If Flagstaff House was a musician, it'd be John Legend. Similar to John Legend's jams... You'll feel romanced by its fancy, elegant, and grand nature, as well as, completely entranced by how special the staff makes you feel throughout the night. It's a place you should turn to on a big life celebration (anniversary, engagement, birthday, retirement, etc.). Similar to if you rolled up to John Legend's house... You'd probably be greeted by a valet only sign and his butler would take your car around. This is exactly what Flagstaff House does for its guests, complimentary. You'll be glad this is the case because the restaurant is tucked into the side of the mountain. It'd be like trying to park in Los Angeles rush hour, if you weren't provide this service. After you give your car away, you're greeted at the door by one or two hosts/hostesses. They will happily ask to take any coats or hats. If you oblige, they'll ask you to take your hat off at the table. I think I should mention (if you haven't already guessed) this is not your typical Colorado establishment. I'd highly recommend swapping your athleisure for a nicer outfit. It's worth dressing for the occasion. In fact, I wore a dress. (gasp!) After you're checked in, the host will guide you to your table. We were seated at what I think was the best table in the house. It was in the main dining hall, close to the window. It overlooked all of Boulder - a breathtaking view. After you're seated, you'll be given the menu which gives you two options: 1. Four Course Menu at $128 2. Chef's Tasting Menu at $165 You'll also be given an iPad with a drink menu on it. This menu is just as extensive and overwhelming as John Legend's greatest hits. While it's quite easy to decide what direction you should go for dinner, the opposite is the case for drinks. Our poor waitress had to revisit our table 2 or 3 times before each of us could have a look at the iPad. Eventually, we did order: their versions of a Manhattan and Old Fashion. The Manhattan was delightful, but not the best I've had in the area. The Old Fashion, however, was disappointing. Shockingly, it came out with crushed ice instead of a proper cube. Now, I hate to be snobby about this but for an establishment like Flagstaff House to charge $18 and not have proper ice is inexcusable. If you know Old Fashions, which we do, you know this is a sin. We decided we'd probably split a bottle of wine or order beers, next time. Let's get back to the food, though. We went with the Four Course Menu. With every course, you'll get to choose from about six options ranging in proteins, including vegetarian. It is a great place to take a party with different diets for this reason. For the first course, I ordered the Scallop Tartare. Visually, it was unappealing compared to my neighbor's order of the Baby Beets. It looked light, fresh and had beets served three ways. My friend said it was delicious. On the other hand, I did not boast the same about my Scallop Tartare. It was rich, rich, rich. Now, I typically love decadent dishes and this was hard for me to fully eat. I ended up sharing it with my husband (a Southern man) who even agreed it was entirely too rich for one to eat. For the second course, I ordered the Short Rib Ravioli. Now, this dish. This dish made your fork dance into the plate for more bites. It was absolutely incredible. I'd order them time and time again. In fact, everyone at the table ordered it except for my husband. He definitely reminded me of a young Blake Shelton, eyeing Christina, Adam or John for stealing his beloved contestant on The Voice. For the third course, I ordered the New York Strip. It was a beautiful medium rare, and slightly under seasoned but saved by a divine mushroom bordelaise. My husband ordered the star of the table, though. The Colorado Lamb Rack & Shoulder was as lovable as John Legend's voice. Smoothly, guiding your tastebuds to higher places. It won best dish of the night by a landslide! For the fourth course, I got the Baba Al Rum. It was a good ending, however, I was not raving for an encore. I'd probably try the Warm Apple Cider & Doughnuts. Overall, our party agreed that for "Ordinary People" who do not dine like this often it was a memorable moment to experience the famous Flagstaff House for a night. Holy hell! If you're looking for fine dining in Boulder, look no further than Flagstaff House! I came through twice within a week. Initially, with my lead and I just had to take my hubby here when he came for a visit. First, there are phenomenal views of Boulder! Second, come hungry!!! In between each serving they give you palate cleansers. You can choose the four-course menu, chef's tasting menu or just a la carte! Both times I came we just chose a la carte. But we really wanted to try everything! One of the items I tried on my first visit was called "Tuna Sandwich" It is not what you think it is, so it peaked my curiosity - how would they do a spin an American classic? Well, they used Hamachi tartare, on brioche spread with cornichon relish, added some pickled quail egg. It was delightful! I am also a huge fan of lamb, so I ordered the Colorado rack of lamb and lamb shank. It was very filling and so much flavor, not gamey at all! When my husband came with me he ordered the Venison - tender and juicy. They have a great wine list and the wall of whiskey, OMG... Service is phenomenal, too! Make sure to make reservations! What an absolute tourist trap! Beautiful views, great drinks good service, but what absolutely horrible food for the price. The potatoes that came with my daughter's $60 kids meal were so awful that she wouldn't eat them. We sent them back and asked them to be redone and they came back exactly as undercooked and under seasoned as they were the first time. the waiter looked at us like we had two