We were passing through Santa Fe and, and, against my usual preferences, we stopped to get Mac and cheese because I thought it was a fun idea for the kids. I'm typically not a Mac and cheese lover because it's often heavy, greasy and is missing salt. Let me tell you, this was NOT the case here. I'm actually now obsessed with this place and my kids desperately wish it was located in Dallas with us. It was so conveniently located in the downtown Plaza area and has plenty of space to let your kids get out some energy since it's almost in food court type space. We got the sampler + 1. Our choices were four cheese (add bacon), carbonara and tuna casserole and then we added the mojo. Somehow, these did not feel greasy and heavy, just so satisfying. The owner was also SO nice. Everything was perfectly seasoned with yummy crispy tops. No yucky separation of oil and cheese even when reheated. I'm telling you. IMPRESSIVE. Warning, the mojo was SPICY but dang it was amazing. Inside was a bit warm so we enjoyed ourselves under the ample umbrellas. Met the owner, cool guy, laid back...gave us time to order, chat a wee bit. There were two of us, we split the shrimp and truffle oil Mac. It came out bubbly hot and smelled amazing. It was tasty to the last plate scrape! He had a few items for dessert...being full we only ordered one candied bacon on a stick... after one bite I walked in and ordered another... so yummy. All of them were delicious and even though we were full after eating 3/4 we had to finish it because it was so good. Totally worth the stuffed tummies. I had the Santa Fe mac and cheese, which has roasted green chiles, which was tangy and just a bit spicy and perfect, and my husband had the shrimp scampi mac & cheese, which was garlicky and perfect. There are also sandwiches and even a vegan mac & "cheese" option, so truly, something for everyone. The menu is very reasonably priced, and you receive a generous portion. We sat on the porch because it was raining a bit, and we had the perfect hangout to enjoy the comfortable evening temperature. There is a lovely patio with stringed lights, perfect for a date. We bonded with the owner, too, because he is from the same neck of the woods as we are, and he gave us awesome recommendations for things to see while we're in NM. Wonderful place! read more

Let me get straight to the point- this place is absurdly good. We started with the chips con queso, delicious and we loved the unique and flavorful chips. I had the Santa Fe, he had the buffalo chicken and sweet lord they were so good! The cheese to pasta ratio is what I always want and never is (read: LOTS of cheese!). I love finishing a plate but forced myself to box half. The service was great, the owner told us about how everything is made fresh every morning, which wasn't a surprise considering how great everything was! I've been coming here on occasion during my lunch hour, for a few months now. I'm quite picky about all the facets of Mac and cheese: the pasta, the flavor of the cheese, the stringiness of said cheese, the crunch of the crust on top. Theo Gio's is hands down the best Mac and cheese I've had the good fortune to have. Consistently, I've had the 4 cheese and custom added truffle oil, because who doesn't love truffle oil?? It's excellent every time and Theo is a great host/server. There's always people here during lunch time ordering from all over the menu and they're always super happy with the results. If you live here, or are just visiting, and your diet can handle dairy, this is definitely a must-try. Edit: I also dab a little Sriracha on each bite for a little kick. read more
