Chef An's Famous Garlic Noodles with 24K gold

This is not just a dinner, it's a whole experience - a gastrobiography as they call it. It is a set 8-course menu inspired by the life of Chef An. The staff explains each dish and what it represents. Learning about Chef An's background and upbringing definitely inspires you and appreciate every element in each dish. My favorite was the deconstructed Banh Mi (Vietnamese staple) and Garlic Noodles. Food and service was 10/10, I'll definitely be coming back!

Chef Helene An's new project featuring a tasting menu and the concept of Gastrobiography - guests are taken on a food journey that travels though the life stories of the chef. Such an unique and amazing experience. My hubby and I went to Da Lat Rose on Valentine's Day - the intimate dining room was beautifully decorated with wild roses and handmade crafts from Vietnamese artists. There was a metal hat on the table, which served as the map of the stories each dish represented. The 12-course menu covered a wide range of ingredients and flavors, from oyster, to coconut bamboo rice with chicken, ginseng soup, to crab claw, to caviar, to pork cheek, to Wagyu tamales...creative, but not overly pretentious, and everything was well executed and delicious! They also had the option of wine pairing or cocktail pairing - we went with the wine pairing, but tasted a couple of refreshing cocktail drinks that the bar sent over as well. One minor complaint was that the sommelier was pretty busy and forgot to pour the wine as dishes came - I would hope the service would improve as the restaurant opens longer to match the quality of food!

An unforgettable dinning experience. Everything about this place was beautiful and delightful. From the warm welcome at the door to the smiles and first drinks at the bar to the ambiance and table settings and finally the food and meaningful stories behind each course. My favorite dishes was the edible lemon grass candle with tiger shrimp AND the gold shavings + the garlic noodles. The service and food was a 10/10 over. I can't wait to go back.

We were both enjoying every course, every paired cocktail, and their gastrobiography as well.

Everything there from the cocktails to the sushi to the dessert is excellent. I particularly like the lobster tacos and ribeye bites to start. The orenji roll with lemon is my favorite roll here. The chocolate lava cake is also the bomb to finish with. I took off one star for the annoying wait even when you have reservations. I've waited here for 45-60 minutes on several occasions even with reservations, which only made me hangrier the longer I waited. The LA attitude from the girls who seat guests up front did not make it better. That LA illusion of overcrowding and making people wait outside to look busier than you are is super off putting for those of us who grew up in that generation and already spoiled having gone to all the best places. Service over exclusivity is the new chic. The crowd also ranges from try hard first timers / wanna be influencer types to more mature fine diners which is a hit or miss. Despite that, I always know for a high end sushi experience I can count on Koi. I'll just have to take a snack for the wait if I decide to put up with it.

Could not get a rez for 2 on a Tues night at 5:30 pm, so crossed our fingers and winged it. Luckily they were able to seat us at a 2 person booth. First impression is that the decor is gorgeous. Moody, dark and beautiful artwork everywhere. The place is packed and continues to be throughout our meal. That's where the positives unfortunately end. Service was spotty and very PERFUNCTORY. They forgot our appetizer so when we asked, they brought it 10 minutes after our dinner arrived. In fairness, they comped it, which we appreciated. But whenever we needed anything (ketchup for the fries, a second glass of wine, etc), we were looking and looking around for our server. 2nd glass of wine was literally dumped on our table with no smile or words by front of house manager. UNPLEASANT. The food was expensive and 2/5 at best for what they are charging. A $28 kale & chicken salad was BORING. "Fork & Knife Ribs" for $47 were ORDINARY. The deviled eggs were a travesty. They look better in the picture, but honestly at the table, they looked and tasted quite sad. Very difficult to mess up deviled eggs. Everything was served piping hot (fries, coffee) which was a plus. Key lime pie was decent, though not a WOW. Glasses of wine were also unfortunately on the bland side and BORING versions of themselves (pinot grigio, sangiovese). All in, this was an over $200 dinner for very mediocre food and overall poor and indifferent service. A huge DISAPPOINTMENT. Rather than selling us on the brand so that we could be repeat customers at other Hillstones again and again, this totally turned us off. So, so many restaurants in LA and everywhere to try. Unfortunately would not spend my $$ here.
