I visited last night and had a great time. The service is super friendly. The decorations are cute. The food is great and the margaritas are out of this world. I ended up having the grilled chicken burito, which was close to perfect. Wonderfully seasonsed, fresh, and enormous (definitely enough for two meals - maybe more). In addition, I let loose and had both the prickly pear and blood orange margaritas, both of which were divine. There was almost the perfect mix of tequila (enough to taste, but not overpowering), tartness (well blended with the triple sec so that it was sweet, but not too sweet), and fruit (it tasted very real and very fresh - nothing out of a can or mix). Anyway, a wonderful experience. If looking for New Mex style cuisine (probably my favorite Americanized Mexican style), definitely worth a visit! read more

The food was amazing. The Chili stew was excellent along with the Jimica slaw, which was made even better with a little green chili sauce I ordered on the side. ( I loved their red and green sauce, especially the green). I also had the Chili Relleno With red and green sauce and have to say that was the best Chili Relleno that I have ever had. Lightly crunchy on the outside, cheesy chili and delicious on the inside, spectacular. I have eaten a lot of Chili Relleno in my life (currently in my mid 60's ) and the chef at Hatch's really hit that one out of the park. Staff very friendly and very attentive. We'd been dying to try this place. It's not often Seattle gets a new non-American restaurant. I can say I am ridiculously surprised. The food was absolutely amazing. Try the hatch green Chile soup, the queso, and all of their hot sauces. I also had the beef tacos, that are some of the best I've had. Service was amazing and the drinks are to die for. If you are searching for new Mexican food, this restaurant will disappoint. Not much on the menu would be found in a cantina in NM. For example there was no posole on the menu, there was green Chile 'soup' instead of stew, and the rellenos were advertised as hatch chiles but did not taste like them, had an unusual crispy coating and were just not that tasty. The reasonably priced happy hour margarita and chips and salsa/guacamole were saviors of the meal. read more

Went to this place last night and had the hatch cantina cheeseburger and it was sooo good! Had a little spice to it which I liked. And the Allison Wonderland drink was perfect very yummy I ordered another and my friend got it as her second drink. We also got chips and guac. Chips tasted fresh and so did the guac (it has pickled onions on top which were really yummy). We went around 10 pm so it wasn't full and service was fast. The hostess that greeted us was really nice and attentive. The inside is very cute and I will definitely be back a bit early to try their full menu (but late night menu has plenty of options). read more

Been here 3 times and each time the food quality has been downright bad. Dry burgers, hatch green chile sauce is more like mayo/aioli with a hint of green than an actual salsa. Tacos, quesadillas, and burritos are not memorable. I would never bring a date to eat here, the food is that bad. Saving graces are the location and the good ambiance. It's a convenient Belltown location, which why I've ended up here 3 times. Avoiding a 4th! read more

Great staff with excellent service. We went there after the Kraken game with friends. They were closing at 11 PM and we got there at 10 AM. The bartender was very nice and the drinks were great! We asked if they had snacks - like chips or peanuts. They told us that the kitchen was closed. That was OK (it was already past 10PM). The bartender came back a few minutes later with chips and salsa. He even brought some cookies they had for staff in the back! (we tried to refuse since we didn't want to take cookies from the staff; but he insisted and said they would get thrown away soon anyway). This block has a few must try restaurants & hatch cantina is definitely one of them! Servers were very friendly & food was amazing. The pork ribs were some of the softest I've had in my life. They provide table side salsas of various spice levels which paired well with the queso fundido. Generous portions for all items so I did not leave hungry. Very modern & relaxing atmosphere. My buddy and I came here for dinner on a Thursday and had a top notch experience. Made reservations but we didn't need them, though I can't speak to weekends. The food was great -- I got the carnitas burrito and especially liked the red sauce. They also have a strong salsa situation (I think they're made in-house). We loved it! We are from Colorado and have been in Hatch NM many times. The queso was great, the Colorado Mushroom burrito was great. We had the Xmas Chile and the pork green Chile was the best I have ever had. Highly recommend! read more

