    Super high quality fish and perfect for a nice occasion. The price point is higher but the quality does reflect this. My partner and I dinned here for our anniversary and made reservation during dinner time. It was quite a new spot when we visited so the service was a bit slow but overall very good. We have not been able to return yet so I bet the flow of the restaurant has worked out better. The servers were super nice and very attentive! We shared a couple of things including a couple of appetizers including the tuna trio and hamachi crudo, the nigiri dinner, and dessert as well. The quality of the nigiri was great and I really enjoyed the extra fatty tuna. I would highly recommend the nigiri dinner and sharing the tuna trio for extra tuna pieces! I don't think I would get the hamachi crudo again but it was quite a refreshing and light app. The restaurant itself is located in a pretty hard to park area so I recommend getting there with ample time to find parking close or possibly far away. Overall, a solid spot that I will be visiting again for a special occasion.

    I came back home to visit and wanted to try Omakase for the first time with my best friend. She had been to Omakase before at other places, so we got to try Hummingbird Sushi for the first time together. Our reservation was for 7:30p and we showed up a bit early. They were able to seat us quickly and even served us a small bowl of miso soup. We started promptly at 7:30 and the 10 courses began to flow. The photos I added to this review are only 3 of the 10 courses we ate. ALL sashimi was incredibly fresh and melted in your mouth. The sushi rice was warm and sweet. The courses were beautifully presented and had complex flavors. We even had a snow crab and pasta dish that was a surprise and delight. You even got to cook thin slices of delicious encrusted beef on a stone burner. Chef was engaging and meticulous. He told us the menu changes every 2 months, so I'd like to go back in June!

    Did the omakase at the bar on a Sunday night and I have nothing but good things to say. We were the only ones at the bar. We were being served by the chef and his sous chef. To find out they moved from Texas? And the sous chef followed him. Super cool, I think they said they've been working together for 9 years. It was nice to be able to chat with them. Very casual and friendly vibes. Not your typical omakase with just nigiri. Loved the different styles of plates. I have been recommending this place to all my friends.

    This is my second time coming here on my birthday. Both times I were here, the quality of the fish was pretty solid. The yuzu scallop just melts in your mouth. The service is pretty good, not that busy especially the holiday weekend. The waitress was really communicative and very kind. I haven't tried their omakase so I can't rate on that experience. Their website is very easy to make reservations. My birthday twin and I, both enjoyed our experience. I got the premium nigiri platter, all of them came with their own flavor profile which was unique trying 12. All their nigiri has wasabi underneath the fish but their wasabi isn't the one that burns in your nose. My friend is more sensitive to wasabi so she would ask next time for no wasabi. The pieces were also pretty small for their prices but quality over quantity.

    Pretty good and relatively unique new sushi/omakase restaurant! We got the 10 course modern omakase at the sushi bar. It's called "10 course" but this does not include the nigiri pieces so if you count those it was actually 18 courses. Most courses were pretty good and had interesting flavors/combinations that worked well together, but there were a couple that I didn't like that much unfortunately. I think the format of having omakase and a la carte options makes the sushi bar seating worse than normal. Chef seemed frazzled by making a bunch of other orders and having to deal with issues with the wait staff in front of us, making it not as pleasant of a dining experience at the counter. There were some issues with missing/incorrect orders that the wait staff were discussing right next to our seats, not the most pleasant to listen to while trying to enjoy my meal. Overall it was pretty good and not a bad price at $165. I might come back again but I might just order the dishes I liked a la carte.

    Everything was so amazingly good and creative! They have a rotating menu with new "chapters" every 2 months, we were here just before the end of chapter 6. We had the best conversation with chef Ji and his staff. The 10 course meal was actually a lot more since there were multiple nigiris, the dessert was a crème brûlée which was delicious. We were super full by the end. Definitely want to visit again to try the new chapters!

