I was just establishing my "cheese legs" when I had a schmear of it on a grainy cracker. The cheese was so delicious it stopped me in my tracks. Ever since I've been a fan of every cheese from Cypress Grove. My favs are the soft ripened varieties including all the Humboldt Fog remixes. The fresh cups are super spreadable varieties that can transform even the most casual cheese courses into something special. I love when I stumble on one I've never tried - it lands in my grocery basket without as much as a second guess. Can't wait for the Chipotle Cacao remix! I can't remember a cheese course I've served without Humboldt Fog - if I had a dollar for every time someone told me I turned them onto HF, I'd have a small fortune.
