We stayed at the Thompson hotel. I heard good things about this hotel restaurant and it didn't disappoint. When you see people who aren't guests coming to eat here, then you know the restaurant must be good, especially since the hotel is a little out of the way from the main area of old town Savannah. We dined here for both breakfast and dinner. Dinner was exceptionally wonderful. Our server, Maria, made experience even better with her thoughtful recommendations and great customer service. We ordered a variety of plates on the menu and all of them were delicious and executed well. My party was especially happy with the seafood, and my favorite dish was the duck breast. Hotel restaurants aren't always good, but I'm glad to say Fleeting was a great dining experience in both food and customer service. We had the pleasure of dining at Fleeting while staying in the hotel Thompson on a trip. While I highly advise avoiding the hotel, the restaurant was great and clearly not plagued by the same operations management. Fleeting is tucked in a portion of the first floor of the Thompson, with muted colors and nice variation in table size. They feature an open kitchen type concept and the music is light but popular tracks. Our server was friendly, knowledgable and crushing it as she was covering every table herself that night! We started with the roasted oysters with a Japanese influence which were bite sized and comforting, the grilled cabbage (a dish we make at home often, but the addition of nuoc Cham really upped the ante!), the sweet potato which was our least favorite, seemed boring compared to the other dishes, the bread and butter of course (even though they charge for it which is still hard to see on menus), and the scallops served with charred corn and green strawberry. The creamed corn like accompaniment was delicious! For entrees we had the southern fried quail which was excellent and the duck, which I recall enjoying but can't remember much more about. As soon as we arrived, a pianist was performing live in the lobby and singing as well, creating a warm, elegant, and inviting atmosphere that beautifully set the tone for the evening. We first dined at Fleeting during our trip last December and loved it so much that we chose to book Thompson again rather than stay at another nearby riverfront hotel. That decision alone speaks volumes about how much we value the experience here. Our server, Ke'Shawn, is truly one of the best we've ever had. He is professional, engaging, and attentive, with a genuinely warm and welcoming demeanor. He effortlessly connected with guests, had everyone smiling and laughing, and made the entire evening feel special. In many ways, he also acted as a wonderful concierge, offering thoughtful recommendations for local sights to explore. You can tell that he enjoys his work and takes pride in providing exceptional service. We began with a cocktail, which was excellent. Dinner was a beautifully executed three-course meal from start to finish. After appetizers, I enjoyed the whole grilled yellowtail fish, cooked perfectly--moist, tender, and incredibly flavorful. It was so delicious that I couldn't resist digging in before remembering to take a photo. My husband ordered a pasta dish that was equally impressive and rich in flavor. We also shared two sides--crispy Brussels sprouts and grilled cabbage--both prepared to perfection. We ended the evening with delightful desserts that provided the perfect finishing touch. The beef tartare was served on top of radicchio and beets. It was an interesting combo that in my opinion didn't work the best. Our service was great; Jordyn (our waitress) was sweet, accommodating with substitutions and speedy to bring the food out! The food itself was pretty good -- I Frankenstein-Ed a meal out of side dishes (egg whites, fruit, chicken sausage & sourdough) and it was about $40 with tip. My friends got the potato hash which they said was good but they wished the serving size had been double for $38. I probably wouldn't go out of my way to come back, but don't regret the stop! EVERYTHING was delicious. The second night I repeated the Brussels and ribeye, and again started with the tartar. (One of the best tartars I've ever had) I was served both nights by Maria. She was well versed on the menu, friendly, and attentive. I definitely would recommend trying Fleeting out, even if you're not staying at the hotel. Both nights I went, it was 8:30 so the restaurant wasn't full, just about half full. We ordered the shrimp and grits as well as the croissant breakfast sandwich. Shrimp and grits was some of the best shrimp and grits I've ever had . We had such a wonderful experience at Fleeting for our anniversary this past weekend--everything from the food to the service to the dining room was spot-on. We started with the oysters and the sourdough, and wow... what a way to kick things off. The oysters were super fresh, and the sourdough had the perfect crusty outside with this soft, flavorful inside. It came with fresh salted butter that was so good we were basically scraping the plate! For mains, we shared the rib-eye and lamb chops--both were cooked to perfection. The rib-eye had this amazing sear and depth of flavor, and the lamb chops were super tender and juicy. We also added the sweet potato side, which was unexpectedly one of our favorite parts of the meal--just the right mix of savory and sweet, soft with a crunch. And then, to top it all off, the staff surprised us with a dark chocolate hazelnut torte for our anniversary dessert. It was rich, decadent, and absolutely delicious. Top notch experience. I was lucky enough to enjoy a meal here while staying at the hotel, and it exceeded my expectations. I went in thinking it would be a "pretty" dinner with the hotel price surcharge, but the food and staff were exceptional and rivaled my experience at many starred and accoladed restaurants. She was also knowledgeable about the wines, which shows the care that this establishment puts into its selections and training its staff on the offerings. My wife and I had a rather disappointing dining experience. Salads: We both ordered salads with lemon vinaigrette, which was so tart it