    This new omakase sushi place definitely can get busy-- make a reservation!!! Parking could be hit or miss depending on the day/time. I was able to find a parking fairly quickly on a Thursday night though. Interior is very simple and modern, perfect for a date night or catching up with friends! Inside is spacious and clean. Servers were busy and a little on the slower side, but they are accommodating and attentive. The best part is definitely their sushi. Chef Ji is so creative, he tries to rotate menu and create new ones to keep them interesting. Although it was a crazy busy night, he still tried to make sure we are having a good time and got to chat with him at the end of the night. Each menu was unique and I could tell he put a lot of thought into each dish. Omakase was fresh and flavorful, makes me drool thinking about it again. Definitely recommend trying this place out!

    Long overdue review- Husband treated me to their omakase course as my birthday celebration dinner & we were treated to the most unique culinary adventure! This is NOT your typical traditionalist sushi omakase! Think of hummingbird as the cool cousin. Chef Ji let us know he experiments with different ingredients and comes up with the menu based on what's seasonal, among other factors. He is very personable & shared with us his background which was a great compliment to the course. We had great service and tried new & modern dishes that had an array of different ingredients and serving styles. My favorite was the scallops & hamachi! We definitely left with our bellies and hearts full as the entire staff at hummingbird took great care of us. Recommend sitting at the bar counter if you can! Will definitely be back Note: I started taking pics of the food but got caught up in convo so missing some of the dishes woops lol there's more to the full course!

    I've never had such a disappointing omakase experience until I came here. We arrived on time and were seated at the counter, but there was no acknowledgment from the staff. One person was behind the bar prepping ingredients, but no one spoke to us. After waiting a while, we had to ask if we needed to notify someone that we had arrived. That's when we were told we had to wait for other reservations to arrive before the omakase could begin. I've never been told I had to wait for others when I've already paid for the experience. It seems like timing doesn't matter here. If you're early, you'll be made to wait for others, and if they're late, you'll still be expected to act as though you arrived at the same time as them. To make matters worse, the head chef/owner tried to talk down to us as if we had no experience with omakase. The price was steep, but the service was even worse. As for the food, which should've been the highlight, it was underwhelming and honestly not worth the cost. The fish didn't taste fresh, which is surprising given we're in Washington. There was also no real effort in presentation for the courses. We spent 2.5 hours here, from 7:30 to 10 p.m., and it felt like a total waste of time. Given the high prices and terrible experience, I'd strongly recommend saving your money and going elsewhere. Service is nonexistent, and your time is far more valuable.

    Finally went to hummingbird sushi and tried their 5 course omakase! The 5 course omakase for only 80 per person was such high quality food, creative flavors and generous portioned. Hospitality was amazing as well, while i was waiting for my friend's arrival outside the entrance which the staff noticed and warmly opened the door to greet & welcome me to wait inside. I really appreciated the staff thoroughly walking me through the menu options and frequently checking in on us. We even got a complimentary course of 3 flapjack nigiris!!!! I am already waiting to come back and i can't wait to try the 7 and 10 course omakase menus! Don't let their logo design or the sushi sign in a horrendous font by the door stop you from coming here!!!!!

    Wonderful sushi! What a gem, nestled in the heart of bustling Queen Anne. The scallops came prepared with yuzu foam on a large salt block. So fun! Beautiful presentation, fresh fish, excellent preparation. Well worth the value. We will return!

    Everything here was absolutely delicious! The server was able to ask about and accommodate my dairy and sesame allergies. They also made great recommendations for drinks and food. Highly recommend what they recommended which is to get the house special scallops - they were FANTASTIC. All the food was, including one of the best dragon rolls I've ever had. The restaurant is a small but classy and modern little spot off of Mercer near Seattle center. I'd recommend a reservation during busy times. They change their menu monthly or so, which keeps things interesting!

