Major shout-out to Ashley behind the bar -- absolute pro -- though honestly the entire bar staff deserves applause. Watching the bartenders run the room is like watching a choreographed ballet. They somehow keep a mental spreadsheet of the waitlist, open seats, timing, and guest flow, seamlessly slotting people in without chaos or drama. It's impressive, calm, and clearly run by people who know exactly what they're doing. Now, to the inevitable dog commentary: yes, restaurants have rules. Yes, health codes exist. And no, a dog in a baby stroller is not a service animal. That stroller should be reserved for, stay with me here, babies. Leave your dog at home for two hours. It will survive. So will you. I will happily return to any restaurant that enforces Collier County health code, serves great food and drinks, and employs a staff that runs the room with confidence and competence.
