Best pizza I have ever had! Pizza took about 35 minutes to come out because we did not place a reservation ahead of time, so I recommend placing the reservation beforehand. They make their dough daily so the wait was definitely worth it! Pizza sauce was absolutely delicious and the cheese had an awesome cheese pull! Everything tasted fresh and I absolutely recommend following up the pizza with a slice of the cheesecake. Tasted like homemade caramel and was delicious. Best cheesecake I have ever had as well. Pizza. A most expansive topic and an emotional one at that. Well in Chicago which is known for deep dish, it also has many other thickness types. George's is a good example of the Roma style (not deep dish) where it has more thickness but the topping is the right depth. These bespoke pizzas are wonderfully crafted in 10 and 14 inch sizes. My favorite is the WEASLEY'S Spicy Red Top with Italian Sausage, Fire-Roasted Red Peppers, Spicy Cherry Peppers, and Ricotta. You need to order days in advance so don't procrastinate! If you pick up, and get there early you can watch old MTV videos. A nice grandma archetype will greet you. To me Georges is the best crafted pizza in Chicago. There are several levels of pizza in Chicago - National chains at the bottom, Next local chains that are generally better but still focused on volume and consistency at scale. At the top are artisan pizza places working to perfect their interpretation of pizza. One could argue that George's isn't their preferred style of pizza for them, or that it isn't true deep-dish whoever decides what that is but no one could argue the quality of the ingredients, the passion or effort that went into creating his pizza. Strange place. Pizza seems to be about the thick, coarse crust. Not Chicago Deep Dish. Not any normal style. Best description is Pequods that takes 4 days to arrive and is 50% less satisfying. The toppings are "fresh" as others describe, but the pizza is so thick, heavy, bready, dry, dusty, and crusty that it doesn't matter. And where is the cheese? Hello? Cheese? Where are you? The fresh ingredients coupled with a perfectly caramelized sourdough crust makes it stand out from all the other excellent deep dish places in the city. I tried the Weasley's Spicy Red Top and Michael's S&M. The Weasley's is arguably the best pizza I ever had. I wasn't a fan of the spaghetti and meatball pizza though, wish their meatballs had a spicy kick to them. To each their own though, I still enjoyed it and ate the whole pie. I'm a big fan of this style of deep dish and will be a reoccurring customer. George's beats Pequods, still need to try Milly's. read more

This place has pan-style deep dish (similar to Pequod's), not the pie-like/stuffed deep dish you'd get at "the big two". Thank the pizza gods for that, cause they've turned it into a work of art. This is hands down the best pan pizza I've ever had. Ever. The crust is thick but airy and it's got a bit of crunch from a cornmeal base. They must long ferment the dough or use a starter because it's got an ever-so-slight sour tang to it. The cheese goes to the edge and as a result you get this great caramelized cheese ring on the pan edge part of the pizza. The tomato sauce is a little sweet but not cloying. Had the Harrison's White Album and it was amazing! This particular pizza has no red sauce, but has spinach artichoke dip and roasted garlic along with mozzarella cheese. It was absolutely delicious, the crust, even on the bottom was a delicate crisp, almost flaky, like a croissant, but with sour Dough flavor. It's deep dish and is a little bready, but in a good way. One piece was plenty for me and my boyfriend had two. We also ordered the salad with garlic anchovy dressing but waited to eat it until the next day. This was also quite the salad and the dressing was fabulous! I highly recommend this great new spot and cannot wait to try some other of their specialty pizzas! Loved the pizza - the ingredients are exceptional. The sour dough crust with corn meal (I'm convinced it's in there) is great - love the crunch. It's a hefty base. We tried the Weasley spicy red top - the tomato sauce is delicious, really flavorful. The sausage reminds me of sausage from father and son pizza back in the day. This pizza was really spectacular...how come sourdough crust isn't more widely available in Chicago? Went with the large Halas' Classic (no green peppers...too watery) and it was so flavorful, cook perfectly, soft and chewy crust and it fed 3 adults and two kids. Sometimes deep dish can be too cheesy for me (yes I know that's how many like it) and this one had the perfect amount. I reached out to George at the beginning of October when the place we originally had our rehearsal dinner booked at seemed to have lost our reservation last minute. I didn't realize at the time that George was carry out only, but he replied to me super quickly and said he was planning to add seating and that he'd be happy to accommodate my party. Keep in mind this was with barely 3 weeks notice. He even allowed us to BYOB. I wish I could give George, his mom, and their restaurant 100 stars. Not only did he save the day, but his pizza was freaking AMAZING, and my entire family had the best time. Everyone couldn't stop raving about how wonderful the whole experience was. We even had 3 toddlers running around. We love a laid back, relaxed atmosphere and this was seriously beyond perfect. It was the first time George had people dine in at his restaurant and he was the most impressive host. I woke up the next morning on my wedding day feeling completely stress free and on a high from how happy we were with that dinner. George was a life saver and we can't wait to go back. read more

