Was in the area wanted something good and tasty to fill my hunger pang. Walked in, and was greeted by a friendly barista at the front. The displayed showed several Croissant sandwiches and some sweet pastries; I wanted something hearty to go with my Matcha Latte and decided on a Croissant with cheese ($9.75); Barista helped me warm up the Croissant a bit- though the cheese still haven't melted. I came in on a rainy Sunday with my parents. We got a cardamon bun which my dad really liked, a vanilla bun which was good but sweet, and a cheese, tomato, and turkey sandwich on their sourdough bread which was by far my favorite. Ok guys here's my eclectic opinion on this spot. It's a small quaint spot, but a nice vibe to sit in the back & chill or meetup w/ friends. It's also a very busy spot. Note: Order boxes of these delicious buns & cakes for Office events, House parties, Bridal Showers, Birthdays , Home on weekends drinking tea or coffee etc. I ordered (4) buns. Two Cardamoms very moist & tasty with a hint of bergamot. I may be wrong but the taste is very exotic w/ out loads of sugar like most bakeries. I'm diabetic so that's important to me. The other (2) were the Brown sugar & Walnut, again very tasty & the cinnamon bun. All yummy but we all have our preferences. So, if you haven't been yet you need to patronage this spot you won't regret it. Plus, constant patrons coming & waiting on line to place orders. Awesome! says a lot. I'm never impressed with the size of a place, but the influx of foot traffic & cleanliness. Friendly staff! It's very difficult for me to say "cardamom bun" without it coming out "cardamom bum". I'm not sure why, but the fine folks at Fabrique don't seem to have trouble interpreting that what I want is one of these crazy little pastries. Probably because they sell a lot of them, and no wonder: they are fragrant, and texturally fun, and utterly delicious. And now that I've tried them, I think I like the cinnamon buns even better. They are very similar in structure, and both are not too sweet, but absolutely a treat. If you want to verge all the way into savory, pick up some of their seeded crackers as well, which go well in any cracker application you can think of. read more

I have had a princess cake for over 30 years on my birthday, and hands down this is the worst one I've ever tasted. They unfortunately do not use marzipan (although they promised they do via email), and half the inside of the cake is whipped cream. The cake itself is extremely dense, and whatever they used for the "marzipan" was so bitter is made us sick. I tried to contact the bakery to make it right and they just ghosted me. For $150, this is absurd and actually a scam. They should be ashamed of themselves for lying about their products like this, and unfortunately this is the consequence of terrible customer service. I've known about this bakery for a while but only passed by once several months ago prior to going to a JBF Platform event. As I still had ample amount of time, I decided to go in and try a small pastry. The woman inside was friendly. This place competes with La Cabra for the best version of the Danish Kardemummabullar/Cardamom Bun in the city. By comparison to the one there as both fall under very similar price points, I slightly preferred the one here. By comparison, it is less sugary and a bit less buttery making it so the spice shines more. In short, if you prefer a bit more sweetness and more akin to a sweet bun spiced with cardamom, go to La Cabra. If you prefer a stronger cardamom flavor and a bit of sweetness to balance out the spice, go here. Both are good albeit pricey specialty spots though. read more

Very solid bakery that replicated the pastries that I ate while I was in Sweden! There were plenty of options to choose from and the staff was super friendly in recommending their favorites. I opted for the brown sugar walnut bun. I loved how there was a balanced sweetness and had a soft texture on the inside with some sugar on top. Coming here on a Saturday morning, there were a decent amount of tables available in the back but I would say that seating is still limited. For the price and the fact that NYC doesn't have many Swedish focused bakeries, Fabrique is definitely a gem and I will be back! read more

Fabrique Bakery is a narrow space, intimate space tucked in the Meatpacking Distract with a charming European atmosphere. The display of rustic, crusty loaves and perfectly golden buns is incredibly photogenic for those inclined (and is famous for it too!). The staff was friendly and fast, and despite there always being a line, they keep it moving expediently. There is minimal seating in this otherwise small cafe, however, it is not a great study/work space due to how cramped it is. The tables also did not seem to be cleaned as regularly. One interesting aspect of the design was the semi-open concept that allows patrons to have a glimpse into the baking and craftsmanship process. Although I came for the cardamom bun, they were out for the day when I stopped by and I settled for a cinnamon bun. Even then, it was life changing! Fabrique's is a much lighter cinnamon bun compared to the traditional American iteration. The sweetness is balanced and nuanced to allow the natural, aromatic spice to shine through. The actual pastry is slightly chewy, but is light and soft; the sugar sprinkled atop the pastry adds a nice crunch for a textural difference. The bun was also extremely fresh and tasted as though they were made with care and dedication. Having tried so many cinnamon buns in and around the city, Fabrique's now easily tops this list. The latte was strong, but had an overly acidic taste that I did not enjoy as much. In this economy, the combination of such a high quality, fresh pastry with a latte for $11.25 is a great value! I would definitely want to return for second helpings to hopefully finally trying their famous cardamom buns! read more

Fabrique is a Swedish bakery known for their signature cardamom buns which were absolutely divine and a unique treat! They were perfectly spiced, fragrant, and fresh - crispy & sugar-crusted on the exterior and soft in the middle. The bakery is very snug inside with limited seating but the open, old-school brick design adds to the atmosphere and it's cool to be able to watch the chefs prepare pastries in the back. There was a line, but service was quick! A bit on the pricier side but very much worth a try particularly for their unique, quality offerings (coming from a non-NYC local where cardamom/other spiced pastries can be difficult to find, let alone done very well!). Ever since visiting Stockholm back in March 2023, one of the things I missed the most after returning stateside was fika...those coffee breaks accompanied by a cardamom bun were absolutely elite. These buns are ubiquitous in Sweden (I think I've even seen them at 7-11's there), although are a bit harder to find here in the US. Thankfully, there are a handful of places in NYC that sell them. One of my favorites is Fabrique. Initially I had always got to La Cabra, but the lines there always seemed unpredictable (and at times they'd sell out). At Fabrique, this place is like a cardamom bun factory, so they always have a ton. It's an industrial looking space with high ceilings. There's a line of seating in the back, which are often occupied during peak hours - so might be more of a grab and go kind of place. The bun itself is delicious - really tastes very similar to the ones I had in Sweden. If you're looking to satisfy your kardemummabullar itch, Fabrique will definitely fit the bill! read more

Staff was professional. Display case was filled with an awesome selection of baked goods. If we weren't going to be standing around at a concert, it would be hard to walk out without a few loaves of bread. I first came to Fabrique several years ago because I heard good things about their cardamon buns! My friends and I loved them and since I was back in the area this weekend, I dropped in for one. Cardamon bun 4/5, I do recall these originally having more cardamon spice flavoring and this was less spiced than I would have preferred but the dough was delightful Cinnamon Bun 4.5/5, imagine a soft cinnamon roll without the giant frosting coating. that's this bun. Matcha latte with almond milk (hot) 4/5, this is a more traditionally bitter matcha. I did think it could use a slightly better ratio of matcha powder : milk but this wasn't bad. read more