heads and purple skin and green eyes when we told him we weren't happy with the food. Every dish was mediocre at best with the exception of their steak. They can cook a hunk of meat, but that's about it. If you look at the bios of their kitchen staff on their website, not one of them has experience in a fine dining restaurant. The highest qualification I saw on their website was one of their chefs graduated from the culinary Institute of America. Seems like a bunch of Bros from college decided they didn't want to go into the real world and work so let's just cook some food and overcharge a bunch of foolish tourist. There are a half a dozen restaurants,at least, within a 15 minute drive of the Flagstaff house that have phenomenally better food for half the price or less. I don't mind paying a pretty penny for some amazing food, but that was a miserable experience and I will never go back. An email to the restaurant, letting them know how dissatisfied we were with the meal went unanswered. Our experience at Flagstaff House surpassed expectations. The attention to detail is unmatched. From the sommelier opening wine for us to the amuse-bouche, every course was incredible and the attention to detail was truly impressive. We came to celebrate my husband's birthday and the food was delicious, the service was like nothing I've ever experienced, and the ambiance is incredible. The views of Boulder are so unique! It was beautiful and we would highly recommend. It's definitely a meal you should plan for-it takes around 3 hours. It's an experience, not just eating a meal. Make sure to make reservations way in advance as they do get booked pretty fast. Their menu is a piece of art on its own: the creativity of chef and story begind each dish are incredible. They can accommodate any of personal preferences/diet restrictions. The wine selection is pretty amazing and I would recommend fully splurging and try their chef's menu with wine pairing. I had been to Flagstaff House a few years ago and it was one of the most memorable meals I've had in my life and I've been to a lot of very nice restaurants. This week I returned with seven of my friends who had never been there. The experience was just as amazing as the first time. Everyone enjoyed the amazing meal and the service was flawless. Even with 8 people everyone's plates were placed on the table SIMULTANEOUSLY. That level of coordination is not something that you see everyday. Another delightful evening at Flagstaff! We were welcomed with a custom menu again! We opted for the four course dinner and I got the lobster soup - soooo good, artichoke hearts - amazing!! The lamb this time for entree , it came with a side of Brussels sprouts cooked in the best possible way with pine nuts and pomegranates. My husband had the sea bass, rabbit roulade and the lamb! My experience here was, unfortunately, quite underwhelming. Although the service was satisfactory, the food--what I consider the core of any dining experience--did not meet expectations. I ordered the five-course meal, and with the exception of the dessert, each dish lacked flavor. The filet mignon was the only item that wasn't bland, but only because it was drenched in sauce. For the price, I left feeling disappointed and that I didn't get my money's worth. Came to Flagstaff for a post Valentine's Day dinner with my boyfriend who came into town. First off - service is AMAZING. They even printed out custom menus that we were offered to keep :) the staff is super attentive, answered all questions, and had a sommelier come to pick out the perfect wine for us both. I've been visiting annually almost 20 years now. Most of my previous review still holds true, but there have been important changes to highlight in recent years. In 2018 or so, there was a generational turnover throughout the long-time family owned & operated restaurant: management, kitchen, wine. They continue to honor much of what has made the restaurant a great tradition: impeccably attentive and formal service, perfectly prepared and presented dishes, an extensive wine program, and a welcoming environment for any type of event. There have been subtle but important touches of modernization as well. The cocktail menu has been expanded with impressive offerings as well as the classics. The menu remains dependable but changes more often than it used to, and while there is still plenty of classic steak or seafood to choose from, there are also more creative and regionally inspired offerings. Desserts have mostly been reimagined (though I miss the Golden Egg). The menu went from a la carte to a strongly encouraged four-course meal. While I appreciate that approach streamlines decisions & flow, and helps set the right expectation about how to enjoy the experience, I do miss being able to just share one dessert: I now always leave a bit too full because the desserts are quite large. read more

If you're looking this place up as an option for dinner, don't bother looking elsewhere, pick Flagstaff House. This place deserves five stars and more. I was in town visiting and had seen this restaurant as a must try and I have to say I was not steered wrong. It was my anniversary and they made sure my boyfriend and I felt special. From accommodating our outdoor patio request to personalized menus that wished us a happy anniversary, it truly was an experience. We each did the four course menu, I started with duck and prosciutto, my boyfriend ordered soup, we then ordered ceviche and the beef ravioli followed by the filet mignon and salmon dish. What I loved most were the little dishes we received in between, they gave us little apricot and duck plates, rosemary focaccia and yuzu sorbet in between each plate. Finally for desert I got the creme brûlée and my boyfriend got the strawberries and cream. We also