made our cheeks pucker. After a long wait, a manager informed us there was no other dressing available, so we sent the salads back. They were removed from our check. Duck Breast: The duck breast was cooked perfectly but had zero flavor. We ate the two slices of breast, but it was tasteless. Service: The service was incredibly slow. From start to finish, it took almost three hours for two salads, one entrée, one wine, and one cocktail. We visit town often, but this restaurant won't be on our return list. My husband ordered a salad and requested that it arrive with the starter, but it did not hit the table till after the mains. The salad was ok, not fabulous. Stayed at the Thompson for the weekend and decided to try out Fleeting for dinner on evening. The restaurant itself is so beautifully done and any and all staff we encountered were very hospitable. We ordered the tomato and melon with whipped goat cheese (I wanted to lick the plate), burrata with pears, and for my entree I got the roasted chicken which was literally perfect. Tender, juicy, flavorful, and a very large portion. We were stuffed but the waiter tempted us with dessert so we ended up getting the baklava sundae which was a 10/10. The missus and I decided to celebrate our 1st anniversary at this charming restaurant that can be found inside the new Thompson hotel. It is a nice addition to the culinary scene in Savannah. The look and design of the restaurant has that new mid century modern feel that a lot of the new hotel restaurants have. The kitchen is open and the centerpiece of the restaurant. It's always cool and entertaining to see the chef and staff prepare the meals. They use a grill to cook a few of their menu items and it doesn't fill the restaurant w/ smoky fumes. The menu has some interesting selections like the smoky dates and country captain spring rolls for appetizers. The spaghetti was similar to a cacio e pepe and it was creamy and delicious. The collards and little gem salad seems like their version of a caesar. The fish option that evening was a stripped bass. It was paired w/ lentils and some veggies. The skin could have been a bit more crispy, but it was still very tasty. Market price for the fish was tad high. They also treated us to a complimentary off menu mousse dessert which was greatly appreciated. The staff was friendly and accommodating, but being a newly open restaurant there were a few wrinkles that they need to iron out. I first became aware of a new restaurant being open a few months ago, when I saw the elegant logo of the new 'Fleeting' dining spot. At the time, I poked around the website and since it really hadn't gone into full production they were only offering a limited menu and had limited days and times of operation. But...I'd seen enough of what they were up to, to encourage us to be patient and await the cocoon's opening and the thing of beauty to take to flight. As a cornerstone anniversary approached I rechecked and Fleeting had landed! Yelp reviews all echoed what I'd suspected and longed for. This past weekend we made reservations and checked into the Thompson Hotel, which houses 'Fleeting' and never looked back. As we assumed our table, we were impressed by the large, open kitchen and well coordinated orchestration of the chefs. One larger man was watching over the plating and putting orders out, but instead of a white coat his chef's coat was 'business-like' black. He turned out to be the highly esteemed head chef and cookbook author, Robert Newton. Our server was very punctual and personable. He kept his eye on us and provided as much or as little attention as we encouraged. Glasses promptly filled with water and very knowledgeable in his recommendations and advice. The menu isn't huge, but these days increasingly, fine restaurants tend to pare back offerings to those featuring only the freshest products, and those plates that past diners have raved about. There is one seasonal veggie or potato dish and one fresh caught fish dish each night to assure variety. So the menu itself isn't extravagantly broad but believe me, you'll find plenty offered to intrigue your mind and delight your palate. Four sections to the menu: Share (apps), Vegetables and Grains (with some real delights here!), Meat and Fish, and Sweets. We began our tour with the wood fire grilled Oysters which we'd never had anything like before. (Usually we eat ours raw.) But, when these arrived, they were big hot and a treat to the eyes, so we dug in. The manager stopped and asked about our experience to this point. She introduced herself as Brittany Hahn, the General Manager. These were local oysters as that is a great certificate of freshness right there! The plump bivalves were topped with a cap of diced country ham pieces, and breadcrumbs napped with a heavenly Chartreuse-Lemongrass butter. One of a kind taste combinations! Next we moved on the the Shrimp Toast app. Forget any association with what you'd encounter in an Asian cuisine spot, these are totally 'owned' by Fleeting and in a class by themselves! Patties of blended shrimp spread on thin wafers of bread and sauteed. Flavors really take a new dimension with the diced country ham pieces, pea tendrils, benne seeds and sprinkled with a never-before encountered red-eye chili oil. I wanted to order more but there were main dishes still to meet! The vertical roots lettuces are big enough to split and are a pleasant stopping point on your way to the mains. Lettuces, goat cheese nuggets, turnips thin sliced topped with a light dressing and sprinkled seeds. Palate cleansed, our features arrived: the 14 oz NY Strip sitting in a teasing pool of house made Chimichurri sauce and large delicious onion rings. The steak is kitchen sliced diagonally for ease of access to manage your bites. The steak was of high quality and was absolutely steak house quality. My wife ordered the fresh fish of the day which was ocean fresh caught Striped Bass, and healthy boneless 7-oz portion served skin side crisp, on top of a fantastic mix of tender legumes. We ended the adventure by succumbing to the allure of house made desserts under the innovation of their own pastry chef. Our choice was a whimsical Orange Creamsicle