Had a great experience at Hatch last weekend! The food was fresh and portions were generous. The beef Colorado tacos had a layer of fried cheese...amazing. Service was on point - multiple staff came by to check if we needed anything, but not to the point of being too often. Will be back to try other dishes next time! read more

It was ok. The Vodka rhubarb lemonade was definitely made with pink lemonade mix (or similar) which is disappointing for $11. It's something you'd find at a pregame freshman year. The old fashioned was serviceable. But honestly probably not the drink to order at this type of place anyway. The salsa that came with the chips was not good. Queso fondito was better after adding some of the table sauces. The beef tacos were tough and did not come on blue corn tortillas as promised on the menu. Which is whatever but it was $16 for two.. The rice was mediocre but the beans were probably my favorite thing I ate next to the chili crunch oil. Good location if you're going out later in the area. But I wouldn't go here for the food alone. read more

It's their soft opening, so I expect things to change some, but overall it was good! I'm from New Mexico. While I never expect anything too authentic this far from home, any place using hatch chile I'm all for (FYI nothing to do with eggs, it's grown in a town called Hatch, NM). The prickly pear margarita ($13) was good, though they forgot the grand mariner float. Chalk up to soft opening. Hoping they have a drink happy hour at some point. Ordered the shredded pork burrito ($19), smothered "Christmas style". In New Mexico there's 2 versions of the chile pepper that's the staple spice there. One is green chile. The other is red chile. It's the same pepper, it just turns red when you let it ripen. I liked that the green sauce had some spice. I know it's Seattle so they can't make anything too hot and spicy or the PNW native delicate flowers will wilt or die in agony. Still, was gald to taste some spice. The red sauce had a nice flavor too, no real spice. The pork was great, I love it had some crispy edges, it wasn't just flaccid pulled pork. Looking forward to trying some other items when they go offical. My dream: give customers an option-- hot or mild. I'd love some deep, dark, hot, smoky, red sauce made from hatch red chile pods. The kind that near permanently stains your clothes if you get it on you. Type you'd get at The Shed in Santa Fe or Sadie's in Albuquerque. I can dream. The atmosphere was contemporary and cool, befitting Belltown. Service was fine, people were nice. I wish them well from a former "burque~no"! read more

Went here with some friends on Cinco de Mayo and had a great time. The wait staff was super friendly and attentive. The food was great! I appreciated that it wasn't overly Americanized Azteca food. All sauces and hot sauces were quite tasty as well. My only complaint was the music. It was insanely loud to the point you couldn't hear the person next to you. We made a joke to the waitress about how loud the music was, but she couldn't hear us and said "huh?" Even for a soft opening this place is doing pretty well. I'm excited to see what this place will become in a few months after the "newness" gets worked out. read more

We stopped in for dinner on a Friday night - the service was speedy and friendly, the tacos (carnitas and "popcorn" chicken) were scrumptious! The salsa and chips also great! The best part for us was the trio of sauces they bring to your table to add to your entrees or to have with the chips - a green chili salsa, a hot red sauce, and a savory Mexican style chili crisp type of sauce that was SO flavorful and delicious! Tried this new spot tonight. Giving it 2 stars for decent service but food was awful. I mean truly inedible. Burger completely soaked in a cream chile sauce, fried chicken bites so salty they were inedible (and I LOVE fried chicken!), and carnitas so deep fried they were leathery and also so ridiculously salty. Why do much salt?? Even the the side of pintos was so salty we couldn't eat them. They offered us a different meal in compensation but why would we want any more bad food?? I get that cooks are hard to find and you're working things out in a new restaurant but there is so much amazing Mexican and TexMex in this town that I just can't justify coming back again just to leave hungry. There's just no excuse for serving terrible Mexican food in Seattle, even with the trendy vibe and Belltown location. read more

This is definitely the kind of place you want to bring your friends and family. Friendly helpful staff, great prices, and most importantly delicious food.