each got a latte which came with a little tray filled with chocolates, different kinds of sugar and whipped cream that we could add to our lattes for flavor. To top it off, we were surprised with chocolate covered strawberries to wish us a happy anniversary and complimentary petit fours. But as many know, a restaurant is only as good as their service and this place makes sure you're taken care of. We had someone at our table every 15 minutes or so, which sounds like much but it was not at all overbearing and my boyfriend and I were still able to enjoy our conversation and each other's company without feeling interrupted. Holy moly went back a month ago. No improvement. The waitress took 35 min to show up at the table. Her excuse "I am Just really busy" Okay understandable Then the starter took another 35 min to come out. Super super dry like it's been sitting under a heat lamp for hours. Everything tasted pre packaged and absolutely terrible. Then the entree another 30 min pas being done with the starter. Get out of here. Between the two the waitress never came over once to fill water or anything and again..... the entree was super dry for all of us. She blamed it on the cooks. Bad idea. But one of ours was cold in the center from sitting for half an hour. I have been coming here for years (like 40) regularly for my birthday, and every year they do something special to make us come back for a $200+ dinner each. This has been the first in memory the sommelier was new and never greeted us or even filled our glasses, nor anyone brought us more bread (we had to ask twice), and my duck was cold and dry (2nd course) , maybe bc I had to wait so long for my chardonnay. Overrated to be honest. I'll give it two stars because the view is incredible (try to get their early because seats are first come, first serve) and you do go home with some baked goodies. The food would either be too salty and too sauced. For the price of the menu (our bill came close to $900), I felt like one could definitely find better fine dining at Pearl Street for a few hundred dollars less. Service was lacking at times as waiters were hard to find and needed to be flagged down since sometimes they were just conversing with each other. I don't care about service usually but it was noticeably subpar compared with any of my other $$$$ dining experiences. Hint: don't go for the Wagyu upgrade. If you've actually had Wagyu, it will be nothing like what you've had before and that isn't a good thing. read more

People say service is a thing of the past. They say no one wants to work or work hard. Nothing could be further from the truth regarding the staff at Flagstaff House. Every single member of the team from valet, to host to servers to the sommelier, every single staff member was impeccable. Ready to assist, anticipating your needs all the while not being overbearing. Also, each was well versed in the food and its preparation. Oh and the food. Truly amazing. Every bite we took was perfect. Plated with perfection, unique and wonderfully delicious. A 4 course meal sounded daunting but it was all perfectly portioned and served with the exact right amount of time between courses. We had nearly a three hour meal with wonderful wines and exceptional food. We never felt rushed and always felt special. Oh yeah, and the ambiance. Wonderful! Fantastic views and a nice cool breeze on a warm evening. For us we were celebrating a special occasion and the menus came out with Happy Anniversary printed on them. They even had the menus put into our car in valet so that we could keep them. What a perfect touch. Listen, this isn't an inexpensive place but if you want to experience perfection, this is the place to go. I do not think I have had a better meal and experience anywhere in the world. Special night? I've got to admit, I had a very princess-like moment dining at Flagstaff House yesterday. I suppose that the breathtaking beauty and elegance of the place will do that to almost anyone. From the moment we arrived until the moment we left, it felt like we were SO important. The care and attentiveness of the staff is of the absolute highest quality. I really enjoyed the restaurant overall. The ambience is gorgeous, romantic, and it's breathtaking views will have you in awe all dinner long. I would highly recommend going during sundown; a 5:30pm reservation does just the trick. For dinner, we tried the 8-course Chefs tasting menu. Looking around at other tables I would probably get the four course fixed menu next time I go; it just seemed like larger portions with a bit more flexibility in choice. Nevertheless, I like to believe that the chef knows best. In between the two of us, we got everything the menu had to offer, including the supplement options of foie gras, wagyu beef, and artisan cheeses. I am not a culinary expert, nevertheless when comparing the tastes of other elevated dining experiences I've had to the one at flagstaff house, I wasn't too crazy about every course we got. Some dishes were OK, some were good, some were GREAT, some I could have done without--hence my four-star rating. Regardless of this, the experience of going (ambiance, service, etc.) is truly worth it. Not a cheap dinner but for the way FH made me feel, I would gladly pay again. Our son is a foodie and had us take him here while we visited Boulder. The views were spectacular and the atmosphere very nice for a formal dinner. We did the 7-8 course tasting menu with wine pairing. The food was very good. Notable were the Chilled Summer Squash Soup, the savory rice pudding with truffles, the foie gras and the delicious apricot dessert. The wine pairings were outstanding and as good as some Michelin dinners we've had. Service was also very good. I wouldn't be surprised if Flagstaff shoots for a Michelin in coming years.