Mousse, with almond-shortbread crumble basil seeds and toasted meringure 'kisses' that you'll wish you had more of!! In the picture of it below, you'll notice a spoon in the top right. That's because as soon as it arrived we literally couldn't keep our spoons away! Craft cocktails of course, a very thoughtful wine list with professional service and smooth service added up to a remarkable evening dining memory for us. One we are anxious to repeat! This quiet area of Savannah's busy historic area is a real gem and 'Fleeting' is the primary precious stone. This restaurant is located inside the Thompson Hotel Savannah. It's been opened for two years. We stayed at the hotel for one night and ate dinner and breakfast here. I'll start with dinner. The restaurant is an open concept so you can see the chefs as they create your dishes. We were able to get seated right away and the hostess was very helpful. We ordered the roasted east coast oysters as a starter. For the mains, we ordered the wood grilled whole fish, bootleg farm roasted chicken and the wood grilled strip steak. The food was good but nothing extraordinary for the price. I asked to substitute the kilt collards for asparagus and was told they make no substitution, so I asked to not add them to my plate. Towards the end of our meal, and I would say we were the last ones eating, the servers started to turn tables around us, which was fine, but we could feel our waitress attitude starting to change and not for the best. We asked to see a dessert menu and opted for the ice cream, which was the easiest thing to get, so we could finish and go. The waitress said they didn't have ice cream. I found it odd, but it was the way she said it that made me feel like she was ready for us to leave. Needless to say, we paid the check and left. I will make a note here to add that the night restaurant manager was very nice when he approached our table prior to getting our main meal and spoke to us about the restaurant. I only wished we would have been able to speak to him towards the end of our meal. Breakfast was a smoother experience. Our waiter was very hospitable and even made some suggestions including their home made biscuits that are definitely worth trying. I opted for a latte. They had a signature latte but apparently they did not have the ingredients to make it, so I just had a regular one, my preference anyway. Also, a regular black coffee. We tried the french toast brûlée, the classic breakfast and the grapefruit & berries. Everything was fresh and delicious. It was a good breakfast. The best thing were the homemade biscuits. One thing that caught me by surprise was that I ordered a plain black coffee to go at the end of our breakfast and was charged for it. It is the first time ever that I've been charged for coffee to go. This was our second cup of coffee . All and all, it was an okay restaurant. Nothing really stood out enough to return here again. I wish I would have taken more photos of our dinner but I was so tired from the drive when I arrived that I just wanted to eat and go to sleep. Decided to eat at the bar. Service and drinks (bless!) were not a problem at all but the food was a no go. This is a situation of hustling a menu that ultimately reads better than it tastes. The burger was so basic and bland, a tragedy. They really should have been embarrassed to plate and serve it. Five Guys is easily tastier. In addition, our meal was supposed to come with "hand-cut" fries but - surprise - tater tots showed up. Why? They ran out of French fries. Excuse me what? I was so looking forward to my meal but it was super disappointing and a waste of money. Glad I didn't get the oysters because if the burger is a mess then who knows what would happen with the seafood! If you are mentally good with $75-$100 per adult... You should check this restaurant out. The bar that supports the restaurant is very good, the appetizers (we did beef tartare, and an elevated shrimp salad with fish roe), were both wonderful... But frankly, the grilled sourdough Ryebread that was paired with the appetizers, and which is produced on property, was easily as exciting to me as the other appetizers. Crusty, sour, earthy... Everything good bread should be. Our family wandered over the menu for dinner, ordering both fish, entrées, a bacon and tomato salad, which I'll get to in a little bit more detail, a lamb shoulder, and a well executed hamburger for our eight-year-old. Of the dishes, I personally tried, I think the red snapper was the best executed, though a touch, salty, My bacon and tomato salad was nice, but they used large cuts of bacon (I grant it looked pretty) and tiny grape tomatoes... So it was impossible to get multiple flavors on one fork unless you put a lot of knife time into your salad... For the restaurant: I would suggest beefier, diced heirloom tomatoes instead of cherry tomatoes, fork-size bacon and lettuce, and one or two larger pieces of bacon for the top... actually no, honestly... If it were me, I would have more of that crusty rye/sourdough bread you have on top... maybe rubbed with some garlic, the slightest touch of olive oil and some Basil (also the salad). It's a lower price point, would add visual interest, and the bread is just darn good. back to diners : I strongly recommend the stone fruit salad, which the staff kindly comped for us. The peaches were lovely, and the dressing was really well executed...yum While I note that some other people have complained about the service, in my personal opinion, it was just fine. Steak tartare was amazing, the Philippine spring rolls were delicious, and the burrata was only eclipsed by the amazing sourdough bread. For the mains, Pressed lamb was a treat. Visited Fleeting when in town to visit my sister with some friends. We arrived early and went to the rooftop lounge before and it was beautiful with a great view. The food was excellent, however not really any vegetarian options. If you have a vegetarian in the group, the carrots and potatoes would be good options. My sister and I had the red fish and the pork cheek ravioli. They were both great. Our friends had the steak and potatoes, and that was the real star of the show.
