While this dish is typically supposed to be made with pork belly, chef Ricky substitutes it with pork shoulder for a more familiar taste/texture to our Midwestern community. I'm not mad honestly. I am told that this is the traditional way to approach pho. You preserve the integrity of the broth and dip your noodles, meat, and vegetables as you go.