I live in this area of Edgewater/Rogers Park and George's has become my favorite pizza place. The dough is a crispy, chewy round of bread with cheese, sauce, and toppings floating on top. On the website, watch the segments which explain George's history as a chef and the process he uses to make the pizza dough. George calls it a deep dish but it bears little resemblance to cheese-dominated Gino's or Lou's. My girlfriend and I joke that George must have wanted his own pizza oven and his wife/partner replied, "if you want a pizza oven then you can rent it its own apartment." We are all the lucky recipients. George's non-descript neon sign is easy to miss along a fly-over stretch of Clark. Don't fly-over and don't miss it. This is worth a visit from any neighborhood in Chicago. The less-than-five-star reviews have some good points. As recommended, order the pizza uncut. Take it home, slice it yourself (I do square cuts like a tavern style). Then re-heat it in your oven at ~400F or so. I don't think the pizza is ever undercooked. But I think it easily gets cold and feels a little soggy in the middle. Re-heating will take care of that. And this way, your leftovers won't be overdone when you heat them the next day. As for the person who said that it doesn't have enough cheese... did you think about adding your own extra cheese? read more

Note that all menu items are named after a famous George but the crust is such that you will want to gorge. It has some of that cornmeal texture but still spongy and also sour unlike any I have tried. Fresh, sensible toppings on the pizza and in the salad. I'd like to see another vegetarian option, but the McFly made our life. Was very excited to try this spot in my neighborhood. Ordered for pick up only to discover at home that it was undercooked and the top third of the pizza was raw. We ate a bit then saved the rest to throw in the oven the next night, it spent 35 min at 475 but still did not fully cook through. You can tell by the flavor of the sourdough that it would be delicious if only it was cooked properly. Also, the sauce was good but undersalted. Ricotta was tasty. For $30+ a pie and the number of pizza spots in the city, not sure I will be back. read more

Everything about George's Deep Dish is different: the simple but elegant exterior of the store, the ordering process, which requires a time slot reservation and some planning ahead, and the pizza itself, which is unlike any I've ever tried and utterly delicious. I would characterize George's as more of a pan pizza than typical Chicago deep dish. The crust is great - it's a thick, chewy sour-dough focaccia that was scrumptious fresh and just as good heated up the next day in the microwave. The sauce is delicious and generous. George says on his website that it's sweet - to me it's perfect. While it might look like there's no cheese, it's layered under the sauce in thick slices. My own completely subjective take is that they could go a little lighter on the cheese because this is such a dense, rich pie just with the crust and sauce, but I'm sure others would disagree. These three basics are excellent individually and blend perfectly into a truly luscious treat. We had olives, pepperoni, and spinach for toppings. My one quibble was about the pepperoni - it's milder than typical, with more of a bacon flavor and little of the typical spicy taste, and it was layered almost continuously on the pie. I wasn't that crazy about it, and the main ingredients pop so much they tend to overwhelm the toppings. I'll probably go with a plain pizza next time and just savor its elemental perfection. George's pizzas aren't cheap, but pound for pound they aren't as expensive as they might seem, and this is a truly artisanal quality product.
