    the title of this review might be you can't stop progress... or maybe too much of a good thing…read moreis... or maybe you can't add what you were to what you are. best, of course, typically wordy, just came to me a second ago: winners win for a few boring reasons, but each displaced loser has a story to tell that's lost to history first, to the point of why you read yelp reviews, for "useful" stuff as it were, there's this: if you're looking for an obscure place to end a sunday bay area drive, Mankas grill is a great 50 or 75-miles-away destination. of course if you live around there you already know it's the best thing going anyway so no need read this. we stopped in for dinner after cruising up and around the valley one sunday. menu is the usual variety of grilled meat, pastas, salads, and one particularly great dessert: raspberry bread pudding. the service people are incredibly friendly and unpretentious. the old mankas corner restaurant was where farmers would get together for lunch, buy a bag of potato chips to go with their hamburger. the new grill is nicely developed, obviously popular. but if you've been around the Suisun Valley long enough, and remember what was around before, you know many stories that will soon be lost to history. few californians know much about these small country towns, the 1,500 and likely more little "places" beyond the immediate outreach of urban areas. but on the other hand only half the state's population are natives. and few urbanites regardless of origin have anything to do with agriculture or food production, which makes up a good bit of goings on east of california's coastal ridges and west of its mountain foothills. but you can't escape noticing those little mostly farming communities en route to lake tahoe or around picturesque wine areas like napa and sonoma. probably never want to live there but that's where many did when the state was young. if you ever wonder who the real californians are, they likely come from families that once lived in little places... dos palos or ripon or, for that matter, manka's corner. in grad school, awhile ago now, prepping for a winemaker career, i remember (LOL!) a major difference between those focused on "enology" as opposed to "viticulture". would-be winemakers in the class came from all over the world, boston to auckland. on the other hand, those planning to grow grapes for a living were from rural california, dinuba to grimes: few come to california to follow the plow manka's grill is, or was anyway, just an old barn-like mainstay for locals' lunch in suisun valley, which is a kind of forgotten little area, never discovered because it frankly lacked pizzazz, no bling to catch urbanites' eyes. napa valley on the west side of the vaca mountains developed sex appeal, with manicured cabernet vineyards and prestigious, ersatz chateaux seemingly worth driving off the mainroad. but once past napa driving further east before miles of open, mostly flat solano county, is a quiet little turn to the north into suisun valley. it's a modest little valley as valleys go, mostly uninspiring and considerably warmer than napa being, as it is, further from the marine-aired bay area. it's actually more than kinda hot here, finest wine grapes ripen too fast, their wines get dull and flabby. but this weather is perfect for growing stone fruit and nuts which take more heat to fully ripen: peaches, apricots, almonds, prunes, walnuts. i had a particularly unusual reason for coming here beginning in the late 1980s, a complex interplay of business that wove together apricot pits, coca cola and marzipan. no way to explain it so i'll leave it to you to wonder. but i came through this area regularly to maintain my raw material sources, and admired how it had remained hopelessly downhome rural despite the garish show being made of the napa valley just over the hill next door. and i realized early on it wouldn't be underdeveloped much longer, as wine industry entrepreneurs know well how to put such places to use. so this formerly quiet little valley is quickly becoming yet another AVA Recognized (American Viticultural Area) spot where the usual happens: farmers sell their family fruit farms to some guy with money so he can become the next american "vingneron". there is one business that remains as it had been: Yee's Dried Fruit, just down the road from Manka's, and i hope they keep it going. but the rest is testament that you really can't stop progress, even if at some point too much becomes too much.

Within minutes, I knew I'd found exactly where I wanted to spend a hot summer afternoon. The atmosphere strikes the perfect balance between neighborhood tavern and craft beer destination. Vintage bicycles hang overhead, dozens of rotating taps line the wall, and the energy is lively without ever feeling chaotic. Whether you're catching the match, meeting friends after work, or simply escaping the summer heat, Rustwater has that welcoming vibe that makes you want to stay for another round. Following the bartender's recommendation, I ordered the Chicken Ciabatta from the specials board with a side of crispy tater tots, and it was absolutely the right call. The sandwich arrived beautifully presented on a perfectly toasted ciabatta roll with just the right amount of crunch. Inside was juicy grilled chicken layered with smoky bacon, melted provolone, crisp lettuce, ripe tomato, and a flavorful pesto mayo that brought everything together without overpowering the fresh ingredients. Every bite delivered a wonderful combination of textures and balanced flavors. The tater tots were exactly what great tavern food should be, golden, crisp, and light on the outside with a fluffy interior. They became downright addictive when dipped into a combination of ketchup and a Ghost Hot Sauce that once they are out they are out adding a slow-building kick that complemented the crispy potatoes perfectly. As I enjoyed a cold pint from their outstanding rotating tap list, Spain put the finishing touches on a 2-0 victory over France, sending them to the World Cup Final. Great soccer, an exceptional craft beer, and a fantastic lunch, it doesn't get much better than that on a scorching summer afternoon. Rustwater has earned its reputation over the years, and it's easy to understand why. Friendly service, an outstanding craft beer program, elevated tavern food, and an atmosphere that invites you to linger long after the final whistle. If you're looking for one of downtown Fairfield's best spots to enjoy creative tavern fare, explore an ever-changing lineup of craft beers, and catch the big game, Rustwater Kitchen & Taproom deserves a place on your list.