    Hummingbird Sushi is located near Climate Pledge Arena, close to Dick's Drive-In, tucked into an old building with street parking nearby. Walking in, you're greeted with a cozy yet stylish ambiance--semi-formal with a modern twist. The hummingbird theme throughout is beautiful, and the intimate tables, each with its own lamp, were really adorable. I wish I had a hubby to enjoy this with. InshaAllah My son and I had the 7-course omakase dinner and ordered a few a la carte items. We started with hot green tea, which I think was genmaicha--it had a nice toasty flavor, and we loved it. It came in a glass pot with the cutest little cups. The meal kicked off with miso soup before the omakase began. Unlike traditional omakase, where you don't know what's coming, they list the courses on the menu. Since I eat halal, I requested a substitution, and they accommodated me easily. I also asked for no alcohol, so instead of the shooter, I got an extra piece of nigiri. EVERYTHING WAS AMAZING. If you know me, you know I'm a HUGE fan of high-quality sushi, and this place is officially on my list. I love the modern, new-age approach to omakase. The chef and sous chef put so much thought into every component--the olive oil powder, the yuzu foam on juicy scallops served on Himalayan salt blocks, the little bits of fresh yuzu--all perfectly balanced. The rice was a little tangier than I prefer, but honestly, the quality and execution of every bite made up for it. My son and I kept saying "mm MM" after every course. There wasn't a single thing we didn't enjoy. This is officially one of my regular spots moving forward. I can't wait to see what the chef has planned next. Yes, there were a few longer pauses between courses, but this is a newer, intimate restaurant that focuses on QUALITY--and I mean that in the truest sense. Quality takes time, care, and extra love. If you want fast, there are plenty of conveyor belt sushi spots. As for portions, they are exactly what they should be. I've dined at fine-dining omakase restaurants all over the world, and this is right on par with the standard for portion size and quality. If you're looking for oversized sushi that you can't close your mouth around, there are plenty of buffets and conveyor belt spots for that. There were only about 4-5 pieces of nigiri that tasted fresh and clean; the white fish that you start with in particular were just not a fun texture or flavor. The shellfish course and sweet shrimp were solid though. Unfortunately, besides the fish, the rice was a total flop too. It just felt dried out as if they had been pre portioned well ahead of time and under seasoned. Part of the joy of a course menu, if you want slightly warm / room temperature rice against the cool fish, but you get zero of that contrast here.

