    We tried the Centennial Hills location of Featherblade Craft Butchery. It is located near to both the Thai and Mexican restaurants. We both were surprised when we walked to find this place that the street didn't have a street sign so we walked and guessed and found it. This location might be slightly different than the Summerlin location. I read on Facebook that our local food critic enjoys the Summerlin location and buys beef wellingtons and cheesesteaks there. I'm not sure if those things are an option at this Centennial Hills location. Anyways - As soon as you walk in you can see the amazing looks of the meats and you know that you aren't in your usual grocery store. Then someone right away tries to help you. The hard part is trying to decide on what you want to buy. Besides all kinds of meats they also offer some bagged snack items, spice blends, fresh eggs, tallow, and frozen meats. Everyone there was nice and helpful and check out was quick and easy. We tried a couple filet mignons. My husband wanted to prepare them so I let him. They came out looking nice with a sear and were tender but didn't have as much flavor as I was hoping for but were still good. If I was doing the cooking I would have sous vide first to concentrate the flavor. Maybe that would have helped? We'll be back again to try a different cut.

    We moved to Las Vegas three years ago, and as an avid home chef who cooks nearly every day, I quickly discovered one of the city's frustrations: it's surprisingly difficult to find truly high-quality meat. This definitely isn't the Midwest. I scoured grocery stores, specialty shops, and even a restaurant wholesaler who quietly sold to me on the side, yet nothing really satisfied. Eventually, I gave up and started having meat shipped to my door. A few weeks ago, while walking to our favorite Mexican spot, La Casa de Juliette, I noticed the space next door under renovation. A small sign read, "Featherblade Craft Butchery Coming Soon." My mouth immediately started watering at the idea of finally having a real butcher shop in the neighborhood. Last week, they opened--and what I saw (and later tasted) exceeded every expectation. The cases were brimming with pristine cuts: unique and hard-to-find selections, Frenched racks of lamb, eight varieties of burgers pressed into perfect patties, beautifully dry-aged steaks--the works. Everything is sourced from free-range, organic farms. Since my fridge was already packed, I picked just a couple of items to start with. My favorite cut is hanger steak--deep, beefy flavor like flank but more tender and far less sinewy. I dried it unwrapped overnight in the fridge, seasoned it with Spice House's "Chicago Steak Seasoning," and grilled it over a 480-degree flame. The result? One of the best steaks I've ever tasted--better than the $80 offerings on the Strip. Yesterday, I tossed two brisket burgers on the grill. Instead of shrinking, they plumped. I've never seen anything like it. The burgers were outrageously good--juicy beyond belief. The young, knowledgeable butchers behind the counter are friendly, passionate, and ready to answer any question. Their expertise shows not only in the cases but in the results you'll get at home. The real (and often overlooked) secret to great cooking is starting with the best ingredients. When it comes to meat in Vegas, Featherblade stands alone. I'll be back--often.

    I called from across the street asking about flat brisket. They asked me when I needed it by and if I had any preferences such as grass fed. I responded right about now as I plan to cook it for dinner. They invited me to come in and stated they would help me out! I found the gentleman behind the counter friendly, knowledgeable and helpful. I purchased a 4 lb brisket, grass fed, cut and trimmed to perfection. I found the price very reasonable and beat my other local butcher! Literally top notch customer service! I also purchased chorizo salami from Portland Oregon to enjoy with cheese and wine. I want to try it all! Y'all should see these cuts and selections! I will be a regular and frequent customer of this butcher and highly recommend to my family, friends and neighbors! The location is clean and pleasing to the eye!check them out!

    I have been going to Featherblade for a while now but sparingly because we live in Centennial then the other day I walk out of my daughters class and there they are now up in the NWLV I'm going to be there a lot! If you haven't been here and are going to the store for some protein go here first! The service is amazing and the layout of the store is honestly pretty impressive too the display cases are clear and the meat is easy to see and clearly marked. The prices are not high for getting a better quality meat than the major grocery stores and better than other butchers I have been to in LV. If you have a home cook bone in your body and love to impress the fam or your just looking for some simple breakfast meats like sausage or awesome bacon drop in here for a look you won't be disappointed!!! P.S. check out the fridge section with broths, beef tallow to elevate your cooking and don't forget to check out their popular meat pies!

    Brisket burger

    Everything we got from there and cooked up, was amazing!!! The pecan smoked bacon, brisket burger and the English style meat pie had so much flavor! Can't wait to try more things from there.

Hailey helped me and she was very knowledgeable about the cuts, recipes, temperatures etc. I'm not a lamb eater and only knew of NZ lamb. Hailey turned me on to Colorado lamb and it was all of the same standards and quality of NZ. She sliced up 4 chops for me, I also got their best bbq burger patty and some sausage stuffed mushrooms. I marinated the lamb, cooked in cast iron and basted in fresh garlic and butter - plated with some Romano crusted potatoes, lobster a$$, broccolini and salad. I got back a plate with bones on it like there was never any lamb! The burger was ok, I didn't do it justice with the flame a bit too high, it had good flavor though. The mushrooms were delicious little balls of flavor! I'll be back. When I don't bring in the things I want from la this is the next place I go. The staff is always kind and accommodating. If you don't see it, they'll order it. I'm also super excited to go back and eat!
