after dinner at Diego's a scene from the movie The Graduate was playing in my head. The one where party guest Mr. Maguire takes Benjamin aside to give him advice and says "Ben I have one word for you. Plastics." Well, our one word of advice for ordering dinner at Diegos is this. Mole! Whether you chose the mole negro or the mole verde, Diego's makes marvelous mole. In the former, the sauce is robust from roasted and ground chiles simmered with toasted and ground nuts and chocolate for a hint of sweetness. In the latter, a simmered savory sauce of tomatillos and toasted ground pepitas (pumpkin seeds). . For the dinner entree, either is served generously poured over chicken breast and accompanied by black beans and rice with tortillas. At about $15 / 16 for the entree, with enough for leftovers, a great value for the quality too. Dinner for four tonight was our follow up visit from lunch for two, as covered in our previous review. Once again Grade A, professional service thanks to Antonio. Once again all the food was delicious. The drawbacks at Diegos have nothing to do with the great food and service, but with ambiance. As good of a job as the owners have done to update the downtown Redmond storefront from which they operate, it is still a long and narrow space that poses traffic flow and darkness problems. And hen full it is very noisy. But that takes nothing away from the food and service. Visit Diego's. Ask to sit at one of Antonio's tables if he's working that day. Eat the mole. An otherwise pleasant meal was sabotaged by dead slow service. There really aren't many non-chain restaurants in Redmond, so I was excited to give this upscale Mexican joint a try. Every table was full, bully for them, so my group ended up on the back patio after a bit of a wait. The wait itself was awkward since there isn't really a waiting area and you walk right into the bar where minors aren't permitted. The patio ended up being a great spot since it isn't on a main street, so it was a nice relaxed setting amongst the climbing vines on the old brick facade. The food was quite good, especially the green rice, but my Diego's margarita was disappointing. And a Mexican place should serve a killer margarita. Most of the unique spots in downtown serve breakfast and lunch only, so Diego's is a bit of a bright spot in area. While I'm happy they are bringing in the masses seven months after they've opened, they have to work on their service to make sure the masses will return. read more

Best seafood pasta I have ever had! My friends had the grilled salmon, and the fish tacos. We were all very impressed with the food. But I have to go back to the seafood pasta, I substituted angel hair pasta for the penne pasta and it was amazing. They did not skimp on the seafood either. Service is always nice and friendly. Food leaves something to be desired. I can't speak for what anyone else ordered, but I guess you should never go to a Mexican restaurant expecting to get a nice piece of halibut. The lobster sauce on top was so salty, I had to scrape it off just to get it down. Not your typical Mexican restaurant which isn't a bad thing. This place has the traditional menu items like burritos, fajitas and margaritas but also some very unique & eclectic items like carnitas raviolis, crab stuffed sole and more. I particularly like it when they have crab selections to choose from. Some menu items come and go but I have never had a bad experience yet. We met a friend for dinner at Diego's Spirited Kitchen. We were apprehensive about eating at a restaurant during COVID-19 Pandemic. People were seated at tables inside the restaurant, too close together for our comfort. We asked to be seated outside on the patio. After a few minutes we were shown an outside table on the patio next to an alley. Service was inconsistent. Chips and salsa was immediately brought to the table then we were left alone for what seemed like a long time. Our order was taken followed by another long wait before food was delivered to our table. I ordered a Taco Salad which was very good. I sampled the other meals and was disappointed with them; in fact, I told my daughter that her burrito was something that I would not eat. We may try Diego's Spirited Kitchen after this pandemic is over; but, we will probably try other restaurants first. read more

I love supporting local businesses, but this restaurant is literally rapping it's local customers with extremely high pricing. Even La Rosa, a similar style restaurant in NWX of yuppie Bend, is more affordable and higher quality then Diego's. My girlfriend and I paid $70 for veggie burrito and veggie enchiladas with 2 margaritas. Wtf? Service is slow. Food just ok. Nothing special besides the super high prices. Mmmmm! This was a tasty little find for Steve and me and we didn't even have it bookmarked on the "to try" list! After hanging out in Bend and took in some local attractions and did some touring for craft beer we came back to Redmond where our hotel was. We were hungry and Redmond tends to be a lot more quieter as far as restaurants go so we were looking around for some close restaurants and Diego's came up. Not only did Diego's have a good overall average with previous reviews that have been posted but Mexican food is just what we wanted. At Diego's I got a Green Mole burrito which was fabulous. In addition to that we also got some great tasting salsa and guacamole which was fresh and extremely flavorful. My husband and I decided to try Diego's for dinner on Cinco De Mayo. We were anticipating a long wait, but we're pleasantly surprised to be seated almost immediately after entering. All the wait-staff were extremely kind, and moved quickly and effortlessly between tables. In addition to that, our drinks were filled without asking, showing that they were attentive to our needs even with it being so busy. Both of us thoroughly enjoyed our meals. I got the pork carnitas and my husband got the fajitas. The portions were very generous and we could've easily split one meal together. The food was well seasoned and perfectly cooked. This is our favorite place to come for Mexican food when we roll into to town! The food is absolutely incredible. Lots of seafood dishes, as well as the regular fair and some unique pasta dishes. They have a fresh juice margarita that you pair with your choice of tequila. I would say they have some of the best fresh salsa with just the right amount of heat. What was fucked was that a Bacardi and coke cost me $10 a piece as well as a service fee on the total bill. What hogshit!!! But no, you let all phases of government allow the food trucks to fuck you in the ass and all you did was raise prices beyond belief. While your food costs have gone through the roof one way to keep costs at a minimum is to get a handle on your Labor. Diego's has people running around like chickens with their heads cut off. I normally eat two times at a place before leaving a review. There's always that off chance you just got left overs, or the wrong cook, or even just bad food. Well, I've eaten here twice and both times the food was SALTY and overpriced.. way, way, way over priced. $26 for a fajita? This is worse than airport food. Everything so so over salted, I couldn't eat it. I really don't understand why all the rave reviews about this place when it fact it's so over priced, and over salted, its NOT WORTH EATING here. The green salt.. ( I mean rice) is over cook, hard and dry.. the black salt.. I mean beans taste like yesterdays dirt.. everything is either over cooked or over salted.. Now, the noise level.. I think I need hearing aids now. It's so loud in there and dark. It's just a hole in the wall. You're better off going to Taco Bell. read more

It cannot be overstated: the pork Osso Buco is exceptional. The meat could not possibly be more tender. The braising liquid made an amazing, thick, rich sauce that, together with the creamy mashed potato made a comfy bed for the melt in your mouth pork shank. The only feedback I can think of is a touch on the salty side. Great atmosphere, friendly, professional service.
