The venue itself provides a fantastic, relaxed vibe, complete with plenty of TVs and a music stage, making it the perfect spot for chilling out on a lazy afternoon or settling in for an evening hang. The Main Event: Pitmaster Excellence The true test of a Texas BBQ joint is the holy trinity, and here, they nailed the fundamentals: * Brisket: This was Texas BBQ as it should be. The brisket was super juicy, delivered a profound, deep flavor, and possessed a flawless, great bark that spoke to hours of skillful smoking * Spare Ribs: A study in contrast and texture. The ribs offered a satisfying "good pull"--firm enough to bite but still falling cleanly off the bone. The thick, peppery bark was beautifully balanced by a slight sweetness from a pepper jelly glaze, adding a layer of sophisticated flavor you don't always find. * Pork Belly Burnt Ends: These were pure decadence. Each bite provided a delicious, melt-in-your-mouth experience with a distinct and welcome hint of Fierce Whiskers bourbon woven into the smoky, fatty flavor. They are so rich and irresistible, you know you shouldn't eat too many, but good luck stopping. * Jalapeño and Cheese Sausage: This locally sourced link brought the heat with a good level of spice. The flavor was excellent, though the texture leaned slightly toward the processed side, which was the only minor drawback among the meats. The Supporting Cast: Sides A great plate of BBQ requires sides that stand up to the meat, and while two of these were stars, one needs a little work. * Mac & Cheese: An absolute winner. It was cheesy, creamy, and featured an excellent smoked flavor that permeated the dish. The slightly charred edges added a delightful textural counterpoint. * Hash Brown Casserole: This was a surprisingly strong contender, offering a nice assembly of savory flavors. The secret weapon was the corn flake topping, providing an unexpected but welcome crunch, complemented by a satisfying hint of bacon. * Creamed Corn: Unfortunately, this side was the weakest link. It tasted primarily bland, despite a slight peppery note. It desperately needs some fresh jalapeños mixed in to cut through the creaminess and add the essential Texas kick. Final Verdict The meat selection here is truly Top 100 worthy, excelling in technique, flavor, and execution (especially the Brisket and Burnt Ends). The atmosphere is perfect for a relaxed gathering. While the Creamed Corn missed the mark, the stellar Hash Brown Casserole and Smoked Mac & Cheese prove that their side game is usually strong. I wanted to order Moist Beef Brisket and Pork Spareribs but the Ribs were not going to be ready for another 30 minutes. The Prime Pork Belly Burnt Ends were suggested as an alternative and my side was the smoke tomato and okra. The Moist Beef Brisket was exceptionally juicy and flavorful with a bark that had my attention. The Prime Pork Belly Burnt Ends were definitely an excellent choice. They were slow-smoked and then tossed in Fierce Whiskers Bourbon Sauce .and smoked again to create a very nice glaze and it was not overly sweet. I ordered the smoked Okra and Tomatoes that more than satisfied my veggie requirement. I am definitely returning to Rollin Smoke for a lite afternoon snack consisting of Pork Spareribs, Beef Brisket, Pork Belly Burnt Ends and the Smoked Mac and Cheese which I am told is beyond measure.

    I ate so many dishes on the last date for Trailer Food Tuesday's this summer. It was amazing being…read moreable to grab Tacos, Korean food, BBQ, steak fries, and sooo many other delectable food choices around you within mere steps. Parking in the close in garage is $8 so if you bring friends, it can price out to a decent price for friends and all to carpool together. Beers are $7-8, but the lemonade and ice tea is $3 with refills of $1. Score! I really enjoyed the food, drinks, and many many choices of desserts. I'm pretty sure if I didn't have a budget to not blow my allotted amount of eating out, I'd have one of everything and roll myself down the hill. Bring a large blanket to lay out on the grass, chairs to sit in should you want. Side note: they are sticklers for NO dogs on the pavement but they can certainly be on the grass. There were koozies given out by Austin Brew Company and paper fans and bug repellant, as well as doggy treats and doggy poop bags from the nearby highrise, The Catherine, marketing their beautiful new place to live. I'm sad they're done for 2015 but cannot wait to see this event back next year! Foodies rejoice, this town has got it goin' down! Beer in one hand, food in the other. Always have a friend with you (safety first at night, someone to sit with your things and pet). If you have a pet don't bother going up the stairs they won't let you. They watch you like a hawk even before you get near the steps. 2.Cheaper to bring your own cooler of drinks. Especially if you are coming up from taking your dog for a walk along the trail down below. 3. Be prepared to hurry up and wait. 4. keep eyes on the prize, if you want to get food from a truck watch when it dies down a bit. 5. they won't have a full menu, possibly because there's a lot of people and would probably cause a longer wait time than the usual. 6. May be helpful to bring blanket, or chair, and napkins (paper towels or wash cloth or some wipes) just in case. 7. Prepare to spend some money for both food and parking. Those are the reasons why I'm at a toss up on going sometimes. So I've been there on a weekend (they had it on a weekend once) and I've been here on the actual tuesday. They trucks change each time. I like that we can atleast say we have tried it and got an idea of what the truck is like. The prices are a bit high for what you get. It's just a great thing to do if you are social or want to be social or to meet up with friends under the stars or to have a romantic fun time. Forget those uber-trendy food trucks that charge $3+ for a taco, this place is the real deal! Tripas, lenguas, chicharrones, oh my! This taco truck is parked in the parking lot of a shopping center that has various types of shops (tortilleria, money cashing, etc.). I've never seen it move - so I assume it's called this place home for quite awhile. The truck has a tented seating area where you can enjoy all the delicious goodies. Tacos are less than $2 and they are adorned with cilantro, onion, and a lime wedge -- that's how you dress a real taco! The corn tortillas are homemade and just the right thickness. The carnitas is flavorful and full of crispy bits. The barbacoa is not the best I've had, but I'm not complaining. They also have tortas, gorditas, sopes, and refreshing aguas frescas (big azz cup for $2.50!) to wash everything down. They also have two salsas: a spicy red sauce and a cilantro/avocado cream. Both do the tacos justice. Tip: You might want to brush up on your Espanol when you come here.

Their fajitas are delicious. Seasoned with a tangy adobo that I can't pin point, but thoroughly enjoy. They sell all of their meats on dishes in tacos, burritos (just large flour tacos at this location), and gorditas. My favorite is that they also sell everything by the pound and their sides in various sizes too. You can take a whole Mexican meal with fresh tortillas home and all you have to is lay it out and enjoy. Perfect for home style take out that might be cheaper than the fast food joints. It will definitely be way way better. The food isn't brought out super fast outside of lunch, but that only means they put time into getting it out to you. Give them a try.