If memory serves I got the one with sweet potato and pear. Very different but very good. It had a nice dryness to it. To wrap it all up we got some deep fried mochi ice cream. With every course, from salmon and tuna to white fish, mackerel, shellfish, and eel, he explained how each piece should be eaten, where the fish was sourced, and even shared personal stories from his career. It felt like he was telling a story through every piece of sushi he prepared, making the experience both captivating and unforgettable. Chef Shiro Kashiba is truly inspiring. It was also wonderful to see that everyone seated at our counter had traveled from out of state just to experience his omakase, which speaks volumes about his reputation. Our food tour was very intimate, just the two of us plus the guide. One of the restaurants we visited was called Shiro. We arrived mid-afternoon, while the restaurant was closed to the public. We were each served two pieces of Nigiri and told the story about Shiro. The two pieces that we were served were phenomenal and the story fascinating. We found out when Chef Shiro would be working next and cancelled another dinner reservation so we could try more of his food. When we arrived before opening time, there was already a woman waiting at the door. After us, a Seattle software engineer and three of his Canadian co-workers arrived. We had all arrived early because sitting at the bar in front of Shiro was on a first come, first served basis, reservations were not taken for that privilege. The year after we dined, we read that Shiro had retired. We were so disappointed that we would not get to eat his food again. Then we learned that Shiro opened a new restaurant and we planned on making a trip up to Seattle. Twelve years later, we finally made it. Reservations were made through opentable.com two months in advance. We wanted the Omakase, sitting at the bar, in front of the Master. Well, when we arrived, we found that Shiro only works on Mondays, Wednesdays and Saturdays. (sigh) Still, we had a great meal prepared by an amazing chef who hailed from Laos, whose name escapes me now. We had a pretty good conversation despite the background noise from the rest of the restaurant. The presentation was beautiful as you can see from my pictures. We asked for and received a menu list that detailed what we were being served. If you take the time to look at the photo captions, you can follow along with the menu list to see what each fish looked like. And then, on our way out, there was Shiro! We greeted him, thanked him and his Sushi Chef for a great meal. We asked for a photo and he had a staff member take the picture for us. Yes, Shiro is a slight man but not quite as small as the picture makes him look. The staffer changed my camera setting from 1x to .5x and because he was standing one step behind us, we look huge! FOB is a build-your-own sushi spot so instead of ordering from a menu, you grab a takeout box (either a tray or large box), pick up a pair of tongs, walk down the sushi line, choose whatever catches your eye, then weigh and pay. It's currently around $15 per pound, and filling up one of the larger boxes usually costs me a little over $30, depending on what I pick. One thing I noticed this visit is that the price has definitely gone up since my first trip. I was also tempted by the giant inari nigiri so selected a few to bring home, but found out that it turned out to be mostly rice with just a little fish on top so I'm thinking next time, I'll probably stick more with the sushi rolls or smaller nigiri since they felt like the better value. The selection is HUGE though: sushi rolls, nigiri, gunkan, etc. The only negative for me is how fast-paced the experience feels. Every time I've visited (I guess just twice so far), the line has been packed and practically out the door, so there's not much time to stand there by the actual sushi bar and browse your options, especially since the shop is small and tight with the cluster of customers (you're literally standing inches away from each other). You're basically moving along with everyone else and making quick decisions as you go. I understand it keeps the line moving, but I personally prefer having a little more time to look. However, I did notice that the staff is constantly replenishing the options and keeping everything clean, so nothing seems to sit out for long. The fish tastes fresh, clean, and never fishy, and the texture is just right. Seating inside is pretty limited, so it's mostly a takeout spot. I have taken my box back to my hotel to enjoy in solitude (when I travelled to Seattle) or take it home to share with my kid (50+ mile drive since I recently moved to WA, but still tastes yummy after the ride). I also noticed plenty of people enjoying their sushi on the steps outside. Regarding price, my box usually ends up costing about the same as ordering about two specialty sushi rolls elsewhere, but being able to mix and match a variety of different pieces makes it a fun experience, especially since their rolls are creative, delicious, and worth trying. If you're a sushi lover (or even just looking to try a variety of sushi in one meal), I definitely recommend checking out FOB Sushi Bar!

Tyson was an amazing server. Was attentive, accommodated our allergies and was thoughtful with us having a young child. He was so pleasant and polite! We enjoyed the following: Baked miso glazed eggplant - YUM and melts in your mouth. Black Miso Cod Collar - this was pleasantly surprising and so delicious. Eat bite was tender and flavorful. Simple yet so appetizing. Sushi rolls were both fresh and well prepared. The nigiri was also great and fresh- not fishy. We additionally ordered takoyaki - which I normally don't love but this one was very tasty and I enjoyed the texture. Lastly karage chicken which came with a creamy slaw. Overall it was such a pleasant experience and we look forward to coming back!

Established in 1904 in the heart of Japantown, the restaurant relocated to the ground floor of the NP Hotel after its original structure was ransacked during World War II, when Seattle's Japanese community was relocated to internment camps outside the city. The hotel where Maneki now resides served as repository for family heirlooms that were left behind during that embarrassing and tragic period of American history. The joy of dining at Maneki goes well beyond the restaurant's incomparable history. The traditional Japanese menu has something for every taste, from delicious Nigiri and Maki Sushi to noodle dishes and local seafood. Pair your meal with a classic Japanese cocktail or a cold bottle of Sake, and you'll understand why this is one of Seattle's best culinary experiences. Highly recommended.
